How To make Front Porch Fried Catfish
10 1/2 cups cornbread mix
1 tablespoon garlic powder
2 tablespoons dried thyme
6 whole catfish fillets -- (3/4- to I-pound)
1 cup buttermilk
1 tablespoon salt
2 teaspoons black pepper
ground
2 teaspoons red pepper :
ground
Peanut oil
Combine first 3 ingredients in a shallow dish. Dip fillets in buttermilk, allowing excess to drip off; sprinkle with salt and peppers, and dredge in cornbreadmixture.
Pour oil to depth of 4 inches into an electric fryer or Dutch oven; heat to 400F. Fry fillets, two at a time, 2 to 3 minutes or until they float; drain on paper towels. Serve immediately.

Fried Catfish
I went back to my roots and my husband’s roots for this dinner. Fried Catfish served over a bed of cheese grits. Sean was over the moon with happiness. If there is one thing this Northeastern Kentucky gal knows how to do that is to fry food. The preparation of cheese grits I have learned from my husband. In the late 70’s my parents purchased a cabin on a private lake down in Fleming County, Kentucky. They loved this cabin at Park Lake, it sat on top of a hill and overlooked the lake, and there were maybe 20-25 privately owned cabins scattered around the hillside and flatland surrounding this lake. Mom enjoyed it mostly for the social status I think but Dad loved it for the getaway and the fishing, relaxation and nature abundance. When my first husband and I were just married he loved to go to the cabin and fish on the lake. It was one mile walk around the lake using the gravel lane. A good size but small enough that you could not use a motorized engine. So when fishing you must use a canoe or little Jon boat. Dad had an aluminum canoe which he kept down by the lake. Fish were abundant in this natural spring feed lake. I remember one of the first times I took my now ex-husband to this lake his eyes gleamed over in delight as he was and still is an outdoorsman extraordinaire, even if only in his mind. Within the hour of arrival we opened the cabin, put away all the gear, stored the food, sheets & towels inside and set up the cabin. With fishing rods in hand we headed towards the lake. Now at the time, he was an avid fisherman. He asked me to go fishing basically for the company and of course to show off his skills, teaching me a thing or two about fishing. After an hour or so I was bored with floating around on this lake, the bugs were swarming around me and I was done. So I just started smacking the water with my bait much to his annoyance and frustration. Well lo and behold while I was bobbing the pole up and down with the bait dancing on top of the water one of the largest fish of the lake literally jumped out of the water and latched onto my bait and hook. I screamed with delight, another couple sitting on their cabins porch clapped and shouted “you caught a big one”! My ex-husband was so incensed, he snatched the rod out of my hand, unhooked the fish and threw it back in the lake! He told me that was not what fishing was about and grabbed the oars and paddled us back to our dock. Of course I laughed and ran my mouth all the way back to the dock as he had yet to catch anything. For some reason I was not asked to go fishing again. LOL

FRIED CATFISH
Time: 1 Hour and 15 minutes
INGREDIENTS:
• 2 pounds catfish fillets
• 2 cups milk
• 3 cups finely ground cornmeal
• Salt & Pepper
• Oil for frying
DIRECTIONS:
1. Rinse catfish fillets under cold water and place in a shallow baking dish or bowl. Add milk to cover fillets. Cover the dish and refrigerate for approximately one hour.
2. Remove the fillets from the refrigerator about 10 minutes before ready to cook.
3. Place a large frying pan over high heat and pour in oil. Allow oil to come to frying temperature while preparing the fish.
4. Combine the cornmeal and salt and pepper in a shallow pan.
5. Remove fillets from milk letting most of the excess drip off.
6. Place one fillet at a time into the cornmeal and turn it several times to coat well. Prepare all the fillets before you begin frying.
7. Carefully lower the fillets, one at a time, into the hot oil. Don’t crowd the pan frying in several batches if necessary. Turn the fillets when golden brown on one side. Cook on the second side until nicely browned as well.
