How To make Glazed Cocoa Pecan Fruitcake
3/4 c Butter; softened
1 1/2 c Sugar
1 ts Vanilla extract
1 ts Brandy extract
3 Eggs
1 c All-purpose flour
1/3 c Cocoa
1/2 ts Salt
1/4 ts Baking powder
1/2 c Buttermilk
1 c Candied red cherries; cut
-in half 1 1/2 c Toasted pecans
= coarsely chopped 1 c Golden raisins
1 1/2 c Diced mix dried fruit *
Glaze: 4 oz Semisweet chocolate
1 ts Almond extract
2 tb Heavy cream
Sliced toasted almonds * (apricots, peaches, apples,papaya, dates, etc.) Preheat oven to 325 degrees. Grease and flour a 12 cup fluted tube pan. In large mixing bowl beat butter, sugar, vanilla and brandy extract until light and fluffy. Add eggs. Beat well. Stir together flour, cocoa, salt and baking powder. Add flour mixture alternately with buttermilk to butter mixture. Beat just untilblended. Stir together cherries, pecans, raisins and mixed dried fruit. Fold fruit into batter. Pour batter into prepared pan. Bake 1 hour and 20 minutes or until toothpick inserted into
center comes out clean. Cool 10 minutes in Pan. Remove from pan. Immediately wrap in foil. Let stand overnight at room temperaturebefore serving. Glaze: Melt together in top of double boiler the semisweet chocolate, almond extract and cream. Stir until smooth. (Add more cream if necessary to reach correct glazing consistency.) ▢1 cup dried fruits (like apricots, figs, cranberries, apples, pineapple)
▢1 cup brandy or rum - (SEE NOTE 1)
BATTER
▢1.5 cups vegetable oil
▢2 cups brown sugar
▢5 large eggs
▢1 teaspoon salt
▢2 teaspoons cinnamon powder
▢1/2 teaspoon all-spice
▢1/2 teaspoon nutmeg
▢1/4 cup corn syrup
▢1/4 cup dutch process or dark cocoa powder
▢4 cups all-purpose flour
▢1.5 teaspoons baking powder
▢1 cup nuts (like cashew, walnuts, pecan or almonds) - chopped
▢1 cup water
TOPPINGS (optional)
▢maraschino cherries
▢whole dates
▢whole pecan or walnut
RECIPE NOTES
NOTE 1 - Use apple, orange or cranberry juice for non-alcohol version
NOTE 2 - This recipe makes 3 loaves of 8x4-inch pan OR 2 loaves of 9x5-inch pan.
NOTE 3 - 8x4-inch loaves will take about 75-90 minutes to bake while 9x5-inch about 2 hours.

Mary Berry's Christmas Cake | delicious. Magazine
Mary Berry's classic Christmas cake is one of the most popular recipes on our website. The rich fruit cake is studded with plump dried fruits and finished with a good dash of brandy.
Serves
Ingredients:
425g currants
250g each sultanas and raisins
300g glacé cherries, quartered, rinsed and drained
150g ready-to-eat dried apricots, snipped into small pieces
75g mixed candied peel, roughly chopped
4 tbsp brandy, plus extra for pouring
300g plain flour
1 tsp ground mixed spice
½ tsp freshly grated nutmeg
300g softened unsalted butter, plus extra for greasing
300g dark muscovado sugar
5 medium free-range eggs
1 tbsp black treacle
Finely grated zest of 1 large lemon
Finely grated zest of 1 large orange
60g whole unblanched almonds, roughly chopped
Method:
1. Combine the dried fruit and candied peel in a large bowl. Add the 4 tbsp brandy and stir in to mix well. Cover and leave overnight.
2. Preheat the oven to 140°C/fan120°C/gas 1. Put the remaining ingredients except the almonds in a large bowl. Beat with a hand-held electric mixer until well combined. Stir in the nuts and the soaked fruit with any soaking liquid.
3. Grease a deep 23cm round tin or 20cm square cake tin with butter, line with a double layer of baking paper and grease the paper (see Golden Rules). Spoon the mixture into the prepared tin. Level the top and cover with a disc of baking paper.
4. Bake for 4-5 hours until firm to the touch and a skewer pushed into the middle comes out clean. Leave the cake to cool in the tin.
5. When the cake has cooled, remove the baking paper disc, pierce the top in several places with a skewer, then pour over a little brandy. Remove the cake from the tin but keep it in the baking paper. Wrap with more baking paper, then wrap with foil. Store in a cool place for up to 3 months to mature, occasionally unwrapping and spooning over 1-2 tbsp brandy.
6. Decorate the cake with glacé fruit, marzipan or ready-to-use icing. Tie a ribbon around the cake if you like before serving.

Fruits and nuts mixture:
1/3 cup golden raisins
1/3 cup dried cranberry
1/3 cup pitted prunes
1/3 cup dried mangoes
1/3 cup pitted dates
1/3 cup Pecans, lightly toasted
1/3 cup Cashew nuts, lightly toasted
Soak in 1/2 cup cooled boiled water and 1/4 cup brandy or rum.
1/4 bar (of 225 grams butter) butter, 60 grams
1/2 cup brown sugar, packed, 100 grams
1/4 cup honey or syrup
2 large eggs, 110 grams
1 tsp orange or lemon zest
1/4 cup orange juice, strained
Dry Ingredients:
1 cup all purpose flour, 125 grams
1/4 cup cocoa, Dutch processed/Alkalized
1 tsp. baking powder
pinch each of cinnamon, nutmeg and all-spice
