Pineapple and Cucumber Salad Recipe!
The flesh and juice of pineapples are used in cuisines around the world. In many tropical countries, pineapple is prepared, and sold on roadsides as a snack. They are sold whole, or in halves with a stick inserted. Whole, cored slices with a cherry in the middle are a common garnish on hams in the West. Chunks of pineapple are not only used in desserts such as fruit salad, but also as a main ingredient in savory dishes, such in hamburgers, and as a pizza topping. Crushed pineapple is used in yogurt, jam, sweets, and ice cream. Pineapple and Cucumber Salad

Serves 2
Cook Time: 20 minutes
For Vinaigrette
• 1 pint of raspberries
• 5 mint leaves
• ½ cup of neutral oil
• 1 tbsp of hot sauce, your choice
• 2 tbsp of honey or agave sweetener
• 2 rehydrated guajillo chiles, stemmed
• salt and pepper to taste
For Fruit Salad
• 1/8 to ¼ of a ripe pineapple, peeled and quartered into bite-size pieces
• ¼ english cucumber, sliced on the bias
• 2 green onions, sliced
• 2 tbsp cilantro, chopped
• 6 mint leaves sliced thin
• 2 large strawberries, quartered
• 1 orange, peeled and sliced
• 1 tsp of sambal chili sauce
• 1 tsp of fish sauce
• 1 tbsp of honey or agave sweetener
• salt to taste
Puree all vinaigrette ingredients and set aside in refrigerator. Assemble fruit salad by mixing all ingredients together. Add on vinaigrette last.

Betty's Frozen Pineapple Cream Salad
Betty demonstrates how to make Frozen Pineapple Cream Salad. This salad is frozen for several hours and then cut into squares and served on a bed of lettuce--a beautiful and tasty salad!
Frozen Pineapple Cream Salad
1 cup milk
1 tablespoon lemon juice
1 cup sugar
15 ounces canned pineapple tidbits, drained
¾ cup chopped pecans
4 ounces Cool Whip (You may substitute Betty's Sweetened Whipped Cream Topping, found in a Quick Tip in Betty's Kitchen, instead.)
outer leaves of iceberg lettuce, arranged on serving plate
mint sprigs, for garnish
In a large bowl, mix 1 cup milk, 1 tablespoon lemon juice, 1 cup sugar, 15 ounces canned pineapple tidbits, drained, and ¾ cup chopped pecans. Fold in 4 ounces Cool Whip. Pour into an 8-inch or 9-inch square Pyrex dish. Freeze until firm. You may let this freeze overnight, it you choose. When frozen, cut into squares and place on a bed of lettuce. Garnish with sprigs of mint. Serve immediately. Enjoy! --Betty :)

You'll Need...
4 oranges
1 cup cubed pineapple
pinch sea salt
pinch black pepper
1 clove garlic (crushed)
1 tablespoon chopped cilantro
1/2 scotch bonnet pepper
* If you're using canned pineapple, fell free to toss in about 2 tablespoon of the juice it's packed in. The more this marinates, the stronger the flavors will be.
