Mini Georgia Peach Cheesecakes

Ingredients
1/4 cup gingersnap crumbs
1/4 cup pecan meal (finely ground pecans)
2 tablespoons salted butter
One 8-ounce block cream cheese, at room temperature
One 8-ounce tub mascarpone, at room temperature
1/4 cup sour cream
3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
Pinch kosher salt
1 tablespoon dark brown sugar
Pinch ground ginger
Pinch ground cinnamon
2 peaches, chopped (about 2 cups)
2 teaspoons bourbon
1 teaspoon lemon juice
Directions
Whisk together the ground gingersnaps and pecans in a small mixing bowl. Melt 1 tablespoon of the butter and stir into the mixture until combined. Place 1 tablespoon of the crumb mixture into the bottom of each of six 4-ounce jars. Press into an even, compact layer. Set aside.
To make the filling, place the cream cheese, mascarpone, sour cream, confectioners' sugar, vanilla and salt in the bowl of an electric mixer fitted with the beater attachment. Whip just until smooth, about 1 minute. Drop 3 tablespoons of filling into each jar. Give each jar a few gentle taps against the counter to even out the filling. Secure the lids on top of the jars and refrigerate to set for at least 1 hour.
To make the Georgia peach topping, place a large nonstick skillet over medium heat. Add the remaining tablespoon butter and heat until melted. Stir in the brown sugar, ginger and cinnamon. Cook until the sugar dissolves, about 2 minutes. Add the peaches and stir to coat. Add the bourbon and lemon juice. Cook, stirring occasionally, until the peaches are slightly softened, about 3 minutes more. Set aside to cool.
Remove the lids from the cheesecake jars. Dollop 1 tablespoon of peach compote on top of each cheesecake. Serve immediately or secure the lids and refrigerate until ready to serve.

- 2 Cans of Yellow Cling Peaches in Heavy Syrup (28 oz/each)
* 1 Can Drained/ 1 Can w/ Syrup
- 2 Boxes of Pillsbury Pie Crust ( You will use 3)
- 1/2 Stick Melted Butter
- 1/2 Cup Brown Sugar
- 1 Tbsp Ground Cinnamon
- 1/2 Tsp Nutmeg
- 1 Tbsp Vanilla Extract
- 2 Tbsp Cornstarch
- 2 Tbsp Water
- Pinch of Salt
- 1 Tbsp Lemon Juice
Peach Pie
Here is a great recipe my mother and my aunts use to make during the summer when peaches were in season - Peach Pie. It doesn't get any better.

Ingredients
- 10-12 peaches, peeled and sliced
- 100g sugar
- Juice of 1 lemon
- 1 tbsp cornflour
- 200g plain flour
- 80g brown sugar
- 1 tsp baking powder
- 1/2 tsp bicarb soda
- Pinch salt
- 100g unsalted butter
- 125g sour cream
- Ice cream to serve
Method
1. Start by placing the sliced peaches into a skillet (or fry pan that can go into the oven).
2. Add the lemon juice and 100g sugar, stir and set aside.
3. For the batter, mix flour, brown sugar, baking powder, bicarb soda and a pinch of salt.
4. Then, mix in the butter until you get a sandy consistency.
5. Mix through the sour cream and set aside.
6. Place the peaches on the heat and cook for 5 minutes or until they start to soften.
7. Stir through the cornflour and take off the heat.
8. Place the batter evenly on top of the peaches.
9. Place the whole skillet into a 200°c oven and cook for 20-25 minutes or until golden brown.
10. Serve with ice cream and enjoy!

Craig's Georgia Peach Cobbler | Crazy Easy Peach Cobbler Using Canned Peaches
Here is a quick and easy recipe for Georgia Peach Cobbler. It's just like what I used to get at restaurants in Savannah. Try it with ice cream or whipped cream. Is there some other recipe that you would like me to make? Suggest it in the comments below! Thanks.
Ingredients:
1 stick of salted butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1 cup milk
1 teaspoon vanilla extract
1 can (28 ounce) peaches in heavy syrup
Directions:
Step 1: Preheat oven to 350 degrees.
Step 2: Melt butter and pour into a 9 X 12 baking dish.
Step 3: In a mixing bowl, whisk together the all-purpose
flour, sugar, and baking powder. Slowly pour in milk, while
stirring, to avoid clumps. Stir in vanilla extract.
Step 4: Pour batter mixture over melted butter. Do not
stir! Place peaches evenly in pan, over batter mixture.
Slowly pour peach syrup evenly over peaches and batter.
Step 5: Bake for one hour, or until top is golden brown.
Serve with ice cream or whipped cream.
