Old Fashioned Fruitcake| Christmas| Restless Chipotle
The best fruitcake ever! It's made from a recipe that's over 60 years old and is absolutely delicious! Pecans, cherries, dates, and pineapple are held together with just a whisper of batter.

2 loaves
Ingredients
1 pound pecans
1 pound dates, pitted and chopped
½ pound candied cherries, (red and geen)
½ pound candied pineapple, (red and green or yellow)
¾ cup sugar
¾ cup flour
½ teaspoon baking powder
½ teaspoon kosher salt
3 large eggs
1 teaspoon vanilla extract
Instructions
Preheat oven to 250° degrees (that is not a typo-TWO HUNDRED AND FIFTY degrees)
Place a pan ⅓ filled with boiling water in the oven to create steam. Put it on the rack under the rack where the fruitcake pans will got.
Fill the pan with hot water as needed during baking.
Spray two 9-inch loaf pans with cooking spray and line with wax paper or parchment paper.
Spray wax paper with cooking spray.
Chop dates and nuts.
Add them to a large bowl.
Sift dry ingredients over fruit and nuts and mix in with your hands.
Beat eggs until light, add vanilla and pour over fruit, mixing well. (you will probably need to mix with your hands - it's messy.)
Spoon fruit cake batter into prepared pans, pressing down gently to remove large air bubbles and spaces.
Place the filled loaf pans onto the rack above the pan with hot water.
Bake at 250 for 1 hour and 45 minutes.
Let cool.

Better Than Grandma’s Fruitcake
1 1/2 sticks butter, room temperature
1 1/4 cups light brown sugar
5 eggs, slightly beaten
1/3 cup applesauce
1 1/2 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon each of cloves, mace, cinnamon, and allspice
2 teaspoons vanilla extract
2 teaspoons orange extract
1 1/2 cups dates, chopped
1 1/2 cups dark raisins
1 cup candied cherries, chopped
1 cup dried pineapple, chopped
2 cups walnut pieces
2 cups pecan pieces
Preheat oven to 275°. Place a pan of hot water on bottom rack of oven.
Spray well a Bundt pan or 10” tube pan.
Cream butter and sugar; add eggs and applesauce.
Add sifted flour, baking powder, baking soda, salt, and spices.
Add both extracts.
Fold in fruit and nuts.
Bake approximately two hours and fifteen minutes until toothpick comes out clean.
Allow cake to cool on the counter fifteen minutes then remove from pan. Cool thoroughly, wrap, then store in refrigerator.
NOTE: Cake slices beautifully after it’s refrigerated.

This Classic, Simple FRUITCAKE Recipe Will CHANGE Your Mind About Fruitcake! Easy and Customizable!
This simple fruit cake recipe will change your mind about fruitcake! This recipe comes from the Woman’s Home Companion Cook Book which was copyrighted around 1944. You can use whatever dried fruit and nuts you want. You can use whatever liquor you want or you can leave it out all together. I couldn’t find citron ANYTHING so I left that out. I used the candied orange and lemon peel that we made in this video here: I made the 5lb version but you can divide the batter up into smaller amounts. Townsends did a great video about preserved strawberries: this is what I used. I prepared them about a week in advance of making the fruit cake.
Dark Fruit Cake (Wedding Cake)
Ingredients For 5 lbs of Cake For 15 lbs of Cake
Seeded Raisins 1 cup 1lb
Seedless Raisins 1 cup 1lb
Currants 1 cup 1lb
Candied Lemon Peel,chopped 3 ounces 8 ounces
Candied Orange Peel, chopped 3 ounces 8 ounces
Candied Cherries, sliced 8 ounces 1 1/2lbs
Candied Pineapple, sliced 8 ounces 1 1/2lbs
Citron, thinly sliced 8 ounces 1 1/2lbs
Pecans, coarsely chopped 5 ounces 1lb
Almonds, blanched, chopped 5 ounces 1lb
Flour for dredging 1/3 cup 1 cup
Flour for mixing 1 1/3 cups 4 cups
Soda ¼ TSP 1 TSP
Cinnamon 1 TSP 3 TSP
Allspice 1 TSP 3 TSP
Mace ¼ TSP ¾ TSP
Nutmeg, grated ¼ TSP ¾ TSP
Butter 2/3 cups 1lb
Light Brown Sugar 2/3 cup (packed) 1lb
Eggs, Separated 4 12
Molasses 1/3 cup 1 cup
Fruit Juice 3 TBSP ½ cup
Brandy or Cider 3 TBSP ½ cup
Preserved Strawberries 2/3 cup 1 pint
Dredge fruit and nuts with flour. Sift mixing flour, measure, add soda and spices and sift again.
Cream butter and add sugar gradually. Cream until light and fluffy. Add beaten egg yolks, mix well. Add molasses and fruit juice, brandy or cider, and strawberries. Mix well. Add fruit and nuts. Fold in dry ingredients about 1/3 at a time. Beat egg whites until stiff but not dry and fold into batter.
Turn into well-greased pans which have been lined with parchment paper that has been cut to fit smoothly. Fill pans about ¾ full. Cover with more parchment paper to extend about 1 inch over the edge of the pan and tie with kitchen twine.
Steam according to size:
1lb cake, steam for 2 hours
2lb cake, steam for 2 ½ hours
3lb cake, steam for 3 hours
5lb cake, steam for 3 ½ hours
10lb cake, steam for 4 ½ hours
Remove from steamer and uncover. Brush tops with brown sugar glaze and decorate with fruit and nuts.
Bake in a 250F oven about 1 ½ hours for cakes weighing 5 lbs or less. Bake for about 2 to 2 ½ hours for cakes weighing more than 5 lbs.
Brush brown sugar glaze over cakes and on sides while cake is still warm. Wrap in waxed paper and store in an airtight container. Alternatively, you could wrap the cake in a clean cloth which has been saturated with brandy (or whatever liquor you want). About twice a month, add more brandy to cloth. Store in an airtight container.
Brown Sugar Glaze
Brown sugar, packed ½ cup
Corn syrup, light, 1/3 cup
Water 1/3 cup
Lemon Juice, 2 TBSP
Combine brown sugar, corn syrup, and water in pan. Place over low heat and bring to a slow boil. Boil 2 minutes. Add lemon juice and spread while still warm.

This fruit cake is a simpler and easier version of making a traditional fruit cake or old-fashioned fruit cake.
In this Easy fruit cake recipe we don't need any soaking of dry fruits; but still the raisins,candied peels,cranberries and other dried fruits will be juicy and plumpy as they are boiled in liquid and then added into the cake batter.
This video will show you one of the least messy ways that we can make a fruit cake.We don't need any stand mixer/hand mixer to make this cake.A sauce pan and a wooden spoon are the only major tools to make this fruit cake.
In two steps we can make this super moist fruit cake batter.
Step1:
Boil the dry fruits in a sauce pan with butter sugar and water.
Step2:
Add all the rest of ingredients into this saucepan after its cooled.
Step3:
Bake the fruit cake @ 320 F for 75-90 minutes.
The cake is so soft and moist and the aroma of spices makes this fruit cake, more flavorful.
