How To make Election Cake
1 c Currants, soaked overnight
-in a tightly closed jar in 1/2 c -Brandy
1 tb Sugar
3/4 c Scalded Milk
1 Yeast Cake
1/4 c Warm Water
1 c Flour, unsifted
1/2 c Butter
1 c Sugar
2 1/4 c Flour, sifted
1/2 ts Salt
3/4 t Mace
1 ts Cinnamon
1 Egg, whole
1 ts Lemon Rind, grated
2 ts Lemon Juice
LEMON OR ORANGE GLAZE:
RECIPE TO FOLLOW:
To the scalded milk add 1 Tbsp. sugar; cool. Dissolve the crumbled yeast in warm water, and add to milk. Add the unsifted flour, and beat until well blended. Let rise in warm place until it has doubled in bulk, about 1 hour. Cream butter and sugar until very light. Drain brandy from currants. Place sifted flour, salt, mace, and cinnamon in sifter. Add egg to creamed mixture and beat until light. Stir in lemon rind and juice. Add yeast mixture and beat thoroughly. Add currants, retaining the brandy for later. Sift in flour, add brandy, beat well. Place in tube pan or 9x5 loaf pan that has been well greased. Cover with a cloth and place in warm place away from draft. Allow to rise until doubled in bulk. This mixture rises very slowly and may take 4 to 6 hours to double in bulk. Bake at 375?F for about 45 minutes. Cool in pan briefly. Turn out on rack, allow to cool further. Delicious and Traditional Election Day cake Recipe
2 cups chopped dried fruit
1/3 cup spiced rum or brandy
2 TBSP orange extract
1 cup milk
1 TBSP yeast
1 stick butter
3/4 cup brown sugar
3 3/4 cups flour
1 tsp salt
2 tsp cinnamon
1/2 tsp allspice
melted butter
granulated sugar

Gold Medal Flour Cook Book (1910)
4 lbs. or 12 4/5 cups Gold Medal Flour
3 lbs. or 6 cups sugar
2 lbs. or 4 cups butter
Whites of 6 eggs
1 1/2 tsp salt
4 nutmeg
1 qt. sweet milk
1 1/2 lbs. raisins
1/2 pint home-made yeast
Juice and rind of 2 lemons
Cream the butter and sugar, then divide; with one-half mix all the flour, milk and yeast; when light add the other half of butter and sugar, eggs, raisins and flavoring. Beat thoroughly; put in pans and let rise till light and bake with great care.
Antique Election Cake Recipe Made Paleo
1/2 cup coconut flour
1 1/2 cups almond flour
1/4 cup arrowroot starch
1 cup coconut sugar
1/2 cup coconut oil
1 egg white or gelatin egg
Salt
1 tsp nutmeg
1/2 cup almond milk
1/2 tsp baking soda
1/2 cup raisins
Juice and rind of 1/2 a lemon
Cream coconut oil and sugar. Mix with rest of ingredients. Bake 350 for 45 min.

18th Century Bribery Election Cake ~~ It’s a thing!! ????????????
Election Cake
Mix 1 c warm water
1 pkg yeast
1T sugar
1 T coconut oil or vegetable
2 1/2c flour
Mix. Cover. Rise overnight. Sleep.
Morning:
In separate bowl cream:
2 sticks soft butter
2 c dark brown sugar
4 eggs, well beaten
1 T lemon rind
Mix well
In superstar bowl:
1 1/2 c flour
1 1/2t baking soda
1/2 t cloves
1/2 t mace
1/2t nutmeg
(Or I simply used 1 1/2 t pumpkin pie spice)
1/2t salt
Whisk together and add to butter mixture.
Add:
1 c raisins
1 c dried cranberries
Soaked in 1 c buttermilk (original recipe used 1 c whiskey ????) you could use apple juice also.
Stir batter into yeast mixture and stir very well.
Prepare 3 loaf pans. Spray. I sprinkled with cinnamon and sugar????. Tastes so good. Fill.
Cover and rise one hour.
Bake 350 for almost an hour. Keep eye on it. Do not overbake.
