- 150ml water

1. In a large pan, heat the olive oil over medium heat
2. Add the eggplant, zucchini, bell peppers, and onion to the pan. Cook until the vegetables are tender, about 10 minutes.
3. Add the garlic and continue cooking for another minute.
4. Stir in the diced tomatoes and season with salt and pepper.
5. Simmer for 10 minutes, or until the flavors have combined and the sauce has thickened slightly.
6. Serve hot, garnished with fresh basil leaves, if desired.
