How To make Fettuccine with Tomato Basil & Yogurt Sauce
1/4 c Basil Leaves, freshly
-chopped fine 1 tb Parsley, minced
1/2 c Scallions, thinly chopped
-(including the tender green -leaves) 1 c Tomatoes, coarsely chopped
-(2 large) 2 c Low-Fat Plain Yogurt
Salt White Pepper, freshly ground 1 lb Fettuccine cooked al dente
-according to package -directions Indian cuisine is one of John's favorites. This pasta sauce is basically a variation on the Indian raita, a cooling, soothing combination of cucumber, cilantro and yogurt. Do not substitute non-fat yogurt for low-fat: over the heat of the pasta, the former becomes too runny. Have all the ingredients 1 lb Fettuccine cooked al dente according to package directions In a large bowl combine the basil, parsley, scallions and tomatoes, and toss well to mix Spoon the yogurt over the herbs and vegetables and blend well. Taste and add salt and pepper if necessary. Dive the hot fettuccine among four warm bowls. Spoon the sauce over it and serve immediately. Spaghetti with Tomato and Yogurt Sauce | Turkish Mantı Inspired Pasta Recipe
Ingredients:
For the tomato sauce:
5 tomatoes, peeled and sliced thin
5-6 garlic cloves, minced and smashed
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes
1/3 cup olive oil
1 tbsp sugar
1 tbsp tomato paste
For the beef topping:
300g ground beef
1/2 tsp salt
1/4 tsp black pepper
For the yogurt sauce:
5 tbsp yogurt
2 garlic cloves, minced and smashed well in a mortar and pestle with 1/4 tsp salt
For the infused pepper oil:
4 tbsp olive oil
1 tbsp red pepper flakes
600g spaghetti
Directions:
Prepare the tomato sauce by combining everything in a saucepan, mixing well and cooking on low heat once it boils for about 30 minutes.
For the yogurt sauce, mix yogurt and smashed garlic along with the salt in a small bowl. Set aside.
For the meat topping, heat a skillet on high heat and sautee the beef until it turns brown and a little crispy. No need to use oil for this. Add the salt and pepper and mix.
For the infused oil, heat a small skillet and add olive oil and red pepper flakes. Fry the red pepper flakes until they start to smell peppery. Keep an eye on it as it will burn pretty fast. Turn off the heat before peppers start burning around the edge of the pan.
Cook spaghetti according to package instructions and drain. Put some spaghetti on a plate, top it with tomato sauce, sauteed beef and yogurt sauce. Drizzle infused oil over the plate. Enjoy!

2 tbsp olive oil
4-5 cloves garlic
A packet of pasta
1 onion
1 tsp dried thyme
1 tsp dried mixed Italian herbs
1 tsp black pepper
1/2 kg chicken thigh
200 grams of mushrooms
150 ml cream
Parsley to garnish
Salt to taste
Method:-
- In a saucepan heat Olive Oil and saute garlic, onion, thyme with italian herbs, black pepper and salt.
- Add the chicken and cook for 7 minutes.
- Then add mushrooms and cook until the mushrooms release liquids.
- Pour the cream in batches as required and stir.
- Now add coriander and mix well.
Delicious and Creamy Chicken and Mushroom Pasta is ready to serve!
