Homemade Pizza Dough Reicpe:
Preheat your oven to the highest temperature.
Poolish (yeast prep)
200g water
5g honey
5g yeast
200g all purpose flour
1. Mix the honey and yeast with water
2. Add in your flour
3. Mix until combined
4. Put the mixture in a tall or big container and leave out in room temperature for 1 hr.
5. After an hour, put poolish in the fridge overnight (16-24hr)
Pizza dough:
300g bread flour
300g water
20g salt
200g all purpose flour
1. Add 300g of bread flour to poolish and set aside
2. Mix together water and salt
3. Add another 200g of all purpose flour into poolish
4. Slowly add in water into the dough until all combined
5. Knead the dough on the counter for about 2 min
6. Apply some olive oil on the dough and rest for 15min on the counter
7. Shape the rested dough into a ball and cover it with a humid towel for 1hr in room temp
8. Make 4-5 pizza dough ball
9. Cover with plastic wrap or towel for 1hr
10. Make the pizza with toppings of your choice
11. Bake for 5-10min on highest temp
Eating The World's Best Pizza in ITALY
I traveled to Naples, Italy in search of the world's best pizza. It did NOT disappoint!! Naples is famous for it's Napoletana pizza which is simply made out of the freshest ingredients- a basic dough, raw tomatoes, fresh mozzarella cheese, fresh basil, and olive oil. No fancy toppings are allowed!

The Pizza Making Master of London - Massimo's Wood Fire Oven Sourdough Pizzas | Italian Street Food
If by chance you didn't know by now, Massimo is a Pizza making Master, not any ordinary master but he's also a dough spinning & tossing master, a master who serves up delicious pizzas at his street food stall going by the name of Pizza Massimo. Massimo uses only Sourdough for the pizza base.
I am in awe of the skills demonstrated by Master Pizzaiolo Massimo who has perfected his skills over the course of over 20 years; first starting in his home town in Sardinia, Italy.
This is the 3rd video of Massimo Pizza, I've already published 2 previous videos in the past years, (scroll down for the links).
Massimo trades at several locations, on this particular day Massimo Pizza was at Queens Park Sunday Farmers Market in London and his wonderful mobile pizzeria with a wood fire oven had that freshly baked smell emanating from the oven which started making me hungry.
As well as the simple Magarita Pizza (topped with just Tomato Sauce, Buffalo Mozzarella Cheese, fresh Basil Leaves)

Once a customer places an order; Massimo quickly and skillfully hand spins and stretches the dough and then it gets cooked in the wood fired oven (an oven which Massimo has had specially imported from Italy).
What raises the pizza to a higher taste level is the BBQ style smokey flavour imparted by the wood fired oven.
The actual pizza cooks very quickly, because the wood oven reaches a sizzling temperature of around 300 to 400 degrees centigrade, creating a deliciously smokey flavoured pizza.

Sicilian Style Pizza - sheet pan thick crust square slices made at home
Today we are feasting on Sicilian Style Pizza. I found out about this style from the famous Prince Street Pizza in New York and have seen it spreading all over. This pizza has a delicious thick crust with a soft inside along with a delicious sauce. No overly sweet jar sauce for this but a great mild fresh tomato flavor to go along with dry mozzarella and thinly sliced pepperoni's. We cold ferment the dough to get the right flavor and our oven technique takes care of the rest. Expect pizzeria quality or better with this recipe.
