How To make Fettuccine with Goat Cheese and Peppers
8 Dried tomato halves
1 tb Olive oil
1 c Sliced scallions
2 Garlic cloves, minced
1 md Red bell pepper
1 md Yellow Bell pepper
1/4 c Chicken broth
1/4 c Slivered fresh basil
10 sm Calamata Olives
1 tb Capers, drained & rinsed
2 ts Dried oregano
4 1/2 oz Goat cheese, crumbled
Cut the bell pepper into thin slices and set aside. Pit and coarsely chop olives and set aside. Place tomatoes in shallow pan and cover with boiling water for 2 minutes. Drain, reserving 1/4 cup of the liquid. Thinly slice tomatoes and set aside. Heat oil in a large nonstick skillet; add scallions and garlic. Stir frequently while cooking for 2 minutes. Add peppers, and cook for 3 minutes or until just tender. Add chicken broth and cook until most of the liquid has evaporated. Reduce heat, then add tomatoes and the reserved liquid, basil, olives, capers and oregano. Simmer for 5 minutes. Put fettuccine in a large serving bowl; add goat cheese and toss until melted. Add pepper mixture and toss until mixed well. Weight Watcher program exchange values: 1 Fat, 1-1/2 Proteins, 2-1/2 Vegetables, 2 Breads, 3 optional calories. We have adjusted Tiktok's famous pasta recipe, using goat cheese instead of feta amd grapes instead of tomotoes:)

Ingredients:
250 grams Tortiglioni
200 grams Red Grapes
Fresh Fennel
Fresh Thyme
1 cup Goat Cheese
Salt
Red Pepper Flakes
Sauce:
2 Garlic Cloves (crushed)
2 Shallots
1 teaspoon Balsamic Vinegar
Salt
Olive oil
Steps:
Cook pasta al-dente.
Transfer grapes and fresh fennel to a baking dish.
Mix the sauce ingredients.
Add grapes, fennel and mix.
Add fresh thyme.
Bake in a preheated 225 degree oven for 15 minutes.
Remove thyme stems.
Add pasta and mix.
Add little bits of goat cheese.
Sprinkle with paprika and serve.

10 Minute Goats Cheese Angel Hair Pasta

INGREDIENTS
5oz/150g angel hair pasta (thin spaghetti)
2 garlic cloves, sliced
3 tbsp olive oil
3.5oz/100g goats cheese, crumbled
2 tbsp parsley, finely chopped
1/2 lemon
DIRECTIONS
1. Bring a large pot of salted water to boil.
2. Add pasta and cook for 2 minutes. Scoop out 1 mug of boiling water, set aside.
3. Heat oil in a fry pan over medium high heat. Add garlic and saute for 30 seconds.
4. Use tongs to transfer the pasta directly from the pot into the frypan.
5. Add 3/4 cup of reserved water and toss gently for 1 minute (this is called emulsification and it is an Italian secret for making simple luscious pastas!)
6. Remove from heat, add herbs, toss pasta, then add most of the goats cheese, toss gently.
7. Season to taste. Garnish with zest of lemon, reserved goats cheese and fresh parsley. Serve immediately!
