Plum Cake Recipe
This a famous plum cake recipe, first published in the New York Times in 1982, is amazing! It's moist, lemony and super delicious fruit cake! If you haven't tried it, now is the time!
INGREDIENTS
1 stick (1/2 cup) unsalted butter, softened
3/4 cup granulated sugar plus 1 tablespoon, divided
2 large eggs
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
4-10 plums, depending size, pitted and halved
Juice from 1/2 lemon
1 teaspoon cinnamon
PREPARATION
1. Preheat the oven to 350°F/180°C and butter the inside of a 9-inch (22cm) springform pan.
2. Sift the flour, baking powder and salt, then mix until just combined.
3. Beat together the butter and 3/4 cup sugar in a medium bowl until light and fluffy. Add in the eggs, one at a time, making sure each is fully incorporated.
4. Fold the flour mixture into the egg mixture until just combined.
5. Spread the batter into the pan and smooth the top. Arrange the halved plums cut-side-down, then use your fingers to gently press them into the batter. Squeeze the lemon juice over the fruit, then sprinkle the sugar and cinnamon over the top.
6. Bake for about 40-45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean. Allow the cake to cool on a rack for at least 30 minutes prior to cutting. Serve warm or at room temperature.

Nutmeg : half nutmeg {4 gms)
Cardamom : 3 gms

Brown Sugar/ Demerara sugar: 150 gms (powdered)
Plain Flour/ Maida: 200 gms
Baking Soda: 1 tsp
Baking Powder: 1 tsp
Salt: 1 pinch
Cocoa powder: 1 tbsp
Vanilla Essence: ¾ tsp
Fresh Orange zest (grated orange peel): 1 tsp
Cake Masala: 1 tsp
Cashew nuts (chopped): 125 gms
Cherries (chopped): 125 gms
Brandy: ¾ cup (210 ml)

How To Make A Traditional British 8 inch Square Christmas Cake 2021 - For Beginners
Hi Everyone, sorry for the delay in making this cake. I have been unwell but I'm much better now and able to do a full tutorial. Great for beginners, who may have never made a Christmas Cake Before.

600g Currants

3/4 of a teaspoon of Mixed Spice
275g Unsalted Butter
275g Muscovado Sugar or alternatively Soft Dark Brown Sugar

Bake in pre-heated oven for 3hrs 30 mins to 4 hrs (140C fan assisted / 275F / Gas Mark 1

Instant Christmas Fruit Cake | Last Minute Plum Cake | No Soaking, No Alcohol | ക്രിസ്തുമസ് കേക്ക് |
Want to make a Plum cake instantly, still without compromising the flavours & aromas of a Christmas fruit cake. It is so easy that you can even mix all the ingredients in a food processor and just mix in the dried fruits by hand.
It is also called an Everyday fruit cake because it's tasty, quick and easy. You don't have to wait for Christmas to make this as this can be a perfect snack cake/tea cake too.
INGREDIENTS
Unsalted butter - 125 gm, room temperature
Light /dark brown sugar - 125 gms ( 1 cup , loosely packed)
Eggs - 3 large, room temperature
Milk - 60 ml , 4 Tbsp
Jam (any Flavor) - 1 heaped Tbsp. ( can substitute with honey, orange marmalade)
All purpose flour - 250 gm (2 cups + 2 tbsp)
Mixed spice powder - 2 tsp ( (I used 1 tsp cinnamon powder, 1/2 tsp cardamom powder, 1/4 tsp ground cloves, 1/4 tsp ground nutmeg.You can also add 1/4 tsp ground ginger if you like.)
Vanilla essence - 1/4 - 1/2 tsp , optional
Dried fruits - 400 gms ( I used 150 gms black seedless raisins, 100 gms tutti frutti, 25 gms candied cherries, 100 gms chopped dates,25 gms chopped cashews)
METHOD
- Prepare a loaf pan by applying butter and lining with parchment paper.
- Mix together the butter, brown sugar, milk, eggs, vanilla essence , jam. Use a wooden spoon or whisk to mix the ingredients. It's ok if the butter is not fully incorporated.
- Add in the all purpose flour, baking powder, mixed spice powder followed by dried fruits.
- Transfer the batter into the baking pan and level. Make a slight depression in the center using a spatula so that the cake doesn't dome up too much.
- Bake in a 170°C(325°F) preheated oven for approx. 1 hr 15 mins or more.It take upto 1 hr 45 mins . The time will vary according to the size of the pan. A skewer inserted in the center of the cake will come out clean when done.
- Cool in the pan for 10 mins, then remove from the pan and cool completely before slicing.
NOTE
- You can also do all the mixing (liquid and dry) in a food processor or using a beater but make sure to mix in the dried fruits by hand.
- Other options for dry fruits are prunes, golden raisins,any nuts, dried pineapple,candied orange peel etc.
- I have used light brown sugar because i prefer that. You can also use dark brown sugar,but it may give a strong taste.
