Gnocchi alla Romana, as locals call them, are made with semolina flour, sliced into medallions, and layered in a baking dish with butter and parmigiano before being baked in the oven. GNOCCHI ALLA ROMANA | How To make SEMOLINA GNOCCHI | Traditional Recipe | The12Italy
Gnocchi alla romana are a typical and ancient dish of the gastronomic culture of Lazio region.
It's a delicious comfort food, and invite you to give it a try.
Serving 2 people
125 gr / 4,23 oz SEMOLINO ( semolina for soup)
60 gr / 2,11 oz BUTTER ( half into the milk, half on the gnocchi )
50 gr / 1,76 oz grated PARMISAN cheese
500 ml MILK
a pinch of SALT
NUTMEG
1 YOLK
30 gr / 1,06 oz grated PECORINO cheese ( or still PARMISAN)
Butter for the backing pan
BAKE STATIC OVEN 190° C / 375 ° F for 20/25 minutes till slightly goldish

Gli gnocchi alla romana sono un classico piatto legato alla cucina tradizionale laziale. Sono un primo povero che si fa con ingredienti semplici che in casa avevano tutti. Latte, semolino, uova, burro in dispensa non mancavano e non mancano mai.
Gnocchi alla romana ricetta: è un piatto che si fa tipicamente di giovedì perché in passato si usava mangiare gli gnocchi in questo giorno in quanto il venerdì invece era dedicato al pesce. Siccome quest'ultimo piatto è più leggero si cercava, di fatto, di fare un pranzo sostanzioso.
A differenza degli altri gnocchi che in genere sono fatti con acqua e farina o patate e farina, questi alla romana hanno la caratteristica di essere fatti con il semolino.
Non servono doti da grande chef per realizzare questi gnocchi alla romana ricetta originale. Si tratta infatti di dischetti di semolino che possono essere conditi in molti modi diversi. In genere si condiscono in maniera molto semplice ma c'è chi fa gnocchi alla romana varianti molto sfiziosi, sia con le verdure che con sughi di carne.
Il semolino è un ingrediente che, secondo me, dovete sempre avere in dispensa perché oltre a questi gnocchi alla romana sfiziosi si possono preparare anche altre pietanze, addirittura dolci come il migliaccio napoletano .

Semolino 250 g
Tuorlo d'uovo 2
Burro 50 g
Parmigiano Reggiano 50 g
Noce moscata qb

Butter - 4 tbsp (50 g)
Egg Yolks - 2
Parmigiano Reggiano - 8 tbsp (50 g); finely grated
Nutmeg - to taste
Salt - to taste
Topping Options
Butter - 4 tbsp (50 g); melted butter
Parmigiano or Pecorino cheese - 8 tbsp (50 g); finely grated
Sage - 4-5 fresh leaves
Gorgonzola cheese - as needed to top (about 1.8 oz or 50 g)
