Mediterranean Orzo Recipe
Orzo may look like rice, but really, it's a tiny pasta. And this Mediterranean orzo recipe is the perfect pasta salad to enjoy as a vegetarian entree, or to serve with grilled chicken for the perfect well-balanced meal.

4 large peppers (any colour), halved and deseeded, leaving the stalks intact
1 courgette, diced
85g dried couscous
250ml boiling vegetable stock
1 tbsp dried basil
100g cherry tomatoes, quartered
2 x 160g cans tuna in brine or spring water, drained and flaked
Preheat your oven to 200˚C/fan 180˚C fan/gas 6.
Put the pepper halves on a baking tray, cut-side up and roast for 25 minutes. After 10 minutes add the diced courgette to the tray and roast for the remaining 15 minutes.
Meanwhile, put the couscous and basil in a bowl and cover with the stock. Stir well, cover and leave to stand for 10 mins.
Fluff up the couscous with a fork, season and stir in the cherry tomatoes, tuna and courgette. Spoon the couscous mixture into the pepper halves and bake for 10 minutes.
Serve hot or cold with salad.

6 x Slimming World chorizo style sausages, thawed (Slimming World food range available at Iceland
200g dried orzo pasta
2 tbsp balsamic vinegar
350g cherry tomatoes
fresh basil leaves
flat leaf parsley
salt and freshly ground black pepper
Preheat the oven to 220C/fan200C/Gas 7. Spray the base of a large non-stick roasting tin with cooking spray. Spread the red peppers and red onions over the base of the tin, season and roast for 10 - 15 minutes until beginning to soften.
Add the chorizo sausages. Return to the oven and roast for a further 15 minutes.
Meanwhile, drop the orzo into the boiling water, stir once and leave to cook for 10 minutes until just tender (al dente). Drain and tip into a large bowl and set to one side.
Remove sausages from the roasting tin. When cool enough to handle, remove and discard the skins and cut the sausages into small chunks.
Scoop one-third of the roasted red peppers into a food processor, add the balsamic vinegar, and blend until smooth. Season to taste with salt and pepper.
Stir the roasted red pepper dressing into the orzo and then fold in the roasted red peppers and onions, chorizo sausages, tomatoes, basil and flat leaf parsley. Adjust the seasoning to taste and serve straight away.

Tuna Stuffed Peppers

Ingredients
olive oil
2 bell peppers
3 (5-oz) cans tuna fish packed in oil
1 red onion, finely chopped
1 teaspoon celery seeds or 1 celery stick, finely chopped or grated
5 scallions, thinly sliced
1 tablespoon capers
shredded mozzarella or gouda cheese
For the Dressing:
1/2 cup mayonnaise
2 tablespoons finely chopped fresh parsley
1 tablespoons Dijon mustard
1 tablespoon fresh lemon juice
Instructions
Preheat the oven to 425 °F, 220 °C.
Slice the bell peppers in half lengthwise and remove the seeds.
Arrange the bell peppers in a baking pan.
Drizzle some olive oil on top and season with salt and pepper.
Roast them for 20 minutes or until tender.
Combine the tuna with the dressing and toss together. Add all of the remaining ingredients except the cheese and toss together. Taste and adjust the seasoning if needed.
Fill the roasted peppers with the tuna salad and top with cheese.
Place the tray back in the oven and turn the broiler on.
Broil until the cheese has melted and is golden. About 3-4 minutes.
