2 c Sifted cake flour 1 1/4 c Sugar 2 ts Baking powder 1/2 ts Salt 5 Eggs, separated 1/4 c Fresh squeezed grapefruit -juice 1/3 c Water 1/3 c Salad oil 1 tb Fresh grated grapefruit peel 1/4 ts Cream of tartar From: Arizona Cookbook Sift together dry ingredients. In small mixer bowl, combine egg yolks, grapefruit juice, water and oil. Add dry ingredients. Beat at low speed until blended. Then beat at medium speed for one min. *Stir* in grapefruit peel. Beat whites until frothy; add cream of tartar. Continue beating until whites are stiff, BUT NOT DRY. Carefully folk yolk mixture into whites until just blended. Pour into 9-inch layer cake pans lined with oiled waxed paper. Bake at 350 F for 25-30 minutes. Leave in pans 10 minutes. Turn out onto wire rack to cool. Frost.

Let's try Cooking Tree's Secret Grapefruit Cake!
This is my attempt at a Secret Grapefruit cake, please find the original creation on Cooking Tree's youtube channel.
In this recipe, I've adapted a few ingredients. I've used the same sponge cake from my sponge cake video, so check that out for the recipe and I've substituted the whipped cream with coconut cream. Coconut cream is a little less firm than whipped cream, but it's naturally sweet and makes the whole dessert lighter. You can still use the same amount of whipped cream if you prefer.
Ingredients:
1 Sponge cake (I'm baking this cake is a wider mould so it will be flatter than usual) 2-3 Grapefruit (use the pulp for the filling as well) 200ml Coconut Cream (or whipped cream) 1-2 tsp of Honey A few Mint leaves And some patience (especially when hollowing out that fruit!)
Bake the cake for 30-35 minutes at 170 degrees C.
