How To make Greek Potato Salad with Dried Tomatoes
1 lb (3 medium) potatoes
uniform in size, :
cut into 1/4-inch slices 1 c Dried tomato halves
- (1 1/2 ounces) -halved with kitchen shears LEMON DRESSING:
1/4 c Olive oil
1/4 c Water
2 1/2 tb Lemon juice
1 lg Garlic clove; pressed
1 tb Chopped fresh oregano; OR..
1 ts -Dried oregano leaves
1 ts Salt
1/2 ts Pepper
1 c Sliced seedless cucumber
1/2 c Sliced red onion
1 c Crumbled feta cheese
1/2 c Greek olives
-OR- pitted ripe olives In 2-quart saucepan over medium heat, cook potatoes, covered, in 2 inches boiling water until tender, about 12 minutes; drain and set aside. Meanwhile, in small bowl, cover tomatoes with boiling water; set aside 10 minutes while you prepare dressing. Thoroughly drain tomatoes and pat dry with paper towels. Add potatoes, tomatoes and cucumbers to bowl containing dressing; toss to coat. Mound potato mixture on plate. Arrange onion, cheese and olives on top. Lemon Dressing: In large bowl whisk together all dressing ingredients. Menu: Chicken Rice Soup, Warm Pita Bread, Vanilla Ice Cream with Honey and Toasted Walnuts Nutritional Information Per Serving: 450 calories; 30 g fat; 60 mg cholesterol; 1750 mg sodium; 35 g carbohydrate; 4 g fiber; 14 g protein. 1 and ½ pounds potatoes, cubed
4 scallions
Fresh parsley
Fresh dill
Optional: mint, rosemary
Kalamata olives, pitted and halved
3-4 sundried tomatoes (packed in oil), chopped
Garnish: 2-3 tablespoons pine nuts
Optional: 2-4 tablespoons plain whole milk yogurt or sour cream
For the dressing:
¼ - ½ cup extra virgin olive oil
2-4 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste

Crispy broccoli florets meet a creamy and tangy dressing. And the crunchy almonds and flavorful bits of sun-dried tomatoes make it delicious without bacon.
⭐️ Ingredients
2 heads (680 grams) broccoli about 1½ pounds; cut into small florets and stem chopped into small pieces
½ red onion finely chopped
½ cup (50 grams) dried cranberries
¼ cup (35 grams) almonds chopped and toasted
¼ cup (35 grams) seeds sunflower or pumpkin; toasted
½ cup (70 grams) sun-dried tomatoes in oil optional; chopped
BROCCOLI SALAD DRESSING
½ cup (120 grams) vegan mayo or your favorite mayonnaise
½ cup (120 grams) Greek-style yogurt
2 tablespoons (45 grams) apple cider vinegar or more to taste
1 tablespoon (15 grams) sugar or maple syrup

How to Make Swabian Potato Salad - Recipe in description
Watch our video tutorial on how to make this delicious Swabian Potato Salad.
Preparation time: 15 minutes.

Calories per serving: Unspecified
Ingredients for 4 people:
500 g of waxy potatoes
2 medium onions, chopped
1 tablespoon of mustard
125 ml of hot broth. The salad shouldn’t float!
1 pinch of nutmeg
Pepper and salt
Vinegar (white vinegar), oil
Cook the unpeeled potatoes and peel afterwards. Slice them into very thin slices while still hot and mix with the onion. Then, add and mix the hot broth, pour oil, mustard and vinegar, mix well and season with salt, pepper and nutmeg. Serve hot.
You can also add cucumbers to the mixture.
