How To make Ginger Spice Cookies 2
1/3 c Vegetable oil
3 tb Water
1 ea Egg
1/2 ts Vanilla extract
1 ts Baking powder
1/2 ts Ground cinnamon
1/2 ts Ground ginger
1/4 ts Ground cloves
1 1/2 c All-purpose flour
12 pk Sugar substitute
1/2 ts Ground cinnamon

Add baking powder, cinnamon, ginger, cloves, and flour. Stir until well blended. Roll dough onto a lightly floured surface. Cut into 2-inch rounds with a cookie cutter. Place cookies on a lightly oiled baking pan. Bake in a 375~ oven for 7 to 10 minutes. Combine sugar substitute and cinnamon in a plastic bag or shallow dish. Place warm cookies in the bag and shake to coat with topping. Cool. Food Exchange per 2 cookies: 1/2 starch/bread and 1/2 fat. Nutritional information per 2 cookies: 74 calories, 1 g protein, 8 g carbohydrate, 4 g fat, 18 mg sodium, 14 mg potassium and 16 mg cholesterol.

Ingredients:
1 cup (2 sticks / 8 oz / 227 g) butter, softened
2 cups (14 oz / 397 g) sugar
1 egg
2 teaspoons vanilla extract
2 3/4 cups (11 3/4 oz / 333 g) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 heaping tablespoons (1 ounce / 28 g) candied ginger
1 cup (6 ounces / 170 g) chopped white chocolate or chocolate chips
Additional Sugar for rolling cookies in, I used turbinado sugar

Gingersnaps are one of my favorite holiday treats. Not too sweet, perfectly spiced, and they have a great texture. I roll them in cinnamon sugar before baking but you can enjoy them plain or flatten/roll them out then drizzle with a glaze or royal icing after baking.

When TAK was an at-home bakery, I made thousands of these cookies. They were a holiday staple for my customers and they’re still a holiday staple in our home. Now, they can be one in yours!
Their salty-sweet nature makes them absolutely addictive. And that soft, chewy interior in combination with that crunchy sugar on top just cannot be beaten!
So we’re going to start with the cookie dough, I’ve got lots of great tips for y’all along the way so be sure to watch the video to the end!
INGREDIENTS:
* 2 1/2 cups all-purpose flour
* 2 teaspoons ground ginger
* 1 teaspoon ground cinnamon
* 1 teaspoon baking soda
* 1 teaspoon fine sea salt
* 1/2 teaspoon ground cloves
* 1 cup light brown sugar packed
* 3/4 cup + 2 tablespoons canola oil
* 1/3 cup dark molasses
* 1 large egg
* 1/2 cup coarse sugar crystals if desired
HOW TO MAKE GINGER MOLASSES COOKIES
1. Whisk together flour, baking soda, and spices.
2. Mix brown sugar, molasses, oil, and egg.
3. Add dry ingredients to wet ingredients.
4. Scoop, roll in sugar, and bake!

My award winning spiced ginger cookies take top prize at every cookie exchange or cookie contest I enter. These are a gluten free variation of my favourite recipe that I know you'll love just as much as I do. They are soft and chewy with a lovely kick of spice.
The trick is not to over cook these. Take them out of the oven when they still look slightly underdone. Once cooled, they'll firm up enough that they'll still be squidgy but not too overdone to be hard (that's unless you like your cookies with a good crunch! that's okay too).
