1 1/2 lb Yam cut into small pieces
1 ts Salt
1 ts Msg
2 tb Sugar (gula melaka
-preferred) 2 tb Softened butter
2 tb Tapioca flour
Stuffing Ingredients 4 oz Prawns
4 oz Meat, minced
3 sm Onions chopped
2 oz Frozen green peas
1 Spring onion chopped
2 Mushrooms diced
1/2 ts Salt
1/2 ts Msg
1 ts Sugar
1/2 ts Soy sauce
1/2 ts Oyster sauce
1/2 tb Cornflour in 3 T water
2 tb Cooking oil
Puff Ingredients 1. Steam yam until cooked. Remove and mash. Leave to cool.
2. Heat cooking oil in pan. Add prawns and meat and stir for 1 minute.
Add onions, spring onion and mushrooms and stir for another minute. 3. Add salt, msg, sugar, soya sauce, oyster sauce and cornflour mixture.
Stir well. Add in green peas and stir. Remove and cool. 4. Put puff ingredients in a bowl and mix well. Knead thoroughly. Divide
into 20-25 portions. 5. Roll each portion into a ball and flatten.
6. Put 1 t stuffing in centre of dough. Moisten edges, fold over and
seal. 7. Heat cooking oil for deep frying. Deep fry until golden brown. Serve

Kali ni Che Nom nak share resepi karipap inti keledek yang rangup. Karipap memang sedap sangat makan waktu berbuka puasa kan. Cara nak buat untuk karipap mcm ni lebih mudah lah berbanding karipap pusing..bagi Che Nom karipap yg perfect lah kan, kulitnya mesti nipis dan rangup, kelim tepi nya halus tak tebal dan inti tu kena penuh..baru lah perfect. Ada satu bahan kali ni yang Che Nom masukkan dalam doh kali ni untuk dapatkan kulit yang rangup dan masih rangup bila sejuk. Inti keledek pula memang sedap manis, dan pedas berempah.

Bahan-bahan untuk kulit karipap:
500g /4 cawan tepung gandum
2 sudu besar tepung beras
125ml /½ cawan minyak masak
28g /2 sudu besar majerin
250ml /1 cawan air (**ralat: abaikan 125ml di video)
1 sudu kecil garam
Bahan-bahan untuk inti keledek:
1 kilo keledek oren
2 biji bawang merah besar
4 ulas bawang putih
6-7 tangkai cili kering
45g /½ mangkuk ikan bilis
ATAU 3 sudu besar udang kering
½ cawan minyak masak
Rempah 3 sekawan (1 kayu manis, 3 cengkih, 2 bunga lavano)

Kroket adalah gorengan yg enak dan gampang utk membuatnya. Biasanya kroket itu terbuat dr kentang yg dihaluskan. Nah teman-teman kali ini saya akan membuat kroket dari olahan talas yg renyah dgn isian ayam dan sayuran. Rasanya istimewa. Menggunakan panko (tepung roti org jepang) rasanya lebih kriuk-kriuk/crunchy.
RESEP KROKET TALAS
Bahan-bahan:
=============
500gr Talas yg dikupas kulitnya (diparut)
1 sdt munjung maizena
1/2 sdt garam
1 sdt kaldu jamur
50 ml air
Bubuk ngohiong sedikit optional)
1 sdm mentega (cairkan)
Untuk Isian:
=============
100 gr daging ayam (potong kecil)
5 batang buncis (potong kecil)
Daun seledri secukupnya (iris halus)
1 daun bawang (iris halus)
1/2 batang wortel (potong dadu)
1 jamur shiitake (direndam ,potong kecil)
2 bawang putih (cincang halus)
1 bawang merah yg besar/3 yg kecil (potong tipis)
1/2 sdt garam
1/4 sdt merica
1/2 sdt kaldu jamur
1 sdt saos tiram (lupa disertakan di video)
1/2 sdt gula (lupa disertakan di video)
Untuk baluran:

Tepung roti/panko

Croquette is delicious deep fried appetizer and simple to make. Usually croquette is made from mashed potatoes. This time I will make crispy croquette with Taro with chicken and veggies filling. Tastes amazing especially breaded with panko (Japanese bread crumbs) makes croquette crispier.
CROQUETTE TARO RECIPE
Ingredients:

500 gr taro (shredded)
1 tbsp maizena or corn starch
1/2 tsp salt
1 tsp mushroom stock
50 ml water
Little bit of five spice (optional)
1 tbsp butter (melted)
Filling:
=============
100 gr chicken (cut into small pieces)
5 pieces string bean ( cut into small pieces)
Celery as needed
1 stalk scallion (thinly sliced)
1/2 of stick carrot (cut into small cubes)
1 shitake mushroom (soaked, chopped)
2 cloves garlic (minced)
1 clove big shallot/ 3 small one (thinly sliced)
2/2 tsp salt
1/4 tsp white pepper
1/2 tsp mushroom stock
1 tsp oyster sauce (forgot to mention it in the video)
1/2 tsp sugar (forgot to mention it in the video)
Coating:
=============
Bread crumbs/panko
2 eggs

Ingredients:
2 french loaves /baguette
300g minced mutton / beef
4 eggs
1 Yellow onion
Cucumber
Tomato
Ingredients : *
300g Minced mutton / beef
1/2 tsp coriander powder
1/4 tsp fennel powder
1/4 tsp cumin powder
1/4 tsp black pepper
1/4 tsp salt
Method 1
Step 1
Cook beef with all spices* for 5 mins and set aside
Step 2
Beat four eggs and add :
1/4 tsp white pepper
1/4 tsp cumin powder
A pinch of salt
Combine steps 1 & 2 with chopped onion
Dipping Sauce:
Sweet Chillie Sauce
5 fresh red chillies (deseed and slice)
4 garlic
3 tbsp Maggi Chillie Sauce
3 tbsp Heinz chillie sauce
3 tbsp Maggie tomato sauce
1/4 cup hot water
Blend all ingredients and heat in a pan for 5 mins
Sambal Tumis
Ingredients:
40 Dried red chillies
(cut into strips, deseed, boil & blend)
Blended Ingredients: (Use about 4 tbsp onion mix)
2 onions /20 shallots
6 garlic
3 cm ginger
Other ingredients:
1/2 tsp shrimp paste granules (belacan)
1 tsp tumeric
1 tsp chicken granules (optional)
2 tbsp red sugar
1 tbsp sugar
Salt to taste
1/2 tsp tamarind paste
Method 2 :
Add 3 tbsp sambal tumis to egg mixture and mix well. Repeat as above
