We are making a classic Cantonese recipe - wonton noodle soup. I know there are already tons of recipes out there but today I want to show you the authentic way to make it. In China, you can find wonton noodles restaurants everywhere - could be downstairs of your apartment, you can just walk to it and start your day with this nice and comfy soup. It can be next to the school and kids passing by it every day. Very cheap, a dollar or 2, and it gives you all-day energy.

INGREDIENTS FOR THE FISH POWDER
- 400 grams of flounder fish(will get 6-80 grams of dried fish)
INGREDIENTS FOR THE BROTH
- 2 tbsp of oil
- The shrimp shell
- 1 pound of pork bones (If you don’t eat pork, you can do beef bones)
- 1/2 pounds of chicken bones
INGREDIENTS FOR THE WONTON (Enough to make 60-70 wontons)
- 10 ounces of ground pork
- 10 ounces of shrimp
- 1 tbsp of soy sauce (Amazon Link -
- 1 tbsp of Chinese cooking wine (Amazon Link -
- 1 tbsp of oyster sauce (Amazon Link -
- 1 tbsp of fish sauce (Amazon Link -
- 1/4 tsp of salt
- 1 tsp of sugar
- 3 cloves of garlic
- 1 tsp of ginger
- 1 egg
- 3 tbsp of stock
- A drizzle of sesame oil (Amazon Link -
- 1 tbsp of fish powder (Amazon Link -
- 1/2 cup of diced scallion
- 60-70 pieces of wonton wrappers
INGREDIENTS FOR 1 PORTION OF NOODLE SOUP
- 1 tsp of the fish powder
- 2 tsp of soy sauce
- 2 tsp of fish sauce
- 2 cups of the broth
- 1/2 tsp of salt or to taste
- 1 portion of egg noodles
- 6-10 pieces of boiled wontons
- Scallion as garnish
- Few pieces of baby bok choy
Chicken Noodle Soup Asian Style
Chicken noodle soup recipe
*RECIPE* (2 servings)
INGREDIENTS:
3 large chicken legs/thighs (with or without bone)
5-6 scallions/spring onions
1 inch ginger
6 garlic cloves
4 tbsp soy sauce (light/regular)
1 tsp sugar
1/2 tsp salt
3 cups hot water
Oil as needed
2 servings noodles (150g)
—spices—
2 star anise
1 tsp black peppercorns
1 tsp fennel seeds
1/2 tsp cloves
1 cinnamon stick
2 bay leaves

PROCESS:
1. Separate the white and green parts of 5-6 spring onions/scallions. Thinly slice the green tops
2. Peel and slice 1 inch piece of ginger and lightly crush 5-6 garlic cloves
3. Set aside all the spices. If you don’t have spices, you can use 1 tsp Chinese 5 spice powder
4. Heat some oil in a pot on medium low flame. Fry ginger, garlic and white part of the scallions/spring onions until they are lightly browned to extract maximum flavor
5. Next add the spices and stir fry for 30 seconds. Stir frying blooms the spices adding a deeper aroma and flavor
6. Next add 3 large pices of chicken legs/chicken thighs and fry until they are browned on both sides. You can use chicken with or without bone. With bone will be tastier!
7. Pour in 3 cups of hot water. Hot water helps in continued cooking and reduces overall cooking time
8. Next add 4 tbsp soy sauce(light/regular), 1 tsp sugar and 1/2 tsp salt. You can always adjust salt at the end so don’t add too much now
9. Cover and simmer until the chicken is cooked through. It can take anywhere between 20-30 mins
10. If you find foam at the top, skim it with a ladle or a strainer
11. Once the chicken is cooked through, remove and shred into bite sized pieces. Taste & adjust the broth if needed
12. When you are ready to serve, prepare noodles for the soup. Cook noodles only until it's 90% cooked or it will get too mushy in the broth
13. Strain noodles directly into serving bowls and pour in piping hot soup
14. Top with shredded chicken, spring onions/scallions and enjoy!

SUBSTITUTES:
• Missing any of the spices?
You can skip one or two but you’ll need at least cinnamon, cloves and bay leaves
• No spring onions/scallions?
Use 1 thinly sliced onion (any kind)
• No noodles?
Pasta works too
• What else can be added?
Mushrooms, carrots and bok choy

TIPS:
• You can make the soup earlier and prepare the noodles just before serving
• Don’t add too much salt in the beginning. Different soy sauce brands have different salt levels
• The soup freezes well and can be used as a ready to eat meal. Store the strained soup and chicken separately in the freezer and prepare noodles while serving

20 Minute Easy Chinese Chicken Noodle Soup 花雕鸡汤面 Huatiao Chicken Noodles • Knorr Chicken Cube (No Added MSG) Recipe
Ingredients:
Serves 2 pax

Marinated Chicken

220g boneless chicken leg (cut into bite-sized pieces)
1 tablespoon Chinese cooking wine (premium Shaoxing Huatiao wine)
1/3 teaspoon salt
1/3 teaspoon sugar
A few dashes of white pepper
1/2 tablespoon cornflour
Other ingredients

1.5 tablespoons sesame oil
1 thumb-sized young ginger (sliced)
1 shallot (sliced)
2 cloves garlic (sliced)
1.2L (40.6 fl oz) water
0.5 tablespoon premium dark soy sauce
0.5 teaspoon sugar
2 angelica roots
1 Knorr chicken cube (No Added MSG)
2 tablespoons Chinese cooking wine (premium Shaoxing Huatiao wine)
2 portions of flour vermicelli (Mian xian or Mee sua)
1 teaspoon wolfberries
A handful of choy sum or bok choy
Steps:
1. Marinate sliced chicken with premium Chinese cooking wine (Shaoxing Huatiao wine), salt, sugar, white pepper, and cornflour for 10 minutes.
2. Heat up a deep pan or wok over medium-low heat and add sesame oil.
3. Add ginger and shallot, and fry till fragrant.
4. Add garlic and fry till fragrant.
5. Add the marinated chicken and cook until it turns white.
6. Add water, premium dark soy sauce, sugar, angelica roots, and one Knorr Chicken Cube (No Added MSG) and put the lid on to bring the stock to a boil.
7. Once the stock is boiling, add premium Chinese cooking wine (Shaoxing Huatiao wine) and cook for two minutes to evaporate the alcohol.
8. After two minutes, add the noodles and wolfberries and cook until the noodles are soft.
9. Once the noodles are soft, add your favourite greens.
10. Serve hot with a fried egg.

How to Make Chinese Ginger Wine Chicken Mee Sua 姜酒鸡面线 Super Easy Chinese Noodle Soup Recipe
Chinese Ginger Wine Chicken 姜酒鸡 is a dish commonly enjoyed by women on confinement. Confinement is the period in which women go through for 30 days after the birth of their child. We Chinese believe that confinement is an important period because giving birth causes a lot trauma to a woman's body, thus it is vital to nurse her back to health. This dish is commonly prepared during confinement because ginger is known to be good for expelling wind and improve blood circulation. But fret not, even if you're not on confinement, it's perfectly fine to eat this every now and then (in fact it's a super comforting dish)-- just not too frequent as this dish is considered too heaty for our body. To make this a complete dish, we added mee sua (姜酒鸡面线)to the comforting soup, yum yum!

Making the soup stock - boil for 45 mins to 1 hour

3L of water
1.5 kg of chicken feet - blanched
50g of old ginger - smashed lightly
2 bulbs of garlic - broken up but with skin intact
1 tablespoon of white peppercorn
Brine from 2 cans of button mushrooms
Frying the chicken

1 tablespoon of sesame oil
100 g of grated ginger
1 whole chicken - approx 1.2 to 1.3 kg
2 cups of white rice wine
3 tablespoons of oyster sauce
1 tablespoon of light soy sauce
1 tablespoon of dark soy sauce
2 cans of button mushrooms
1 teaspoon of sugar
1 cup of Chinese cooking wine (Shaoxing Huatiao wine)
Other ingredients (for one bowl of mee sua - for 1 pax)
