Scandinavian Rosette Cookies A traditional homemade Christmas cookie recipe for Jul! ♥
It's not Christmas (Jul) without both making and eating the traditional Rosette cookies. YUM! These Scandinavian cookies are delicious, deep-fried, and melt in your mouth.
Some people like to sugar the bottoms and other people sugar the tops. If you flip it upside down, it looks a little fancier and sugar these that way. The sugar catches the sides and it gives the cookies a bit more contrast. If you sugar the top of the rosette cookies, it looks like a touch of snow. However, either way the rosettes will still taste great! Which way do you usually serve the rosettes with sugar on the top or bottom?
Scandinavian Rosette Cookies Recipe
♥ Ingredients ♥
•1 cup milk
•1 tsp sugar
•1/8 tsp salt
•1 tsp vanilla (or almond extract)
•2 eggs
•1 cup flour
•vegetable oil for frying
•sifted confectioners' sugar to sprinkle
A few flavoring ideas:
•Substitute lemon extract or vanilla sugaring
Kitchen Utensils
•rosette iron star- or flower-shaped
•measuring cups and spoons
•large mixing bowl
•whisk
•thermometer
Instruction:
1.Combine milk, eggs, sugar and salt vanilla extract; beat well. Add flour and beat until smooth.
2.Heat a rosette iron in deep, hot oil (375 degrees) for approx. 2 minutes.
3. Drain excess oil from iron. Dip in batter to 1/4 inch from the top of the iron, then dip iron into hot oil (approx. 375F degrees).
4.Fry rosette until golden, approx. 30 seconds. Lift out; tip upside down to drain. With fork, push rosette off iron onto a paper towel.
5.Reheat iron 1 minute; make next rosette.
When you are ready to serve these cookies, sprinkle the rosettes with confectionary sugar (optional cinnamon sugar or sugar) and jam on the side. You might want to use a sifter if you use confectionary sugar to avoid clumps of confectionery sugar plopping onto the cookies. Instead if you use a sifter, it will look more smoother. Also if you sprinkle the confectionary sugar too early, these cookies will get soggy. So you it is best to sprinkle the sugar just before serving

How To Make Homemade Finnish Spoon Cookies - Lusikkaleivat
Finnish Spoon Cookies are real simple and delicious Finnish cookies to make for the holidays! These spoon cookies or in Finnish Lusikkaleivat are rich, nutty flavor goes great with Cloudberry jam to strawberry preserves or any type of preserves that you enjoy! ????
♥ Ingredients ♥
1 cup of unsalted butter
2 cups of flour
3/4 cup of sugar
1 large egg yolk
1 tablespoon of vanilla extract
jam or preserves of your choice
powdered sugar
Bake for 15 minutes at 325 F degrees

Tastes of Finland - Runebergintorttu
For this weeks video, I wanted to celebrate #runeberginpäivä (Runeberg Day) by making Johan Ludvig Runeberg's favorite desert, the #runebergintorttu! It is such an easy, but at the same time tasty recipe! Here are the ingredients:
For the cake:
100 g butter
½ dl sugar
½ dl brown sugar
1 egg
1½ dl flour
¾ dl almond flour
½ dl gingerbread cookie crumbs
1 tsp baking powder
¼ tsp cardamom
¾ dl heavy cream
¼ dl raspberry jam (I used 4 berries)
Syrup:
2 tbsp hot water
1 tbsp sugar
2 tbsp rom or almond liqueur (I used 1 tbsp of almond extract, you can use less depending on how strong you want the taste/smell to be)
Decoration:
¼ dl raspberry jam (I used 4 berries)
1 dl powder sugar
2 tsp cold water (I used store bought icing, as I had it on hand)

HONEY SPICE COOKIES | MEDENJAKI Traditional Recipe ❤️
Episode 50: Medenjaki are a traditional Slovenian cookie; also known as Honey Spice Cookies. These delicious cookies come in many different shapes, however the heart-shaped ones are typically the most common, and are definitely my favourite. They are made around the holidays and given as gifts. Some of them are real pieces of art.
Many other European countries have similar Honey Spice Cookies and they are known as Pernik in the Czech and Slovak republics, Pierniczki in Poland, Medenki in Bulgaria, Piparkakut in Finland, Pffernneuse and Lebkuchen in Germany. Yum! Let’s get started...
⬇️⬇️⬇️ Recipe ⬇️⬇️⬇️
3 eggs
1 cup sugar
1/2 cup butter
600g flour
200g honey
2 tsp’s baking soda
1 tsp lemon zest
1 tsp cinnamon
1 tsp ginger
1/2 tsp ground cloves
1/2 tsp nutmeg
???????? Beat eggs. Gradually add in sugar.
???????? Add butter mix until you have a pale yellow mixture. Add honey mix until well combined. Add baking soda
???????? Gradually add flour
???????? Finally add spices and lemon zest
???????? Mix until you get a nice soft dough
???????? Chill dough for at least 1 hour or overnight
???????? Sprinkle flour and Roll out dough between to pieces of clear plastic wrap.
???????? Place cookie cutouts on a baking sheet lined with parchment/baking paper. Place in a 350 degree oven and bake for 7 minutes.
