4 oz Cheddar cheese (about 1
- cup grated) 1/4 c Sugar, more if apples are

2 tb Butter
4 ts Lemon juice
4 tb Shortening or lard for
- frying Have all ingredients very cold. Cheese Pastry Sift flour and salt together in a bowl. Stir grated cheese into flour mixture. add shortening or lard and cut in with pastry blender or two knives until pieces are size of small peas. Sprinkle ice water over mixture, a teaspoon at a time, mixing lightly with a fork after each addition. Add only enough water to hold pastry together. Work quickly and do not over handle. Shape into 2 balls (wrap in plastic wrap and refrigerate) Apple Filling Place apples, hot water in saucepan, cover and simmer, stirring occasionally, until apples are barely tender (about 5 to 10 minutes. Drain thoroughly and add butter and lemon juice. Mix grated cheese with sugar and cinnamon and add to apple mixture. Stir only enough to mix ingredients evenly. Set aside. Flatten one ball of pastry on a lightly floured surface. Roll from center to edge into a round about 1/8 inch thick. With knife or spatula, loosen pastry from surface whenever sticking occurs; lift pastry slightly and sprinkle flour underneath. Cut into 6-inch rounds, using a saucer as a guide. Spoon about 2 Tablespoons of the apple filling onto one half of each round. Moisten the
edge of one half of the round with water to help form a tight seal and fold other half of the round over the filling. Press edges together with a fork. Repeat with the other pastry ball. Heat lard or shortening in the skillet over medium heat. Place as many pies as will fit in skillet without crowding. Fry pies on one side 8 to 10 minutes, or until golden brown. Turn and fry until other side is golden brown. Add more shortening or lard if necessary to keep pies from sticking. Serve warm with ice cream or slices or sharp cheddar cheese, or glaze with a sugar glaze if desired. Source: The Cheese Cookbook Bev in Orange 8/94 -----

McDonald's fried apple pies recipe...dining in history
A sweet, gooey and flavoursome apple filling covered with the deep fried crisp and flaky pastry coat. Yes, these goodies that were served until the 1992 by McDonald's is a true indulgence. Want to bring your childhood memories to life? then this McDonald's fried apple pie recipe is certainly for you.
SOME NOTES:
1)You can usually buy ready made McDonal's apple pie pastry sheets.
If not available as in my case you could use any other pastry sheet
as long as it is thin.
2)These pies can also be baked. The baked ones too taste crispy and
nice. In that case 450˚F for 15-20 min.
INGREDIENTS:
1)apples 1 1/2 pcs (Granny smith apples or any if not available)
2)brown sugar 2 tbsp
3)nutmeg powder 1/2 tsp
4)cinnamon powder 1/2 tsp
5)butter (salted) 1 tsp
6)pastry sheets
And that's it. Enjoy your pie.

Frances Davis: Fried Dried Apple Pies
Known as “Fried Apple Pies,” “Dried Apple Pies,” or even “Fried Dried Apple Pies,” these locally made pies seem to have a ubiquitous presence throughout Southwest Virginia, appearing on the counters and shelves of country stores, gas stations, and community festivals. The defining characteristic of the pie is its intense flavor, accomplished through the use of dried apples, which are rehydrated through a long simmering process with brown sugar. Rocky Mount's Frances Davis talks about her recipe and memories at the Virginia Folklife Apprenticeship Showcase on Sunday, May 15, 2016.
Miss Helen's Fried Apple Pies
Miss Helen makes her famous fried apple pies. She doesn't measure, but here is a list of ingredients :)

Splash of Canola oil
Dehydrated apples (soaked in water overnight)
Make a well in flour. Pour in milk and oil and slowly mix in with flour until dough forms. Pull out small segments and roll into circles. Fill with apples, fold in half and seal with fingers. Place in frying pain with oil and fry until golden brown. Drain on paper towel.
