Hams are not just for the holidays! This is recipe is one of my favorite ways to “double smoke” a spiral ham. Most people only think of a serving a ham for the holidays but let me tell you this ham recipe can be served year round and folks will be asking you for more.
I start with a fully cooked spiral ham but you can use any smoked “city” ham: shank, butt, or whole hams will work. I like the spiral ham because it’s already portioned for you. The slices take on the seasoning and glaze and each piece taste delicious.
Since this ham is fully cooked you’re really just warming it up on the smoker and adding a glaze at the end. These hams are perfectly ok to eat out of the package or warmed in the oven but they are at their very best on the smoker.
I start by applying a light coat of Dijon mustard on the outside. This acts as a glue for the seasoning. For that I use my The BBQ Rub but not too heavy. I want a hint of bbq flavor without being overly seasoned.
The spiral ham goes on the pit for about 2.5 hours; I like to add a few chunks of cherry wood for smoke flavor this is where the “double smoke” comes into play.
Then it gets the glaze. I mix brown sugar, honey, and my vinegar bbq sauce and baste it over the top letting it drizzle down into all the nooks and cranny’s! This glaze is sweet but also has a nice acidic balance that goes great on ham. The glaze needs to cook on for about 30 minutes and you’re all done - It’s that easy. Since the ham is spiral slice cutting it up is a breeze, just use a knife to free it from the bone and arrange the slices on a serving platter. I’ll be the first to tell you it makes some “Killer” BBQ ham sandwiches!
BBQ Glazed Ham Ingredients:
- 8-10lb spiral ham
- 1/4 cup Dijon mustard
- 2 Tablespoons Killer Hogs The BBQ Rub
- 1/2 cup light brown sugar
- 1/2 cup Killer Hogs Vinegar sauce
- 1/4 cup honey
BBQ Glazed Ham Directions:
1. Prepare smoker for indirect cooking at 250-275°F using a few chunks of cherry wood for smoke flavor.
2. Remove spiral ham from packaging and coat the outside with the Dijon mustard. Apply a light coat of The BBQ Rub over the dijon.
3. Place the ham on the smoker and cook for 2 1/2 hours.
4. Heat the brown sugar, honey, and vinegar sauce until warm and drizzle over the ham. Use a basting brush to spread the glaze over the surface if necessary.
5. Continue to smoke the ham for 30 minutes until the glaze sets
6. Remove the ham from the smoker and serve

HOW TO SMOKE HAM ON THE PIT BARREL COOKER
______________________________________________________________
INGREDIENTS NEEDED:
- 1 Spiral Cut Ham
- Spritz ( 3oz water, 3oz apple juice, 2oz Whisky)
WHISKY GLAZE
- ¼ cup maple syrup
- ¾ cup brown sugar
- 2oz Shelter Point Whisky
- 2oz Barrel of Sunshine (orange, Spice, Maple Liqueur)
- pinch of cinnamon (don't miss this... soo good).
METHOD:
Step #1
To Start off, get your Pit Barrel Cooker set up for smoking around 275F with your favorite Smoking wood (we used Whisky Staves). While your grill is coming up to temperature spritz your ham with the whisky spritz as this will help hydrate your ham due to it being pre sliced. Once your Grill is up to temperature place it on the grill and let it smoke for around 1 -1.5 hrs.
Step #2
After about 1-1.5 hours of smoking, remove the ham from the grill and wrap it in foil. This will help speed up the cook as well as keep the moisture in. This method cooks with moist heat vs dry heat which is helpful for a better end result.
Step #3
Once the Ham has reached 130F remove it from the grill and transition into making your glaze. To make your glaze combine the brown sugar, maple syrup, cinnamon, Whisky and Liqueur together and bring it to a simmer for around 5 minutes. Simmer until the glaze starts to grab onto the spoon a bit. With the Glaze finished place the ham back on the grill and apply the glaze the entire outside surface of the ham. When that's done close the lid for 5-10 minutes to let the glaze set up.
Step #4
With the glaze set, remove it from the grill and take a photo before slicing and enjoying the feast!
Slice and enjoy.

Maple Glazed Whole Ham | Double Smoked Whole Holiday Ham with Maple Glaze

A whole ham is made up of the shank and butt portions. When you’re cooking for a large family, this is the one to choose.
You can find them fully smoked in grocery stores during the holidays. Expect a whole ham to weigh somewhere between 18-20lbs and there’s not much waste.
For this recipe I’m firing up my Ole Hickory and double smoking this ham with a little Cherry wood for a second dose of smoky goodness.
In essence we’re just warming it up to a safe serving internal temperature of 140⁰, so the cook doesn’t take a long time. Bring your pit up to 250⁰ and get the ham on the cooking rack straight out of the package.
Any smoker can be used for this job. Keep the temps steady and use a couple chunks of wood for good clean smoke.
After the ham cooks for 1 ½ hours, insert a probe thermometer into the center away from the bone. You’ll need a good probe thermometer like the Thermoworks Smoke to keep an eye on internal temp. You can check out the Thermoworks Smoke here:
Once it reaches 135⁰ internal, it’s time for the glaze.
Maple Glaze:
- ¼ cup Maple Syrup
- ¼ cup Dark Brown Sugar
- ¼ cup Light Brown Sugar
- 2 Tablespoons Honey Dijon Mustard
- 2 Tablespoons Apple Juice
Bring the mixture to a simmer and reduce until it thickens.
Brush the glaze over the outside of the ham and let it cook until the internal temp hits 140⁰. At this point the Whole Ham is ready to eat.
Take it inside and let it rest just a few minutes before slicing.
This one makes for an amazing Holiday Centerpiece on any Christmas Table.
