How To make Gluten Free Shortbread
1/2 c Cornstarch
Sugar 175 g Butter
1/2 c Icing [confectioner's]
1 c Rice flour
1. Sift cornstarch, sugar and rice flour together.
2. Add butter. Mix with hands until soft dough forms. Refrigerate one
hour. 3. Shape dough into 2 1/2 cm balls. Place about 3 cm apart on greased
cookie sheet; flatten with lightly floured fork. Bake at 150 xC for 20-25
minutes or until edges are lightly browned. .SH "Variations" 1. Form balls as above. Roll in finely crushed corn flakes or crushed
nuts. Press top of ball with thumb. Add a dab of jelly. 2. Mix in 2 Tbls. finely chopped peel and/or 2 Tbls. finely chopped

Gluten Free Shortbread Biscuit Recipe. This is a beautiful traditional shortbread recipe
Gluten Free Shortbread Biscuit Recipe:
200g Gluten Free Plain Flour
100g Cold Butter
50g Caster Sugar plus extra for dusting
Pinch of Salt
Shortbread Biscuit Recipe
Rub the butter into the Gluten Free flour and salt, when the mix resembles coarse breadcrumbs then add the sugar. Fill a tray and gently press the mix down. Bake @ 160c for 18 minutes then sprinkle with caster sugar and return to the oven for 2 more minutes. Cut and leave to cool in the tray.

My Gluten Free Flour Mix
Today I am going to show you how to make my Gluten Free Shortbread cookies!!!
These cookies can be made into any shape using a cookie cutter!
They are great with honey, or coconut sugar like I made today! I think they would also be great with date sugar!
Add in some toasted, chopped Pecans and you will have a delicious homemade Gluten Free Pecan Sandie!
This recipe is easily doubled! And the cookie dough freezes well, as do the baked cookies!

For the Shortbread:
3/4 cup Butter {170 grams}
1/4 cup Coconut Sugar {1/4 cup white or brown sugar or 2 Tbsp Honey}
1 Egg
Pinch of Salt
2 Cups GF Flour + extra for rolling and if needed to get the right consistency of dough
Oven 350 F. Parchment lined cookie sheets. Bake 20 minutes or until light golden around the edges.
