How to Make Flaky Buttermilk Biscuits (without Buttermilk)
Make a delicious New York style cheesecake!
Recipe from Girl vs Dough:
Ingredients:
6 tablespoons unsalted butter, frozen or refrigerated, plus more for greasing baking sheet
2 cups unbleached all-purpose flour (measured out with the scoop and sweep method)
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 cup cold buttermilk
Instructions:
Heat oven to 450°F. Generously grease bottom of a baking sheet with butter or line with parchment paper.
Grate cold butter into a small bowl, place bowl in freezer.
Whisk flour, baking powder, salt and baking soda until well combined. Add grated butter and, using a pastry blender or 2 knives, cut in butter until it’s the size of small peas. Pour in cold buttermilk (or milk/yogurt mixture) and stir mixture with a wooden spoon just until a dough forms (do not overmix).
Transfer dough to a lightly floured surface and knead.
Use a sharp knife to cut dough in half. Place one half on top of other half and press halves together. Repeat 3 times.
Roll dough into a rectangle about 1-inch thick. Cut dough into squares; transfer to prepared baking sheet. Place baking sheet in freezer 10 minutes to re-chill dough.
Transfer baking sheet directly from freezer to oven and bake biscuits 10 to 12 minutes until golden and fluffy. Serve immediately.

INGREDIENTS: 4 cups self-rising flour,
12 tablespoons cold butter (170 grams),
2 cups buttermilk or milk (Recipe may be halved for less or doubled for more).
Bake at 450 f. for 13-15 minutes.
To make self-rising flour: For every 1 cup of all-purpose flour, add 1 1/2 teaspoons baking powder and 1/4 teaspoon fine salt. Whisk together.
To make buttermilk from whole milk pour 2 tablespoons lemon juice or vinegar into a liquid measuring cup, and add enough whole milk or heavy cream to equal 2 cups. Stir well and let stand 5 minutes. When the milk curdles, it is ready to use.
