HOT & SOUR SOUP
Ingredients
2 tbsp Oil (तेल)
2-3 cloves Garlic – chopped (लहसुन)
1 inch Ginger – chopped (अदरक)
3-4 Mushroom – sliced (मशरूम)
½ medium Cabbage – chopped (पत्ता गोभी)
10-12 French Beans – cut in diamond shape (फ्रेंच बींस)
1 medium Carrot – chopped (गाजर)
1 Green Chilli – chopped (हरी मिर्च)
2-3 stalk Celery – chopped (सेलरी)
Water (पानी)
2 tbsp Coriander Stems – chopped (धनिया की डंठल)
2 tbsp Soya Sauce (सोया सॉस)
2 tsp Red Chilli Sauce (रेड चिली सॉस)
1 tbsp Vinegar (सिरका)
½ tsp Sugar (चीनी)
For Corn-starch Slurry
2 tbsp Corn-starch (कॉर्न स्टार्च)
1 tsp Black Pepper Powder (काली मिर्च पाउडर)
Water (पानी)
For Chilli Oil
2 Star Anise (चक्र फूल)
2 dry Red Chillies (सूखी लाल मिर्च)
½ cup Oil (तेल)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
For Garnish
Chopped Spring Onion (प्याज़ पत्ता)
½ tsp Chilli Oil (चिली ऑइल)
Fresh Coriander Leaves (धनिया पत्ता)
Process
In a pot add oil, garlic, ginger, mushroom and saute for 2 minutes.
Now add cabbage, carrot, french beans, green chillies and saute for a minute.
Add celery and water, bring it to a boil and add coriander stems mix once.
Now add soya sauce, chilli sauce, vinegar, sugar and mix everything properly, turn the heat to low and add corn-starch slurry, mix it properly.
Cook it until it’s semi thick (but not too thick).
Serving hot in a soup bowl and garnish with spring onion, chilli oil, coriander leaves.
For Chilli Oil
In a small pan add star anise, dry red chillies, oil and degi red chilli powder heat it properly for 3-4 minutes.( Do not burn the chilli).
Let it cool down properly and keep aside for further use.

- 1 pack/ 85g ramen noodles (i used maruchan)
- 2.5 tbsp soy sauce (i missed the additional 0.5 tbsp in the video subtitles)
- 1 tsp brown sugar or honey
- 1/4 cup water
- 1.5 tbsp minced garlic (about 4 to 5 cloves)
- 2 green onions
- 1 to 2 tbsp red chilli flakes (this was very spicy - you may adjust it!)
- sesame seeds or fried onions to garnish

How to make CHILI OIL ~ a fiery and addictive substance!
In our house, the mood drops when chili oil supplies run low. I have no Asian background and this is not an authentic oil, but it's a delicious oil, of which we consume a lot. In dipping sauce, over Asian dishes, rice, noodles, roasted veggies, meats, soups, eggs ......
In my Florida garden, sweet peppers can be a gamble. Hot peppers on the other hand, especially cayenne, never disappoint. And aside from making fermented hot sauce ( ), my huge home grown supply usually dwindles over the year, making chili oil.
Give it a try, it really is worth it. Don't like it hot? Gift little jars to your fire loving friends. :)
You'll need - roughly - there are no precise measures here:
1.5 - 2 cups neutral oil
1 cup dried peppers flakes or choice - hot, sweet or a combination thereof
1 onion, finely diced
6 garlic cloves - finely chopped or pressed
2 - 3 star anise
2 -3 cloves
2 - 3 bay leaves
teaspoon of crushed szechuan or black pepper corns
2 - 3 tablespoons soy sauce
1 - 2 tablespoons sesame oil (optional)
salt to taste
In a sauce pan heat oil to approximately 200F (or below) and add diced onions. Put aromatics (star anise, pepper corns, clove, bay leaves) in a muslin bag or tea strainer and submerge in the oil.
After onions have shriveled significantly, (anywhere from 30 - 40 mins) add garlic. Keep at or below 200F until onions are slightly brown and floating. Be patient, this may take a while.
Remove aromatics and turn up heat to 250F. Shut off heat and immediately incorporate pepper flakes.
Allow to cool for a while, then add soy sauce, salt to taste and sesame oil if desired.
Store in refrigerator or freeze in small freezer safe jars.
