How To make Go Lite: Cocoa Squares
1/2 c Quick-cooking rolled oats
3 tb Butter
2/3 c Granulated sugar
1 Egg
1/3 c Plain low-fat yogurt
1 ts Vanilla
1 c All-purpose flour
1/4 c Unsweetened cocoa powder,
-sifted 1 ts Baking powder
1 ts Baking soda
1/4 ts Salt
ICING:
1/2 c Icing sugar
1 tb Unsweetened cocoa powder
1 tb Light cream cheese
1 tb Milk
In small bowl, mix rolled oats with 1 cup hot water. Let cool. In large bowl, cream butter with sugar; beat in egg, yogurt and vanilla. Stir in oats. In separate bowl, mix flour, cocoa, baking powder, baking soda and salt. Stir in oats mixture just until combined. Do not overmix. Pour batter into greased 8-inch square cake pan. Bake in 350F 180C oven for 30-35 minutes or until centre springs back when lightly pressed. Let cool. Icing: Beat together icing sugar, cocoa and cream cheese; beat in milk until smooth. Spread over cake. Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make chocolate peanut squares. Chocolate Peanut Squares are like a rich and decadent Rice Krispy Square. While they still contain the requisite marshmallows and rice cereal, we also add some peanut butter, unsweetened cocoa powder, and peanuts. And if that weren't enough, the squares are topped with a layer of semi sweet chocolate. So what we end up with is a candy bar-like square that has a soft and chewy texture that tastes of chocolate and peanuts. What's not to like.

How to make the classic chocolate crinkles.
This recipe yields 12 big crinkles or 24 small crinkles.
Here's what you'll need:
3/4 cup unsweetened cocoa powder (60g) (I use Hershey's pure cocoa powder and it measures 20g per 1/4 cup)
1/2 cup brown sugar (95g)
1/2 cup white sugar (95g)
1/4 cup oil (50g)
2 large eggs
1 teaspoon vanilla
1 cup all purpose flour (120g)
1 teaspoon baking powder (5g)
1/2 teaspoon salt (3g)
1/2 cup icing sugar (60 grams)

Raw vegan energy bars
Ingredients
2 cups medjool dates
1/2 cup raw cacao powder
1 cup hazelnuts
cacao nibs
hemp seeds
directions:
remove the pit from the medjool dates, and place into the food processor along with the hazelnuts, and cacao powder. Process until the dough ball forms into a ball. Place the mixture into a bowl and add in the cacao nibs and hemp seeds. You can add in as much as you like. Give it a good mix with a spoon, and place the mixture into a silicone bar form. Place in the fridge or freezer until firm. Remove the bars from the form and store in the refrigerator.

1 1/2 cup (150 g) oats gluten-free if needed
