How To make Fresh Corn and Sausage Fritters
1 c All-purpose Flour, sifted
1 ts Baking Powder
1 ts Salt
1/8 ts Pepper
1/4 ts Paprika
1 c Sausage, cooked and crumbled
1 c Fresh Corn off the cob
2 Egg Yolks, beaten
2 tb Milk
2 Egg Whites, beaten stiff
Oil, for frying Sift flour, baking powder, and spices together in a mixing bowl. Add sausage, corn, egg yolks, and milk; mix until blended. Fold in stiffly beaten egg whites. Drop by heaping teaspoonfuls into oil heated to 360 - 365 degrees. Cook 3 to 5 minutes, turning to brown on all sides. Drain on

SWEETCORN & CHORIZO FRITTERS are one of my favorite snacks / sides.
The sweetcorn is sweet and cuts through the richness of that spicy chorizo sausage.
Personally i can enjoy my Sweetcorn & chorizo fritters as a snack while watching TV and having a glass of something tasty. Alternatively these make a lovely side to accompany a piece of grilled meat or fish.
My sweetcorn & Chorizo fritters never fail to please. Give them a try and let me know your thoughts in the comments below.
Ingredients:
Sweetcorn
Chorizo
Spring onion
Jamaican curry seasoning
Salt
Plain flour
Milk
Egg
Oil
Hot sauce (optional)

Corn Fritters with Michael's Home Cooking
Corn Fritters can be served as a side dish or a first course with smoked salmon or make them small for hors d'oeuvres. A wonderful summertime treat. See full recipe in description below.
Ingredients:
1 cup plain flour
1 teaspoon salt
3/4 cup cold fizzy beer or water
2 cups fresh corn kernels or (frozen corn kernels defrosted)
2 Tablespoons oil for frying
Toppings:
Smoked Salmon Slices
Sour Cream
jalapeño slices
whipped cream cheese
Mix your flour, salt and cold beer to make a batter.
Add your corn and stir.
Heat a non-stick pan with 2 Tbsp of oil or lard.
I use a 1/4 cup measure, but you don't have to.
Fry your patties 2 minutes per side.
Keep warm in the 200F oven until you are ready to serve.

CHEESEY SWEETCORN FRITTERS
Easy, simple and so delicious, my Cheesey Sweetcorn Fritters make the ultimate Sunday brunch. Served with a gooey poached egg, this little treat is a hit every single time. Make the fritters smaller and they make the perfect little party snack that can be served warm or at room temperature. Make these now! Recipe is below. Enjoy ❤
Makes 6 large fritters. You will need:
1/2 cup all purpose (plain) flour
1 teaspoon garlic powder
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/4 teaspoon chilli powder (or to taste)
Up to 50ml milk
1 egg
1 cup shredded cheese of your choice
1.5 tbspn fresh coriander, finely chopped
250g sweetcorn
1/2 red onion, finely chopped
1 tbspn light olive oil
1 tbspn butter
Eggs for poaching
1. Finely chop onion and coriander.
2. Prepare the batter by mixing up flour, garlic powder, salt, pepper, chilli powder and egg. Pour the milk in slowly until you reach a thick batter (you will need 40-50ml).
3. Add sweetcorn, coriander, onion and cheese to the batter and mix gently. Be careful not to overwork the batter. We want to keep the fritters tender.
4. Add oil and butter to a frying pan on medium heat. When the butter melts, take a 1/3 cup measure and scoop out some batter. Add to the frying pan, and push the batter down a little with the back of the cup so the top is flat.
5. Fry fritters for 3-4 minutes (until the underside becomes nice and golden) before flipping over and cooking on the other side for 3-4 minutes. Remove to a warm plate and blot excess oil from the cooked fritters with a kitchen towel.
6. To poach the egg, crack 1 egg in to a ramekin dish. Bring 1.2L of water to a boil in a small/medium saucepan. Now reduce the temperature so the water starts to simmer and gently drop the egg in to the water. Step back and leave the egg to cook for 3-4 minutes. Leave it to cook for longer if you want a solid yolk. Once cooked, remove the egg with a slotted spoon and drain fully on a kitchen towel before serving with the fritters.
