Karen Mintzias 3 c Milk 1 pn Salt 1/3 c Granulated sugar 1/2 c Cornflour (cornstarch) 1/4 c Cold water 1/2 c Slivered blanched almonds 1/4 ts Ground cardamom (or more) 1/4 ts Saffron threads (pounded) 1/4 c Finely chopped pistachios -- (blanched) Put all but 1/2 cup milk into a heavy pan and add salt and sugar. Put on to heat gently, stirring to dissove sugar. Blend cornflour into reserved milk with the 1/4 cup water and pour into warm milk, stirring constantly. Add almonds and keep stirring until mixture thickens and bubbles. Use a whisk if mixture becomes lumpy. Add cardamom to taste and the pounded saffron. Cook on low heat for 5 minutes, letting pudding simmer very gently. Stir occasionally. Pour into 6 or 8 individual sweet dishes, spreading evenly. Sprinkle pistachio nuts around edge of each dish. To serve firnee in the traditional manner, the pudding should be poured into two plates, decorated with pistachio nuts and cut into quarters to serve in wedges. PHIRNI
Ingredients
5 tbsps rice, soaked for 30-40 minutes, and drained 1 litre milk A generous pinch of saffron ¾ cup sugar ½ tsp green cardamom powder 10-15 pistachios, blanched, peeled and slivered
Method
1. Transfer the rice in a grinder jar, add ¼ cup water and grind to a coarse paste. 2. Bring milk to boil in a deep nonstick pan. Add the prepared rice paste, saffron strands and cook on medium heat for 10-12 minutes or till the rice is completely cooked. 3. Add sugar and cook on medium heat for 2-3 minutes or till it dissolves completely. 4. Add green cardamom powder and mix well. 5. Transfer the mixture in individual earthenware bowls, sprinkle blanched pistachios and allow to come down to room temperature. 6. Refrigerate for 2-3 hours. 7. Serve chilled.
Chef’s Tip: It is a good idea to grind green cardamom with a little sugar as otherwise the quantity of green cardamom may be too little to grind. You can store this in an airtight jar for use in sweet dishes and desserts.

Ingredients for Puri: All-purpose flour 3 cups Yogurt 3 tbsp Salt 1 tsp Ghee 1 tbsp Water as required
Ingredients for Rice Mixture: Soaked rice 1 cup Milk 1 cup
Ingredients for Firni: Milk 2 Liters Rice mixture Sugar 2 cups Butter 1 tsp Cardamom powder 1 tsp Almonds & Pistachios (Chopped) as required Silver paper as required
Directions for Puri Preparation: 1. In a bowl add flour, yogurt, salt, ghee and mix well. Add water and knead a soft and smooth dough. Let it rest for 10-15 minutes. 2. Take the dough, divide it into 8 equal parts. Take one part, make a dough ball, flatten it with greased hands. 3. Roll it out into flat circle and deep fry it until crispy and golden brown. Your Puri is ready. Set aside. Directions for Rice Mixture Preparation: 4. In a blender add rice, milk and blend into smooth paste. Set aside. Directions for Firni Preparation: 5. In a pot heat milk and bring it to boil. Add rice mixture and cook over medium low flame until thick in consistency. 6. Add sugar and cook until sugar dissolves. 7. Add cardamom powder and give it a good mix. Add butter and cook for 1-2 minutes. 8. Your Firni is ready. Garnish it with almonds, pistachios and silver paper and serve with Puri. Preparation time: 15 mins Cooking time: 30-40 mins Servings: 5-6
