How To make Fudgey Pecan Cake
3/4 c Butter; melted
1 1/2 c Sugar
1 1/2 ts Vanilla
3 Egg yolks
1/2 c Hershey's cocoa; plus
1 tb Hershey's cocoa
1/2 c Unsifted all-purpose flour
3 tb Vegetable oil
3 tb Water
3/4 c Pecans; finely chopped
3 Egg whites; room temperature
1/8 ts Cream of tartar
1/8 ts Salt
Royal glaze recipe : 8 oz Semi-sweet baking chocolate
; (8 squares) Broke into pieces; * 1/2 c Heavy cream; or
Whipping cream Garnish: Pecan halves; if desired Recipe by: Hershey's 'Chocolate Classics' 1988 edition. Line bottom of 9" springform pan with aluminum foil; butter foil and side of pan. Set aside. Combien 3/4 C melted butter, the sugar and vanilla in large mixer bowl; beat well. Add egg yolks, one at a time, beating well after each additin. Blend in cocoa, flour, oil and water; beat well. Stir in chopped pecans. Beat egg whites, cream of tartar and salt in smallmixer bowl until stiff peaks form. Carefully fold into chocolate mixture. Pour into prepared pan. Bake at 350^ for 45 minutes or untiltop begins to crack slightly (Cake will not test done in center) Cool 1 hour. Cover; chill until firm. Remove side of pan. Prepare Royal Glaze. Pour over cake, allowing glaze to run down side. With narrow metal spatula, spread glaze evenly on top and side. Allow to harden. Garnish with pecan halves. Serves 10-12. For Royal Glaze: Combine chocolate and cream in small saucepan. Cook over very low heat, stirring constantly, until chocolate is melted and mixture is smooth; do NOT boil. Remove from heat;cool, stirring occasionally, until mixture begins to thicken, about 10 to 15 minutes. *You may substitute 1 1/3 C Hershey's Semi Sweet Chocolate Chips for the baking chocolate. Brownies can be either fudgy or cakey but I find the cakey ones to just be mini chocolate cakes whereas the fudgy ones are the real deal.
The pecans add a great touch but they can be omitted or substituted with other nuts according to your preference.

for the cake:25-26 cm/10inch baking dish/pan
250g/2 cups flour
100g/1/2 cup light brown sugar
100g/1 cup unsweetened cocoa powder
100g/7 tbsp soft butter
3 medium eggs at room temperature
100g/3/4 cup chopped dark chocolate
250ml/1 cup milk at room temperature
200g/2 cups ground pecans
80g/1/4 cup dark chocolate spread or nutella
70g/1/4 cup pear sauce or apple sauce
15g/1 tbsp baking powder
5g/1 tsp cinnamon powder
2.5g/1/2 tsp baking soda
1.25g/1/4 tsp salt
For the fruit mixture:
3 pears peeled and cut in small pieces, or your chosen fruit
30ml/2 tbsp lemon juice
30ml/2 tbsp maple syrup
The seeds of a vanilla bean or 15 ml/1 tbsp vanilla extract

You may be wondering why you should make a cake in a crockpot when it's super simple to make one in the oven. Well, even though a cake from an oven is good, it's usually fluffy. This cake made in a crockpot was fudgy, moist and dense. It tasted so rich and gooey like a date cake (but there were no dates in it). Use whatever cake mix and frosting you like to customize this recipe to your liking. Finally, I could've used pecans, but I didn't have any so I used walnuts instead. Here's the recipe (and please don't forget to check out my social media links under the recipe)!
This recipe is adapted from recipesthatcrock.com
1 pkg butter pecan cake mix (or any flavor you like)
3.5 oz pkg vanilla instant pudding mix
1 cup sour cream
1 cup water
¾ cup oil
4 eggs, beaten
1 cup chocolate chips
1 cup chopped walnuts or pecans
1 container coconut pecan frosting (or any flavor you like)
- Combine wet ingredients and mix well. Add cake mix and pudding mix and stir until just combined (making sure not to overmix). Add walnuts/pecans and chocolate chips and stir a few times to combine.
- Spray crock pot with cooking spray. You can line with parchment paper, if you wish, but I didn't.
- Spoon your batter into your crock pot and spread evenly.
- Place 5-6 paper towels on top of your crock pot to absorb moisture, cover and cook on high for 1.5-4 hours (times can vary greatly depending on your particular slow cooker, watch carefully the first time you make it to know how your slow cooker cooks this cake). My crockpot is a 4 qt, programmable Crockpot brand slow cooker and it took me 4 hours.
- Turn the cake out of the crockpot carefully and let cool completely. Slice the cake in half and frost both layers. I frosted only the middle and top (leaving the sides unfrosted). If you want to frost the entire cake, you may need 1.5 containers of frosting.
- Serve with a cold glass of milk. Enjoy!

I love Pecan Pie as much as YOU do but recipes for Pecan Pie are ten-a-penny! I always want to try and give you a little something extra if I can, because I love you. So this recipe is EXTRA extra! It's got everything you could dream of in a Pecan Pie but with a delicious fudgey chocolate brownie perfectly shoe-horned into the middle. Dreamy!

120g plain flour
45g light soft brown sugar
120g cold butter, chopped
Chocolate Brownie bit...
85g dark 70% chocolate
85g unsalted butter
165g caster sugar
2 lg eggs
25g cocoa powder
60g plain flour
¼ tsp salt
¼ tsp baking powder
For the Pecan Pie Topping...
115g roasted and chopped
75g maple syrup
75g light soft brown sugar
75g double cream
50g butter
¼ tsp salt
¼ tsp cinnamon
¼ tsp vanilla
extra pecans for decoration
