How To make Fig Raisin Cake
1 c Chopped figs
1 c Raisins
1 c Boiling water
1/2 c Shortening
1 c Brown sugar
2 ts Baking powder
2 ts Cinnamon
1/4 ts Salt
2 Eggs, well beaten
2 c Flour
Pour boiling water over raisins and figs and allow to stand while preparing other ingredients. Cream shortening and sugar. Add eggs. Sift flour, measure, and sift with baking powder, cinnamon, and salt. Add alternately with fruit mixture to creamed sugar and shortening. Beat thoroughly. Pour into well-oiled loaf pan. Bake in moderate oven (375 F) about 40 minutes.

This loaf is a cake with lots of dried fruits (raisins, dried cranberries, dried cherries, dates, figs, prunes, and apricots) and nuts (walnuts, pecans, almonds, and/or hazelnuts) with just enough batter to hold it all together. What I also love about this cake is that it does not call for butter or even oil, instead, the ingredients are bound together with flour and beaten eggs.
