Ingredients -
2 Tbsp (30ml) - Olive Oil
1kg (2.2 Pounds) - Red Desiree Potatoes
1 - Whole Bulb Garlic, Roasted
1 - Brown Onion, Roughly Chopped
13 - Sage Leaves, 10 Chopped, 3 Torn
8 Rashers (150g) - Streaky Bacon
900ml - Vegetable Stock -
1/2 Cup (125ml) - Thickened Cream
1 Cup (250ml) - Full Fat Milk
2 tsp - Cracked Black Pepper
1/2 tsp - Sea Salt Flakes
1 Tbsp - Sour Cream
Bread of your choice to serve
Garnish with Parsley

Loaded Potato Soup ((So Comforting & Delicious!))
❤️SUBSCRIBE Pure comfort food! This homemade potato soup is so creamy and delicious! Packed with so much flavor that it's good by itself, but add on all those yummy toppings and yes LORDt!!!
How to make Potato Soup...in a nutshell!
1. In a large pot, melt butter and add onions and celery. Cook until tender and then add in garlic and cook until fragrant.
2. Add in peeled and diced potatoes and chicken broth. Bring to a boil over medium-high heat and then reduce the heat and cook until potatoes are very tender. Turn heat to low.
3. Using a potato masher, gently mash the potatoes, leaving very small chunks.
4. Meanwhile, in a large skillet, melt the remaining butter and add flour. Stir until flour is golden and then add in cream cheese and 1 cup of milk, stirring until creamy.
5. Slowly pour in the remaining milk and simmer over medium heat until thickened and creamy.
6. Pour milk mixture into potatoes and stir.
7.Season soup with salt, pepper, and garlic powder.
8. Bring to a simmer and stir until soup is combined and cream cheese has completely melted.
9. Ladle into bowls and add toppings.
10. Store leftovers in the refrigerator in an airtight container

Thick and Creamy Potato Soup! | The Recipe Rebel
PRINTABLE RECIPE & NUTRITION INFO:

Ingredients
4 slices thick cut bacon (chopped)
2 carrots (chopped)
½ medium onion (diced)
2 ribs celery (chopped)
1 ½ teaspoons salt
1 teaspoon minced garlic
1 teaspoon dried parsley
½ teaspoon dried dill
½ teaspoon dried thyme
¼ teaspoon black pepper
3 cups low sodium chicken broth
2 pounds russet or gold potatoes (peeled and chopped) 900 grams
¼ cup melted butter
3 tablespoons all purpose flour
1 ½ cups milk
1 cup shredded cheddar cheese
shredded cheese and green onions for topping as desired
Instructions
In a large Dutch oven or soup pot, cook bacon pieces on medium high heat until crispy, about 4-5 minutes. Remove bacon using a slotted spoon and drain in a bowl lined with paper towel, leaving bacon fat in pot.
To the pot, add carrots, onion and celery, cooking on medium heat until onions are softened, about 5 minutes.
Add salt, garlic, parsley, dill, thyme and pepper and cook 1 minute.
Add chicken broth and potatoes to the pot, scraping the bottom with a wooden spoon to remove any browned bits from the bottom.
Bring to a simmer over medium high heat, then reduce heat to medium low, cover, and cook until potatoes are tender, about 10 minutes.
Thicken the milk:
Meanwhile, place melted butter in a medium bowl or large glass measuring cup (leave yourself some room at the top as the mixture will bubble up and thicken considerably). Whisk in flour.
Whisk in milk, using a scraper to get the flour from the sides of the cup as necessary.
Microwave in 45-60 second intervals (Start with 60, then reduce as the milk gets thicker and closer to being done), whisking well each time, until milk has thickened considerably. Stand at the microwave and keep an eye on it as the mixture will bubble up.
Finish the soup:
When the potatoes are cooked, stir in the thickened milk and cheddar cheese. Top with the cooked bacon, additional shredded cheese and green onions as desired.

2 pounds Yukon gold potatoes cut into one inch pieces
3 tablespoons vegan butter divided
1/2 cup finely chopped yellow onion
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
1/2 teaspoon table salt
1-3 cloves garlic minced
3 tablespoons all purpose flour
3 cups vegetable broth reduced sodium
15 ounce can full fat coconut milk
1 teaspoon soy sauce
2 tablespoons nutritional yeast (optional)
1/4 teaspoon freshly ground black pepper
