Banana Chocolate Chip Cookie Recipe - Le Gourmet TV Recipes

These Banana Chocolate Chip cookies are like your favourite Muffins... with a twist!
Ingredients
½ cup (125 mL) softened butter
½ cup (125 mL) brown sugar
½ cup (125 mL) granulated sugar
1 egg
1 tsp (5 mL) pure vanilla extract
1 cup (250 mL) all purpose flour
1 cup (250 mL) large flake oats
½ cup (125 mL) whole wheat flour
1 tsp (5 mL) baking soda
2 cups (500 mL) semi-sweet chocolate chips
2 bananas, sliced
Method:
Preheat oven to 350°F (180°C).
Line baking sheet with parchment paper.
Cream butter, sugar and brown sugar together in a stand mixer, or with a hand blender.
Add egg and vanilla and mix until blended.
In a separate bowl mix flours, oats, and baking soda.
On low speed, add the flour mixture and mix until incorporated.
Mix in chocolate chips. Add cut bananas and mix on low just until they are evenly distributed and some of the banana is mashed up.
Drop 2 tbsp (30mL) dough on prepared baking sheets, about 2 (5cm) apart.
Bake in preheated oven 20 minutes until the edges are lightly browned.
Cool cookies on baking sheet for 5 minutes, then transfer to a cooling rack.
Makes about 36 cookies - of course this varies depending on how large you make them.

Cream Cheese Chocolate Chip Cookie Recipe - Le Gourmet TV Recipes

Everyone loves chocolate chip cookies! Here I substitute some of the butter with cream cheese, making these light and chewy.
Makes 12 big cookies.
Ingredients:
½ cup (125 mL) butter, softened
¼ cup (60 mL) cream cheese, softened
¾ cup (175 mL) packed brown sugar
¼ cup (60 mL) granulated sugar
1 large egg
2 tsp (10 mL) pure vanilla extract
2½ cups (625 mL) all-purpose flour
2 tsp (10 mL) cornstarch
1 tsp (5 mL) baking soda
pinch salt, optional and to taste
1 cup (250 mL) semi-sweet chocolate chips
1 cup (250 mL) raisins - optional.
Method:
Preheat oven to 350ºF (180ºC)
In the bowl of a stand mixer, combine the butter, cream cheese, and sugars; beat on medium-high speed until well-creamed, light and fluffy.
Then beat in egg, and vanilla.
In another bowl mix the flour, cornstarch, baking soda, and optional salt until just combined.
Add the dry ingredients to the stand mixer slowly, in a couple of additions.
Fold in the raisins and chocolate chips by hand.
Chill in the fridge for a half hour.
Using a 2 scoop, form heaping mounds and flatten slightly with your hand before baking.
Bake for 8 to 10 minutes, or until edges have set and tops are just beginning to set.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a rack to cool completely.

Ingredients:
¾ Cup Vegan Butter [softened]
⅓ Cup Cane Sugar
⅔ Cup Brown Sugar
¼ Cup Almond Milk
1 tsp Vanilla Extract
1 ½ Cup All Purpose Flour
1 ¼ Cup Almond Meal / Flour
2 tsp Baking Powder
1 tsp Baking Soda
½ Cup Chopped Pecans
2 Cups Semi-Sweet [dairy-free] Chocolate Chips
Cooking Instructions:
Use a standing or hand mixer to cream together the following until light and fluffy:
¾ Cup Vegan Butter [softened]
⅓ Cup Cane Sugar
⅔ Cup Brown Sugar
– until light and fluffy
Add in:
¼ Cup Almond Milk
1 tsp Vanilla Extract
In a separate bowl combine:
1 ½ Cup AP Flour
1 ¼ Cup Almond Meal / Flour
2 tsp Baking Powder
1 tsp Baking Soda
– mix in to sugar + butter
Fold in:
½ Cup Chopped Pecans
2 Cups Semi-Sweet [dairy-free] Chocolate Chips
Chill prepared dough for 15 mins. Use a cookie scoop or spoon to form 2 inch balls and bake @ 325° F for approx. 12 minutes, rotating halfway through and enjoy!

CHOCOLATE CHIP COOKIES RECIPE
INGREDIENTS
1 cup brown sugar (firmly packed)
1/2 cup granulated sugar
13 tablespoons room temperature butter (cut into small squares) (this equals to 1 stick of butter plus 5 tablespoons of another stick)
2 large eggs
1 tablespoon vanilla extract
2 1/2 cups all purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoons of salt
2 cups chocolate chips (any kind you want)
BEFORE BAKING FREEZE THE PAN WITH THE DOUGH BALLS FOR 15 MINUTES, TAKE STRAIGHT FROM THE FREEZER TO THE OVEN TO BAKE
Bake at 300 F for 15-16 minutes or 16-18 minutes
