1 1/2 c Millet, uncooked
1 c Diced sweet vegetables *
5 c Water
1/4 ts Sea salt
* Sweet vegetables may be any combination of onions, carrots, butternut squash, yams or parsnips. DIRECTIONS ========== Place all ingredients in a large saucepan and bring to a boil. Cover, reduce heat and simmer mixture until water is absorbed and millet and vegetables are tender, about 25 minutes. Per serving: 122 cal, 4 g prot, 156 mg sod, 27 g carb, 1 g fat, 0 mg chol, 21 mg calcium

Method:
Rinse and soak the millets for 10 minutes
Heat water and add millets and salt.
cover and cook until tender, about 25 minutes.
Remove from heat. let stand, covered, 10 minutes.

Ingredients: (Serves 1)
2 tbsp finger millet or Nachni or Ragi flour
250 ml (1 cup) Milk
1 ½ tbsp to 2 tbsp Jaggery
Cardamom powder made from the seeds of 2 Cardamom pods
Roasted almonds (optional)
Method:
-In a pan, put in the flour and roast for about 2 to 3 minutes. Turn off the heat and allow to cool down a bit.
-Stir in the milk and mix well until there are no lumps
.-Turn on the heat again and cook until the porridge becomes thick and acquires a creamy consistency.
-Turn off the heat and mix in the jaggery and the cardamom powder.
-Pour into cups or mugs and garnish with the roasted almonds.
Tip : You can adjust the consistency of the liquid or milk to get the desired consistency. Use more milk for a thinner consistency to serve as a drink.
