Fool-Proof Apple Pie- Easy as Pie!
Fool-Proof Apple Pie
If baking a pie gives you anxiety, try this method. You'll get great results.

Ingredients
Pastry
3/4 cup refined coconut oil or vegan butter
1 cup whole wheat pastry flour
1 cup all-purpose flour
2 teaspoons organic sugar
1 teaspoon salt
10-11 tablespoons ice water, approximately
Filling
4 pounds pie apples peeled and sliced
1/4 cup vegan butter
3/4 cup organic sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon vanilla
plain almond milk, Turbinado sugar for topping
Instructions
Melt the coconut oil in either the microwave or by placing the jar in a pot of hot water until the oil is pourable. Measure 3/4 cup, and pour into a metal cup or mini loaf pan to chill until solid, at least an hour or two.
In a large bowl, combine the flours, sugar and salt, and whisk to combine. Use a grater to shred the fat into the flour. (if using coconut oil, melt it, pour it into a cup to measure, then chill. When solid, run water over the cup to remove the oil, and shred the solid oil into the flour mixture)
Drizzle in the ice water while tossing the flour mixture with a fork. When it is all incorporated, press the dough together lightly and divide two portions, making one a little larger than the other. Press to make each half into a disk and place on a floured plate, cover and chill for an hour. If you refrigerate overnight, let the dough come to room temperature for at least an hour before rolling.
Prepare a 9-inch, deep pie pan, a 12- inch skillet, a rolling pin, and a baking sheet to place under the pie. If desired a cookie cutter to make shapes for the top crust. There will be extra, so line a sheet pan with parchment to bake the extras as a treat.
Peel and slice the apples. In a 12-inch steel or cast iron skillet over medium-high heat, melt the vegan butter and add the apples. Stir and turn to coat the apples with fat, then sprinkle with the sugar. Cook, turning, for about 8 minutes, until the apples are tender and caramelized. Sift the flour and cinnamon over the apples, turning and stirring to coat. Drizzle in the vanilla.
Cool the apples completely, to speed it up, spread on a platter or baking pan.
Preheat the oven to 400 F. Sprinkle the counter with flour, then place a dough round on the flour. Roll out the dough to a 12-inch round, then line the pie pan, fluting the edge. Roll out the second dough round, then cut the dough into small shapes (squares are fine, or use a leaf, tree, or other cutter to make decorative shapes.
Scrape the apples into the pie shell, and arrange the dough shapes on top. Brush with almond milk and sprinkle with Turbinado sugar. Place on the baking sheet and bake on the bottom rack, uncovered, for 40 minutes, until the top crust is browned and crisp.
To make pie crust crackers, place any extra cut outs of dough on the prepared sheet pan. Roll out the trims and cut into squares. Sprinkle with turbinaso or cinnamon sugar. Bake for 15 minutes on the top shelf.

OLD FASHIONED APPLE PIE WITH FOOL PROOF PIE CRUST / Holiday Meals Pt 4
Hello everyone! starting on the deserts, I am starting with the Apple Pie.... I teied so many ways to make this pie before I gave in and made it the way my grandmother did, and have stuck with it every since...
3 lbs of apples (about 9 cups) peeled, cored and sliced granny smith is best but a firm apple is good...
4 Tbsp butter... you can use margarine but butter is best
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp salt
place butter and apples in pan, turn heat to med low, add sugars and spices, let start to simmer.... stir partway through...
when they are somewhat tender, but not soft, mix 2 Tbsp lukewarm water with 1 Tbsp corn statch and slowly add to apples while stirring to thicken the juices... if you see you have a lot of liquid, use 3 Tbsp water to 2 Tbsp cornstarch...
once it is thick, turn off burner and let cool...
Fool Proof Pie Crust
you can half this for 1 crust..
2 & 2/3 Cups all purpose flour
1 & 1/2 tsp salt
2/3 cup vegetable shortening
10 to 12 Tbsp very cold water
8 to 9 inch pie pan
rolling pin....
add flour and salt together, cut in shortening till crumbly like course sand or cornmeal... add first 10 Tbsp cold water, mix until its blended, if more is needed ad Tbsp at a time....
divide into 2 balls, one slightly larger than the other, the larger one is for the bottom...
Flour your surface and rolling pin, put bottom crust out, flatten with hands, flip, and roll from center out, turn quarter turn, roll a few times repeat til about 1/8th inch thick... wrap over rolling pin, lay over the pie dish, push it into the dish, remove excess from edges, pierce bottom a few times with a fork, fill with apples, roll out top crust, same way, place over pie and apples, remove extra crusts, pinch edges, cut vent holes in top crust.... Bake at 375 for 45 to 55 minutes....

The Best Homemade Apple Pie Recipe From Scratch
There is nothing like a homemade apple pie recipe from scratch during the fall months and winter holidays. This one is double thick and topped off with ice cream and caramel.
This is a sponsored conversation written by me on behalf of Bob’s Red Mill. The opinions and text are all mine.
Ingredients for this recipe:
Apple Pie Crust:
• 2 ½ cups Bob’s Red Mill All-Purpose Flour
• 1 stick cold unsalted butter, cut up
• ½ cup cold rendered bacon fat
• pinch of sea salt
• 1 tablespoon sugar
• ¼ cup cold water
• 1 whisked egg
Apple Pie Filling:
• 3 pounds of 5 each peeled, cored and sliced Granny Smith and Fuji Apples
• Juice of 1 large lemon
• 6 tablespoons melted unsalted butter
• 1/3 cup brown sugar
• ½ cup sugar
• 1 tbsp ground cinnamon
• 2 tablespoons flour
• 2 tablespoons corn starch
Serves 10
Prep Time: 30 minutes
Cook Time: 1 hour
Procedures:
1. Preheat the oven to 400°.
2. Dough: Add the flour, butter, bacon fat, salt and sugar to a food processor and pulse on high speed while drizzling in the water until it becomes like a meal. Note: you may need a bit more water.
3. Divide the dough in half, wrap in plastic and chill for 20 minutes
4. Filling: Combine all of the ingredients together in a large bowl and mix thoroughly. Chill in the refrigerator until ready to use.
5. Remove the dough form the refrigerator and add to a clean surface dusted with flour and roll out each dough with a pin until they are each 1/8” thick.
6. Transfer 1 of the rolled-out doughs to a fluted 9” pie pan and form completely. Cut off and discard and excess.
7. Add the chilled apples to the pie pan and flatten out to level.
8. Add the other rolled out dough to the top and form it to the other pie dough pinching it on the outside edges. cut off and discard any excess
9. Brush the top of the pie with the whisk egg completely coating it. Optionally sprinkle on sugar.
10. Cut 4 slits in the center of the pie and bake at 400° for 30 minutes. Turn the heat down to 375° and bake for 30 minutes.
11. Cool completely to room temperature and serve with ice cream and caramel.
CHEF NOTES:
• My combination of choice are the ones on the opposite ends of the sweet and sour flavor spectrum, Grammy Smith and Fuji apples.
• If you just want to do the prep now and make the pie later, hold the sliced apples in pineapple juice to help keep them from turning brown.
• When making the crust, It’s important for the butter and bacon fat to keep cool so that the pie does not fall while in the oven.
• REHEATING OR SERVING APPLE PIE: Apple pie can be served cold, but if you are one of those who likes warm apple pie, simply heat up a slice in the microwave for :30 seconds. Serve the apple pie with whipped cream or ice cream and caramel sauce.
• STORING AND FREEZING APPLE PIE: Apple pie with hold in the refrigerator, covered for up to 7 days. Likewise, apple pie freezes well covered in plastic for up to 3 months. Completely thaw in the refrigerator for 1 day before slicing and serving.
