They are very affordable and delicious, spiced with lots of ginger, garlic and a wonderful smoky Berbere Spice Blend.

RECIPE for ETHIOPIAN PLANT-BASED TRIO:
QUICK INJERA BREAD
Recipe inspired by
Ingredients:
1 1/2 cups flour
1/2 cup teff flour
2 teaspoons sodium bicarbonate
2 cups water
3 tablespoons vinegar (I used apple cider vinegar)
salt to taste
Instructions:
Mix all ingredients together and let sit for 10 mins. Add 1 ladle of batter to a crêpe-pan and bake covered with a lid for about 3 minutes. Keep the temperature medium-low. You don’t want to burn the bottom side. It is not necessary to flip the bread.
2. MISIR WAT (Ethiopian Spiced Lentils)
Ingredients:
1 cup red lentils
2 medium sized tomatoes, cubed
1 medium onion, finely diced
2 teaspoons ginger paste
2 tablespoons tomato paste
1 teaspoon garlic paste
1 tablespoon Berbere Spice Ahimsa “Namaste Africa”
1 cup water (or as needed)
salt, pepper
olive oil
If you make your own Berbere Spice Mix:
1 teaspoon sweet paprika
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground clove
1/4 teaspoon ground fenugreek
Pinch of cayenne pepper
Instructions:
Heat olive oil over medium-high heat. Sauté onion until lightly colored.
Add garlic, ginger and spices until fragrant. Add tomato paste, tomatoes, lentils and water and let simmer about 20 mins until lentils are soft and liquid has absorbed.
3. GOMEN WAT (Ethiopian Collard Greens)
Ingredients:
1 bunch of collard greens
1 medium onion, finely diced
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
salt & pepper
olive oil
Instructions:
Take the stems of the collard greens and roughly chop them. Sauté the onion, add ginger, garlic and your spices. Add collard greens and sauté until wilted. Season with salt and pepper.
4. TIKEL GOMEN (Ethiopian Cabbage Stew)
Ingredients:
1/2 head white cabbage, thinly sliced or shredded
4 carrots, sliced
4 potatoes, cubed
1/4 cup olive oil
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon ginger paste
1 teaspoon garlic paste
salt & pepper
1 cup water (optional)
Instructions:
Heat olive oil over medium high heat. Sauté onion until lightly colored. Add ginger and garlic paste. Roast for about 1 minute. Add carrots and roast for another few minutes. Add spices, potatoes, and cabbage. Optionally add water and let steam for about 30 minutes until all your veggies are soft.

You will need roughly = parts of lean lamb cut in cubes, tomatoes and onions - Chopped ginger - salt - oil - fresh chilli - In a pan with a little oil add the lamb & ginger & on a low heat cook for 10 mins - Now the meat is on its way to being done add the onions and salt, cook for a further 10 mins - Add the chopped tomatoes cover and cook for 10 mins. Maybe you will need to add a little water when we come back. - We do not need to add water as our tomatoes are juicy enough. Add the chilli and on a simmer cook for 20 - 30 mins or until the meat is tender. - Depending on the cut of lamb you have used you may need to cook longer, in fact you cannot really over cook this dish. LAY HO MA! There's not much more comforting than a bowl of warm, delicious, fluffy rice. This recipe is incredibly flavourful and simple to make. Join me in this episode and learn how to cook a delightful bowl of garlic turmeric rice. Let's begin
Ingredients:
6-7 pieces of garlic
1/2 onion
80g broccolini
1/4 red bell pepper
3 tbsp avocado oil
pinch crushed pepper flakes
1/4 cup corn
1 1/2 cups basmati rice (cooked)
1 tsp turmeric
pinch of salt
Directions:
1. Finely chop the garlic, onion, broccolini, and red bell pepper
2. Heat up a nonstick pan to medium low heat. Add 2 tbsp of avocado oil
3. Cook the garlic and onions for 6-7min. Add the crushed pepper flakes
4. Set the garlic and onions aside. Heat the pan to medium heat and add 1 tbsp of avocado oil
5. Sauté the broccolini and red bell pepper for a couple of minutes. Add the corn, basmati rice, turmeric, salt, and the cooked garlic and onions. Sauté for 2-3min
6. Plate and sprinkle with some more crushed pepper flakes
