How To make Eggplant Macaroni Bake
6 oz Elbow macaroni
2 tb Grated Parmesan cheese
2 tb Minced scallions
1 tb + 1 t. olive oil
1/4 ts Black pepper
2 c Sliced eggplant, 1/2" thick
2 md Sliced tomatoes, 1/2" thick
1/2 ts Basil
3 oz Shredded cheddar cheese
1/4 ts Paprika
1. In a large pot of boiling water, cook macaroni 8-10 minutes, just until
tender. Drain, and reserve 1/4 cup of the cooking liquid. Place cooking liquid in a large bowl, stir in Parmesan cheese, scal- lions, oil, and pepper. Add macaroni, toss well to mix. Set aside. 2. Spray large nonstick skillet with spray. Add eggplant; cook 2-3 minutes
on each side, until tender. 3. Preheat oven to 400F. Spray an 8" square pan with nonstick spray. Layer
half the tomatoes and eggplant in pan; sprinkle with basil. Spread macaroni on top; layer remaining tomato and eggplant over macaroni. Sprinkle with cheddar cheese and paprika. Bake 20-25 min., until bubbly. Each serving provides: 1 fat, 1 protein, 2 vegetables, 2 breads, 15 calories. Per serving: 324 calories Source: Weight Watchers Magazine, June 1993

Most places will use mozzarella or a dollop of ricotta for this recipe instead of Ricotta Salata that's traditionally found on the similar alla Norma recipe. Eggplant Parmigiana (Parmigiana di Melanzane)
Eggplant Parmigiana is the vegetarian version of Chicken Parmigiana, and is a low-carb dream come true. Called Parmigiana di Melanzane in Italian and known as Eggplant Parmesan in the US, it's essentially a Lasagna made with thin slices of eggplant instead of pasta, layered with tomato sauce, fresh basil and plenty of molten cheese.
To say this is outrageously good would be the understatement of the year. This is epic vegetarian comfort food, at its best!

How to make a tasty baked pasta with eggplant: in this video I will show you how to cook an easy-to-make vegetarian eggplant (aubergine) pasta bake recipe with the addition of mozzarella and provolone cheese.
Disclaimer: this is NOT a quick dish to make, it will take some time... so get yourself ready for a couple of hours of enjoyable cooking! As usual, I will describe every step of the cooking procedure in the video: from the grilling of the eggplant to the layering of the pasta.
If you want to keep this dish a vegetarian one, then you don't have to do anything else - if you are a meat eater, then perhaps you want to add some nice pieces of ham in the middle of the tray, just for extra taste.

Baked pasta with eggplant - RECIPE
Prep Time: 15 mins
Cook Time: 90 mins
Complexity: Easy
Ingredients (4 people):
- 400 gr pasta
- 1 eggplant
- 700 gr Tomato Passata
- 60 gr mozzarella
- 80 gr provolone cheese
- garlic
- salt and pepper
Procedure:
1. Cut the eggplant in slices and grill them. When done, keep them aside;
2. Heat some extra-virgin olive oil in a large, shallow casserole. Add garlic and some parsley stems;
3. Add the Tomato Passata and let everything cook at low heat for 15-20 minutes;
4. Create some strips off the grilled eggplant slices and add to the sauce;
5. Keep cooking the sauce for another 10 minutes at low heat. Add salt as required;
6. Cook pasta in abundant salty boiling water. I used Elicoidali (any small shape pasta would do) - cook the pasta up to only around 60-70% of full cooking time;
7. Mix the pasta and the sauce in a large bowl;
8. Layer the pasta in an oven tray. After the first layer add some mozzarella slices and pecorino cheese slices. Keep layering!
9. When you reach the last layer, sprinkle a mix of grated Pecorino and Parmesan cheese on top - that will form a super-tasty crust!
10. Cook in a pre-heated oven (190C) for about 30 minutes;
11. ENJOY!
ITALIAN FOOD BOSS SPECIAL TIP: You really gotta get that pasta out of the boiling water when it's still quite hard! Don't worry, it will keep cooking in the oven.
