How To make Fried Eggplant Sandwiches
1 Eggplant
Salt 6 oz Mozzarella cheese
(not grated) 1/2 ts Yeast
1 1/2 c Warm water
(105-115 degrees) 2 c Plain flour
Pepper to taste 4 1/2 tb Oil
1 lg Egg white
Oil for frying Slice the eggplant into 1/4" rounds. Sprinkle with salt and let drain in a colandar for about an hour. Slice the mozzarella into thin slices and trim to the shape of the eggplant slices. Sprinkle the yeast over the warm water abd stir until is dissolved. Whisk in 1 1/2 cups flour and the pepper until smooth. Keep at room temp for 30
min. Rinse and pat dry the eggplant slices. Fry them in batches using 1 T oil per batch over medium heat about 2 min per side. Remove to paper towels to drain while you finish the other slices. Place a cheese slice between each two eggplant slices (like a sandwich). Press firmly together and dip in the remaining flour to coat both sides. Beat the egg white until stiff (but not dry) peaks form. Fold into the yeast mixture. Heat oil (about 1 inch deep) in a large frying pan. Dip 1 eggplant sandwich into the batter at a time and place in the hot oil. Fry 4-6 at a time for 1-2 minutes per side until light brown. Place on paper towels to drain oil until all are done. Serve hot. These are great with a horseradish type dressing on top! Depending on the size of the eggplant, this could make 6-12 sandwiches. Walt MM

Fried eggplant sandwich/pocket Chinese street food recipe 炸茄盒
Fried eggplant sandwich/pocket is an authentic Chinese finger food. You can also replace eggplant with lotus root. The secret ingredient here is a pinch of baking powder, which makes the eggplant sandwiches crispy.
Enjoy them right after deep frying. They could become soggy quickly. You could also replace potato starch with corn starch or any kind of starch alike.

The Best Fried Eggplant Parmesan Sandwich / Easy Recipe
Using an iron skillet panini pan, we show you how we make these delicious fried eggplant parmesan paninis. It's important to select the best ingredients.
The portions will vary, so I will list what we used and you can be the judge with how much sauce, cheese, basil, etc., you want with this recipe.
Good quality bread
Italian eggplant, sliced 1/2 slices
Fresh buffalo mozzarella
Your favorite tomato sauce (or make it homemade)
fresh basil
butter
salt and pepper
panko
egg
flour
Olive oil

dredge your eggplant slices in flour, eggwash and panko and set aside.
On medium/high, heat up your oil then fry the eggplant on both sides until beautifully golden brown.
build your panini sandwich.
layer eggplant, cheese, basil and sauce. Sandwiched between two pieces of bread, butter each side or you can even use oil.
If using a panini pan like the one you see in this video, heat the panini lid on a separate flame so it gets hot. Be don't forget to use an oven mit when using.
Press panini into pan, press down with lid, and cook for a few minutes per side or until golden.
Slice, and enjoy.

Ingredients:
1 large eggplant | 550g |19oz
2 green onions
1 garlic clove
1cup | 3.5oz | 100g vegan cheddar cheese
2 tbsp parsley
1 tsp salt
¼ tsp black pepper
1 cup | 3.4oz | 96g breadcrumbs or chickpeas crumbs
Oil for frying
Method:
Peel and cut 1 large eggplant ???? or 2 medium eggplants | 550g | 19 oz
Cut 2 green onions and 1 garlic clove ????
Heat oil in a large skillet over medium-high heat. Add onion and sauté until translucent.
Add garlic and sauté until fragrant.
Add eggplant cubes and sauté until browned and soft for about 10-12 minutes.
Then transfer to a large bowl and mash.
Grate 100g | 3.5oz vegan cheddar cheese ????
Chop 2 tbsp of parsley.
Add 1 cup | 3.4oz | 96g breadcrumbs or chickpeas crumbs. I prefer chickpea crumbs.
Salt and pepper to taste.
Mix well
Transfer the mixture to the fridge for 20-30 minutes to allow the breadcrumbs or chickpeas crumbs to suck up some of the moisture.
Form the patties with your hands.
Fry patties for about 4 minutes on each side until golden brown and enjoy!
