How To make Fresh Strawberry Cupcakes
1 3/4 c All-purpose Flour
1 t Baking Soda
1 c Sugar
1/2 c Chopped Walnuts
2 x Eggs
1/2 c Vegetable Oil
1/2 t Almond or vanilla extract
10 oz Pkg frzn sweet Strawberries*
* or 1 cup crushed fresh strawberries mixed with 3 T sugar Mix together flour, baking soda, sugar and nuts in a bowl. In another bowl, beat together eggs, flavoring and oil until well blended. Add strawberries and beat at slow speed of mixer until berries are partially broken. Beat in flour mixture slowly until smooth, but pieces of berries are still visible. Pour batter into greased muffin tins, filling to half. Bake at 350 deg F for 30 minutes, or until they test done. Or, bake in greased 9x5x3" loaf pan for at 350 deg F for 1 hour, or until done. Sprinkle with powdered sugar if desired.

Who wants fresh strawberry cupcakes WITH cream cheese frosting?! YUM!
Cupcake Recipe
Ingredients:
1 ½ C flour
1 tsp baking powder
Pinch of salt
½ C unsalted butter
1 C sugar
2 egg whites
1 whole egg
1 tsp vanilla extract
¾ C strawberries, chopped or pureed
¼ C milk
Directions:
1. Preheat oven to 350 degrees.
2. In medium sized mixing bowl, add in flour, baking powder, salt and whisk together.
3. In a separate mixing bowl, add butter and beat with mixer until it’s soft and fluffy.
4. Gradually add sugar into the butter and mix between each addition, scraping down the sides.
5. Add egg whites and mix.
6. Add egg and vanilla extract, then mix.
7. In separate bowl, add strawberries and milk, then whisk together.
8. Alternate adding flour mixture and strawberry mixture into the batter and mix between each addition, scraping down the sides.
9. Fill each liner in the cupcake pan about ¾ of the way full.
10. Place cupcakes in the oven for approximately 20-25 min or until toothpick comes out clean.
11. Remove cupcakes from the pan and let them cool on a wire rack.
12. Frost them and enjoy!
Cream Cheese Frosting Recipe
Ingredients:
8 oz cream cheese
½ C unsalted butter
1 ½ tsp vanilla extract
32 oz powdered sugar
Directions:
1. Add cream cheese and butter into a medium mixing bowl.
2. Beat those together until it’s soft and fluffy.
3. Add vanilla extract.
4. Gradually add powdered sugar a little bit at a time and beat well. 5. Scrape down the sides between each mixture.
6. Use to top a cupcake or favorite dessert!
7. Enjoy!

Yields: About 62 mini cupcakes
(tip: cut recipe in half if wanting to do two berry flavors)
INGREDIENTS:
½ cup (1 stick) of softened butter
1 cup of sugar
2 Eggs
1 ½ cups of baking flour
1 ½ tsp of baking powder
½ tsp of salt
3/4 cup of buttermilk
1 cup of pureed strawberries
1 tsp of vanilla extract
frosting
1 package, 8oz of cream cheese
3-4 cups of powdered sugar (depending on preference of texture, more icing will make it thicker)
1/4 cup of pureed strawberries
10-12 small strawberries for garnish
1 Tbsp of peach or apricot jam
1 tsp of water
Preheat oven to 350. Add in your sugar and butter to your mixer, and mix on medium-high speed. Then add you eggs one at a time, until fully incorporated. Next add in your vanilla extract.
While that is mixing, sift together your flour, baking powder, and salt.
Add in your flour mixture and your buttermilk one at a time, into your mixer, starting and ending with your flour.
Lastly add in your strawberry puree, making sure to scrape down the sides of your mixing bowl to make sure all the ingredients are well incorporated.
fill your cupcake liners 3/4 of the way full and bake for 25-30 minutes. Let cool completely before icing.
For the frosting, add in your room temperature cream cheese and powdered sugar to your mixer and slowly mix together. Then add in your pureed strawberries. Again, always make sure to scrape down the side of your bowl, and then give it another mix to incorporate all of your ingredients.
Microwave your jam and water for no more than 30 seconds. then brush on your sliced strawberry garnish and place on top of your icing after you have piped your cupcakes.

Strawberry Cupcakes have moist and fluffy crumbs; in these cupcakes, you will enjoy tiny pieces of fresh strawberries that adds more flavor and great texture. Making these cupcakes hardly takes time, and they are baked in a medium heat oven for even baking. With buttercream frosting, these cupcakes will taste similar to vanilla strawberry ice cream.
Full recipe:
FOR THE CUPCAKE BATTER
1 cup + 6 tablespoon all-purpose flour
3 medium eggs or 2 large eggs
1 cup of sugar
¼ cup soft unsalted butter
¼ cup oil
1 teaspoon vanilla extract
¼ cup strawberry puree (how to make it is in the notes below)
3 tablespoon strawberry Jell-O powder
1/2 cup milk
1 teaspoon baking powder
¼ teaspoon salt
FOR THE BUTTERCREAM FROSTING
1/2 cup unsalted and softened butter
2 cup sifted confectioners’ sugar
1/2 teaspoon vanilla
1 to 2 tablespoon cold water or milk
Pinch of salt
- All the ingredients must be at room temperature for the best results.
- Preheat oven to 325F/162C. Line a 12-cupcake pan with cupcake liners.
HOW TO MAKE BUTTERCREAM FROSTING
In a mixing bowl, add in butter and beat on high speed until fluffy for 3 minutes.
Add in confectioners’ sugar and beat to combine for 3 minutes.
Add in the vanilla and beat for few seconds until combined.
Add in water or milk to adjust the constancy and make it thick enough to pipe. Beat for 3 minutes on high speed.
