Ginger Sesame Tofu Bowl with a Miso Gravy Dressing
Watch me cook up an easy vegan and gluten-free dinner recipe, featuring a delicious white miso gravy (which is seriously the best!). I make this as a weeknight recipe and save the extra gravy (if there is any) for sandwiches, mash or other bowls.
Recipe:
INGREDIENTS:
Bowl:
Brown rice vermicelli (use 2 bunches/half the package or as desired)
1 zucchini
1 red pepper
1 overflowing cup shiitake mushrooms (or sub cremini)
1 ripe avocado
2 sheets nori
Ginger Sesame Tofu:
1 Tbsp Tamari (or soy sauce)
1 mounded Tbsp Fresh Ginger
1 Tbsp Brown sugar, or 1/2 Tbsp Agave
2 Tbsp Sesame Seeds + extra for garnish
1 Tbsp Apple Cider Vinegar
1 Tbsp water
White Miso Gravy:
2 Tbsp white miso paste (I use organic)
4 Tbsp nutritional yeast
2 Tbsp Tahini
1 c vegetable stock
Fresh Pepper to taste

Sesame Crusted Tofu + Ginger Slaw
Our delicious Asian-inspired ginger coleslaw is the perfect excuse to use up any leftover veggies you have. We love to serve the slaw with a really simple sesame crusted tofu. You can also serve this with rice for a bigger meal!

Serves 4
???? 2 tbsp light soy sauce
???? 4 tsp maple syrup
???? 1 tbsp rice vinegar
???? 1 tsp toasted sesame oil
???? 1/2 thumb of fresh ginger, peeled + grated
???? 400g / 14oz crunchy vegetables
???? 3 spring onion, sliced into thin strips
???? 3 tbsp cornflour
???? 4 tbsp plant-based milk
???? 4 tbsp sesame seeds
???? 1 tsp Chinese 5 spice
???? 450g / 16oz block of extra-firm tofu, pressed if necessary
???? salt + pepper
???? olive oil
???? 3 tbsp tahini
Combine 1 tbsp of light soy sauce, 2 tsp of maple syrup, the rice vinegar, toasted sesame oil and ginger in a small bowl, then set aside.
Next, prep the veggies by slicing them into thin strips. Add to a large mixing bowl with the sliced spring onion, then pour over the dressing. Stir well, then set aside.
Add the cornflour to a plate and pour the plant-based milk into a wide bowl. Next combine the sesame seeds and Chinese 5 spice together on another plate.
Slice the tofu into four pieces. Pat dry each slice, then season both sides with salt and pepper. First dip a slice into the cornflour, followed by the plant-based milk. Now place the slice onto the plate with the sesame seeds and Chinese 5 spice, and coat the slice all over in the seeds. Repeat until all the slices are coated in the seeds.
Add a splash of olive oil to a large frying pan on a medium heat. Add the tofu and cook for 6-8 minutes or until the sesame seeds are golden on all sides, then transfer to a chopping board and slice into thick strips. Cook in batches if necessary.
In a small bowl, combine the remaining 1 tbsp of light soy sauce and 2 tsp of maple syrup with the tahini and 2 tbsp of water. If necessary add another splash of water and keep stirring until the sauce is runny.
To serve, add the slaw and tofu to plates, then drizzle over some of the tahini sauce and serve the remaining alongside.
