How To make Grandma's Cheesecake
1 lb Ricotta cheese
1 lb Cream cheese
1/2 c Butter;melted
1 c Sugar
4 Eggs
Juice of 1 lemon 1 ts Salt
1 ts Vanilla
3 tb Flour
3 tb Cornstarch
1 pt Sour cream
Zwieback crumbs;fine
StrAWBERRY GLACE:
1 pk Strawberry gelatin;( 3 oz.)
3/4 c Cold water
2 c Strawberries;fresh/sliced
-sweetened 1 c Boiling water
Mix cheeses well with beater. Add butter and eggs. Add remaining ingredients; fold in sour cream. Thoroughly grease 12-cup, 10-inch Bundt pan and dust with fine zwieback crumbs. Pour batter into pan and bake at 350' for one hour. Turn off oven and allow cheese-cake to remain in oven
for one additional hour. Glaze with Strawberry Glace'. FOR GLAZE: Dissolve gelatin in boiling water. Add cold water. Cool until syrupy. Add strawberries and spoon over cheesecake.

The recipe for the world best German Cheesecake is from my grandmother and I am not the only one to say that it is the “bestest” of the world! It is fresh and fluffy and not heavy or too sweet, have a try!
Ingredients:
Base:
200g of flour
100g of sugar
a pinch of salt
1 egg
80g of butter
1 pack of vanilla sugar (13g)
2 tea spoons of baking powder
Filling:
900g of quark (curd, fresh cheese, ricotta…)
1 pack of vanilla pudding powder
1 pack of vanilla sugar
150g of sugar
juice of 1 lemon (cest optional)
3 egg yolks
125g of double cream
180° C for 1 hour in the oven

Ingredients
3 cups crushed graham crackers
12 tablespoons butter
1-2 teaspoons honey
24 oz cream cheese
1 cup sugar
4 well beaten eggs
1 teaspoon salt
2 teaspoons lime/lemon juice
Sour cream
Sugar
Vanilla extract
*optional* Lime zest
Step 1: create the crust
Combine 3 cups crushed graham crackers, 12 tablespoons melted butter, 1-2 teaspoons honey to a large mixing bowl and fold everything together. Once your crust mixture is combined, transfer your crust mixture to a nine inch springform pan lined with parchment paper. If you don’t have a springform pan you can use any 8-10 inch baking pan you have in the house. After the mixture is in your pan and pressed up the sides to create walls, place it in the fridge while you do your other steps.
Step 2: create the batter
Into your mixing situation of choice(blender, stand mixer, hand beater, bowl and whisk) add 24 oz of cream cheese, 1 cup sugar, 4 well beaten eggs, 2 teaspoons lime or lemon juice, and 1 teaspoon salt and mix until a smooth batter forms. Minimal lumps!
Step 3: Bake your cake
Take your crust out of the fridge and pour in all of your cream cheese batter. Then bake your cheesecake in a middle rack position for around 30 minutes at 425 degrees celsius. Once a nice brown forms and it is nice and jiggly, not runny! Take it out of the oven and let it sit at room temp for 2 hours. After 2 hours have passed wrap the cheesecake airtight and place it in the fridge to chill overnight.
Step 4: Make your ganache
For the ganache add 2 heaping scoops of sour cream into a bowl along with 2 tablespoons sugar and a glug of vanilla. Optionally you can add a little bit of lime or lemon zest. Taste your sour cream mixture and change sugar or vanilla levels until it reaches your liking. Then you are going to spread your ganache evenly all over the top of your cheesecake after it has chilled overnight. Then your cheesecake is ready to eat!
