With St. Patrick’s Day just a couple days away, this dessert couldn’t have come at a better time. Minty green colored, filled with delicious booze and nestled in a chocolate cookie crumb crust, it’s the perfect pie for all your celebratory needs. Drink up, er, enjoy!

Fluffy Grasshopper Pie
2 cups Oreo cookie or other chocolate cream filled cookie crumbs, about 26 cookies
¼ cup, 56g, butter, melted
8 ozs, 226, cream cheese, softened
14 ozs, 396g, sweetened condensed milk
¼ cup, 59ml, green crème de menthe
¼ cup, 59ml, clear crème de cacao
1½ tbsp, 22ml, fresh squeezed lemon juice, 3 tbsp, 45ml, if using bottled
1 cup, 237ml, heavy whipping cream, whipped whipped cream and Andes Candies, for garnish
Process the cookies in a food processor or blender until they are fine crumbs. Process in the melted butter. Press crumbs firmly in the bottom and up the sides of a 9-inch pie plate. Place crust in the refrigerator while you prepare the filling.
Whip 1 cup heaving whipping cream to firm peaks and place in the refrigerator to keep cold. Mix the softened cream cheese and sweetened condensed milk until it’s smooth. Add in the liqueurs and lemon juice and mix until smooth. Fold in the whipped cream. Pour the filling in the chilled crust and smooth the top. Refrigerate or freeze the pie for at least 4 hours or overnight. Place pie in the fridge for at least 2 hours before serving if you have frozen it overnight. Garnish with additional whipped cream and Andes Candies.

Learn how to make Grasshopper Pie is a light and creamy no-bake pie with minty mousse filling, an Oreo cookie crust, and cool whipped cream topping with chocolate curls. Although the original recipe calls for alcohol such as crème de cacao or peppermint schnapps, we wanted to make this pie alcohol-free so everyone could enjoy it because it is one of our favorite pies.

Crust:
14.3 oz package Oreos
6 tablespoons unsalted butter melted
Filling:
2 boxes instant vanilla pudding mix 3.94 oz per box boxes (you can also use cheesecake flavored pudding)
3 1/3 cups heavy whipping cream
8 oz container cool whip thawed (or homemade whipped cream)
1/2 teaspoon mint extract
mint green food coloring preferably gel food coloring
Topping:
1 cup heavy whipping cream very cold
1/3 cup powdered sugar
1 teaspoon vanilla extract
1 dark chocolate bar
fresh mint leaves

HOW TO MAKE GRASSHOPPER PIE: Easy Grasshopper Pie Recipe Made with Cool Whip & Cream Cheese
Here's How to Make a Grasshopper Pie probably the easiest way possible, using Cool Whip, cream cheese and sweetened condensed milk. It's creamy, minty, chocolaty and overall just a fantastic no-bake dessert. And because it's a beautiful green color, it's also perfect for St. Patrick's Day! So, if you want to make a Grasshopper Pie, but don't want to bother with melting marshmallows, read on for the easy recipe.
Grasshopper Pie
For the pie crust:
25 Oreo cookies
4 Tbsp. melted butter
Place cookies (no need to remove cream filling)in food processor and purée into fine cookie crumbs. If you don't have a food processor, place cookies in a ziplock bag, seal, and crush finely with a rolling pin. Add Melted butter to cookie crumbs and mix well. Dump cookie crumbs into 9 pie plate and press down to form smooth pie shell. (It's helpful to use the bottom of a cup to press down.) Place pie shell in refrigerator to chill for 30 minutes.
For pie filling:
1 8oz. block cream cheese, softened
1/4 cup sweetened condensed milk
1 8oz. tub whipped cream (plus more if you choose to decorate top with it.)
1 tsp. vanilla extract
1 tsp. mint extract
green food coloring
In large mixing bowl, combine cream cheese and sweetened condensed milk using an electric hand mixer. Add vanilla extract, mint extract, and 10 drops of green food coloring. Mix until smooth. Fold in whipped cream and with a rubber spatula, whip together until you have a smooth, evenly colored consistency. (If you want your pie a darker green, add more food coloring a drop or two at a time.) Pour pie filling into pie shell and spread out evenly, making sure the top is smooth. Decorate top of pie to your liking, and chill in refrigerator 6-8 hours before serving.

Ingredients
▢300 grams chocolate sandwich cookies (or 2½ cups chocolate baking crumbs)
▢½ cup melted butter
▢4 Chapman's Yukon Ice Cream Sandwiches (any flavour)
▢2 litres Chapman's Markdale Creamery Mint Chip Ice Cream
▢Whipped cream, ice cream sandwich cubes, mini chocolate chips and fresh mint leaves for garnish as desired.
Instructions
Combine cookies and melted butter in a food processor and process until crushed and smooth. (If using chocolate baking crumbs, you can simply stir the two together).
Press into a 9 deep dish pie plate or springform pan (if using a springform pan, be sure to line the bottom with parchment so it is easy to remove).
Place the crust into the freezer for 15 minutes and remove the mint chip ice cream to allow it to soften slightly.
Meanwhile, unwrap the ice cream sandwiches and cut each sandwich into 9 squares. Return to the freezer.
Remove the crust from the freezer and spoon some of the ice cream into the bottom. Top with some of the ice cream sandwich cubes, pressing them into the softened ice cream gently.
Top with more of the ice cream, spreading it into the spaces between the ice cream sandwiches as much as you can. Top with more ice cream sandwich cubes and continue until all ice cream is used (you may have extra ice cream sandwiches depending on the size of your pit plate -- I like to cover all of mine with ice cream, but you can also have some dotting the top).
Freezer for 6 hours or until firm.
Remove from the freezer 10-15 minutes before slicing. Garnish with whipped cream, ice cream sandwich cubes, mini chocolate chips and fresh mint leaves as desired.
