Super Moist Pear Cupcakes | No Egg No Milk No Butter Cake
Eggless Pear Cupcakes
Cupcake without egg / Cupcake without Milk / Cupcake without Butter.
These SIMPLE VEGAN PEAR CUPCAKES are super moist, loaded with pears and topped with crunchy coarse sugar.
These eggless, dairy free Pear Cupcake are perfect for breakfast, afternoon tea or anytime of the day.
Makes 12 cupcakes.
✅ Ingredients:
3 Medium Size Pears (350 g), sliced thinly
3/4 cup (150 g) Superfine Granulated Sugar
1/2 cup (120 ml) Water
1/4 cup (60 ml) Vegetable Oil
1 tsp (5 ml) Vanilla Extract
1 cup (140 g) All-Purpose Flour
2 tsp (8 g) Baking Powder
Coarse sugar for toppings
Bake at 350oF (180oC), rack middle position, 18-20 minutes, or until toothpick inserted in the middle of cake comes out clean.
* It is very important to PREHEAT the oven. Bake when oven reaches the right temperature.
* All oven are not the same. If toothpick inserted in middle of cake comes out clean, cake is done.
* Mix dry ingredients and wet ingredients until JUST combined and dry flour is no longer visible. Do not overmix the batter or the cake will be dense.

Simple awesome pear cake/ No Mixer/ Yummy soft cake
You are going to love this cake! Simple basic ingredients, but delicious result. You don't need a mixer, this cake is super easy to make. Soft, fluffy and sweet.

Ingredients:
2 Eggs
Sugar - 80 g
Milk - 100 ml (room temperature)
Sunflower oil - 70 ml
Vanilla extract - 1 tsp
Flour - 160 g
Baking powder - 10 g
1 Pear + 1 Tbsp sugar + 1/2 tsp cinnamon
Bake 355 F for 50-60 minutes

Pear cake that is so super soft and tasty and is one pear recipe, that I suggest you try! Pear can be a delicate flavour so this is a type of pear and almond cake, which has a nice balance of spices to compliment it. You could make this as a traditional pear cake, and pear muffins but I have chosen to make it this time for the photograph as a pear loaf cake.
How you top this pear cake recipe is up to you. You can leave it just as it is, however I am partial to icing sugar, toasted flaked almonds and a caramel drizzle. I have also had this with a chocolate drizzle too.
This recipe for pear cake, is also versatile. It goes nicely with a cup of tea, or with ice cream, cream or custard. It stays nice in a tin for a few days, which is probably because of the addition of almonds, which helps to keep moisture in cake and make it less dry.

Italian Apple and Pear Cake with Raisins
This apple and pear cake is a variation from the Italian Umbrian specialty. It is rich in fruit containing at least 80 percent fruit and is deliciously soft and moist.
The addition of delicate pears and soaked raisins brings this recipe to another level.
The rum is totally optional, but if you like the taste of rum in your desserts, please add it in, you will love this.
Cover and refrigerate once cooled down, and it’s best to serve it warm. Try and use good quality cooking pears and apples for a better result.
For the cake pan, the size I used is a 9inch - 23cm spring form.

This cake tastes like heaven! fresh pear, cream cheese, soft, crumbly...everything you wished for!

Ingredients for a 10-inch pan
Cake flour: 1.5 Cup/ 187 g
Corn starch: 1/4 Cup + 1.5 Tbsp
Baking powder: 1.5 tsp
Baking soda: 1/4 tsp
Eggs: 3 Large
Sugar: 3/4 Cup/ 150g
Oil: 2.5 Tbsp
Cream cheese: 1 Cup/ 220g ( or mascarpone)
Fresh pear: 2-3 large (firm, not so ripe. dice 2-3 pears, slice 1 for decorating)
salt and vanilla extract

Make sure all of your ingredients are at room temperature. Preheat your oven to 180C/ 365 F. Grease your baking pan. Beat eggs, sugar, and vanilla until it thickened. then add oil and cream cheese, mix until fully incorporated. sift all of the dry ingredients and add them to the wet ingredients in 2-3 batches. fold using a spatula and then fold in the diced pears. pour the batter into the pan, place sliced pears on top and bake for 30-40 minutes or until a skewer comes out clean, let cool, then serve.
