A big misconception when you’re trying to get fit is that you need to eat low calorie / low fat / low sugar everything. Never giving into your cravings. Never eating your favorite foods. THAT'S NOT TRUE! Your body and your baking are smarter than that. Your body requires adequate nutrition and your baking requires certain ratios and rules to upheld in order for your recipes to turn out.
So today we’re using science to elevate the nutrition, without losing the flavor / texture / AND ESSENCE of these recipes I love most! I can't wait for you to try these yourself.

Roasted Hazelnut Granola

Cook: 20 min
Yield: 4 cups
Ingredients
1 cup roasted hazelnuts, roughly chopped
1 cup roasted cashews, roughly chopped
1 cup old-fashioned oatmeal
1/2 cup sliced or slivered almonds
1/2 cup sweetened, shredded coconut
3 tablespoons vegetable oil
2 tablespoons honey
Directions
Preheat the oven to 350 degrees.
To make the granola, toss the hazelnuts, cashews, oatmeal, almonds, coconut, oil, and honey together in a large bowl until they are completely combined. Pour onto a sheet pan and bake, stirring occasionally with a metal spatula, until the mixture turns an even golden brown, about 20 minutes.
Remove the granola from the oven, scrape the pan with the spatula to loosen the granola, and allow to cool, stirring once.

Banana Crunch Muffins

Yield: 18 large muffins
Ingredients
3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional
Directions
Preheat the oven to 350 degrees F.
Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.

These Buttermilk Berry Muffins have a beautiful golden brown crust and are absolutely bursting with flavorful berries. No need to worry if fresh berries are not in season, as these are just as good with frozen berries. To add a nice touch of citrus flavor, the zest of a orange or lemon is added.
