Turkish Eggplant Kebab Recipe | Easy Baked Eggplant Shishkebab By Aysenur Altan
Learn how to make kebab with eggplant! Eggplant kebab is one the famous Turkish dishes along with popular other kinds of kebabs. It is mostly grilled in Turkish restaurants but you can easily make it at home in the oven. This way is sure more healthy and easy to make.
Ingredients for the Eggplant Kebab:
1 kg of medium size and (if you can find)
same diameter eggplants , try to choose ones that little softer inside when touched
1 teaspoon of salt to take out the juices
For the kebab:
500gr. ground beef or lamb or half of each (better if it has some fat in it which will give more flavor)
2 medium size onion
1 TSP each (IN THE VİDEO I MİSTAKELY said 1 TBSP PLEASE FORGET THAT:) of black pepper, salt and ground red pepper
3 tbsp water
5-6 medium size tomatoes, green peppers, 2 small onions
For the tomato sauce: 2 tbsp tomato paste, 3 tbsp olive oil, about 2 + 1/2 cups boiled water (the sauce water should cover more than half way up the kebabs and eggplants)

This is one my favorite dishes and is truly addictive as it's easy and full flavors. Tirit, (adopted from Persian language, word tarid / thareed referring to dishes made with meat, stock and stale breads, are made throughout Anatolia and there are tens of different versions in each region of Turkiye.
Traditionally, tirit dishes are made with stale bread to avoid waste and make the most out of the left over ingredients in the kitchen.
This version from the city of Konya (Konya Patlıcan Tiridi) is made with fried eggplants and mildly spiced minced meat cooked with tomatoes, are served with garlic yogurt and toasted (stale) bread, which soaks up all the flavors.

Ingredients:
• 2 – 3 eggplants, 600 g
• Ground beef or lamb, 250 g
• 1 medium tomato
• 1 medium onion
• Pita / pide bread (traditionally, stale bread (pide / tandir) is used to avoid waste)
• 2 tbsp olive oil
• 2 tbsp tomato paste
• 1 tsp salt
• 1 tsp paprika powder
• ½ tsp black pepper
• 250 g plain yogurt
• 1 clove of garlic
• Frying oil
• 1 tbsp butter (optional to toast the breads)
• Chopped parsley to garnish (optional)
Instructions:
1. Wash and peel the eggplants in stripes and cut into large cubes
2. Soak the egpplant cubes in salted water for 15 mins, drain and pat dry
Alternatively, rub the cubes with coarse salt, let sit in a strainer for 15 mins, drain the excess liquid.
3. Fry the eggplants in a separate pan with vegetable oil until nicely browned
Alternatively, lightly oil the eggplants and roast in the oven for 15 – 20 mins
4. Transfer the fried / roasted eggplants onto a paper towel, drain to get rid of the excess oil
5. Finely chop the onion and dice the tomato
6. Heat up 2 tbsp olive oil in a large pan and add the ground meat. Stir and cook until nicely browned.
7. Remove the ground meat from the pan and set aside, leave as much as possible oil in the pan.
8. Add and cook the onions for 2 - 3 mins until softened
9. Add the tomato paste and stir and cook for 2 minutes until fragrant.
10. Add the diced tomato, cook until the tomatoes are soft and reduced to half.
11. Add the minced beef, together with 1 tsp salt, 1 tsp paprika powder and 1/2 tsp black pepper
12. Stir and cook the minced beef for 2 mins to evenly cook and combine
13. Cover the lid and cook for another 15 mins with the lid covered
14. Add the eggplants into the pan with the minced beef mixture, gently stir to combine and turn off the heat
15. Whisk the yogurt in a bowl and grate or grind 1 clove of garlic and mix with the yogurt
16. Cut the bread in small cubes and toast with 1 tbsp butter until golden brown (optional).
(traditionally, stale bread (pide / tandir bread) is used to avoid waste)
17. Layer the bread cubes on the bottom of the serving plate
18. Layer on top the garlic yogurt and spread over the bread cubes
19. Finally layer the eggplants and ground beef mixture on top
20. Garnish with chopped parsley and serve warm

Moussaka
Ingredients
- 2 red onions, diced
- 3 cloves garlic, diced
- 1kg lamb mince
- 3 tbsp olive oil
- salt and pepper to taste
- 1 cinnamon stick
- 2 bay leaves
- 1 tsp dried thyme
- 2 tbsp tomato paste
- 200ml red wine
- 700g jar of tomato passata
- 120g butter
- 120g flour
- 1L milk
- 150g grated Kefalotyri cheese (or parmesan if you can't find it)
- 1/4 nutmeg ground
- 2 large (or 3 medium) eggplant, sliced 1.5cm thick
- 5 medium-sized potatoes, sliced 1cm thick
Method
1. Start by seasoning the eggplant on both sides and drizzle with oil, then place them into a 180c oven for 25-30 minutes.
2. Next repeat with the potato and cook in the oven for 30-35 minutes or until cooked through.
3. Heat 3 tablespoons of olive oil in a large pot, then add the onions and a pinch of salt. Cook for 5 minutes before adding the garlic and cooking for 3-4 minutes.
4. Add to ground lamb mince and stir to break it up.
5. Cook the lamb mince for 6-7 minutes, stirring occasionally, and season with salt and pepper, bay leaf and cinnamon stick.
6. Add the red wine and tomato purée to the pot, stir well and once the wine has reduced, add the tomato passata.
7. Stir the tomato well, put the lid on and cook for 25-30 minutes on low, stirring occasionally.
8. For the white sauce, melt the butter in a medium pot over medium heat.
9. Once the butter has melted, whisk in the flour and cook for 2-3 minutes.
10. Pour in the milk and whisk until smooth. Once it starts to simmer, add the nutmeg and 2/3 of the grated cheese.
11. Stir this one last time until smooth.
12. To assemble the Moussaka, start by laying all the potato on the bottom, followed by the potato and then the red meat sauce and finally the white cheese sauce.
13. Sprinkle the rest of the cheese over the top and bake at 180°c for 40-45 minutes or until golden brown.

One Pot Lentil and Rice Recipe Inspired by Lebanese Mujadara ???????? Easy Plant-Based Recipes for Vegans
This recipe is inspired by Lebanese Mujadara and a combination of a few Mediterranean recipes (however, I have added Ginger because of its various health benefits, especially with digestion).
➡️ When you come back, you’ll have one of the crucial ingredients for a vegan rice recipe that is rich in flavor owing to the inspiration of an old-world favorite dish from the Middle East. Next, you can prepare the sweet and fragrant basmati rice, herbs, and spices!

▶️ RECIPE INGREDIENTS: (4 to 5 servings)
1 Cup / 200g BROWN LENTILS ONLY (washed and soaked in water for at least 4 to 6 hours (or overnight) until the lentils are very tender)
1 Cup /200g BASMATI Rice (thoroughly washed/soaked in water for 20 minutes)
3 Cup / 400g Chopped Onions - 2 medium size onions (430g with skin on)
1 Tablespoon ginger (very finely chopped)
1 Tablespoon garlic (very finely chopped)
3/4 Cup Strained Tomatoes / Passata / Tomato Puree
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1/4 to 1/2 Teaspoon Cayenne Pepper OR to taste (Optional)
Salt to taste (I added total 1+1/2 teaspoon of pink Himalayan salt)
2 Cups / 475ml Water
Garnish:
3/4 cup / 70g Parsley (finely chopped)
Freshly Ground Black Pepper to taste (I added 1/2 teaspoon)
Lemon or Lime juice to taste (I added 1+1/2 tablespoon lemon juice, I like it a bit sour)
Extra Virgin Olive oil (I added 2 tablespoons of organic cold-pressed olive oil)
▶️ METHOD:
✅???? USE A WIDER POT TO COOK THIS DISH (this will cook the rice more evenly and prevent it from getting mushy).
Wash and soak the brown lentils for at least 4 to 6 hours (or overnight) until the lentils are very tender. Thoroughly wash the rice until the water runs clear to get rid of any impurities/gunk (it's an important step so do not skip it). Soak for 20 minutes.
Heat a pan, add cooking oil, onion and 1/2 tsp salt. Adding salt to the onions will help release water and help it cook faster. Fry the onion on medium-high heat until it starts to caramelize. Once caramelized, reduce the heat to medium to medium-low heat (depending on the heat of your stove) and add finely chopped ginger and garlic. Fry until onions are nicely browned (be careful not to burn the onion).
Once the onion is caramelized, add the strained tomatoes/passata and spices. Give it a good mix. Add the soaked lentil and rice, along with salt and water. Cover and bring to a vigorous boil. Once it starts boiling, reduce the heat to low and cook for about 25 to 30 minutes.
Uncover and check to see if the rice and lentils are cooked (it should be cooked by now, if its not, cover and cook it for a bit longer). Now continue to cook UNCOVER for another 1 to 2 minutes on low heat to get rid of any excess moisture. Turn off the heat.
Add parsley, lemon juice, black pepper and drizzle of olive oil. Mix very gently, the rice is delicate at this point and we don't want to break it. Cover and let it sit for 5 minutes before serving (for flavors to blend).
Stores well in the fridge for 3 to 4 days. It's perfect for meal planning.
▶️ IMPORTANT TIPS:
???? Soak lentils until they are very tender. The soaking time depends on the quality of the lentils. Some brown lentils are drier than the others and therefore need more soaking time
???? How to know if the lentils are soaked well? You should be able to cut a lentil piece with your nails, effortlessly. If not, then soak longer
???? It's really important that the lentils soak well. The reason is to match the cooking time of lentils with the rice

Chickpeas, or garbanzo, beans have been grown and eaten in the Middle East for thousands of years.

▶️ RECIPE INGREDIENTS: (4 to 5 servings)
3 to 4 tablespoons Light Olive Oil for fry the veggies
400g /4 Cups approx. Eggplant - chopped
200g / 1 +1/2 Cup approx. Onion - thinly sliced/chopped
200g / 1 +1/2 Cup approx. Red bell pepper - chopped
200g / 1 +1/2 Cup approx. Green pepper - chopped
1 Tablespoon Garlic - finely chopped - (4 to 5 garlic cloves)
2 Cups / 1 Can (540ml can) Cooked Chickpeas
1/4 Ground cumin
1/4 Paprika
1/4 Cayenne pepper
Salt to taste (I have added total 1+1/2 teaspoon of pink Himalayan salt)
125ml / 1/2 cup Strained Tomatoes / Passata / Tomato Puree
200g/ 1+1/4 Cup approx. Fresh Tomato - chopped
125 ml / 1/2 Cup water
Garnish:
Ground Black Pepper (I have added 1/2 teaspoon black pepper)
1/2 cup / 20g Parsley - finely chopped
Drizzle of Olive oil (I have added 2 tablespoon of organic cold pressed olive oil)
▶️ METHOD:
FRYING THE EGGPLANT: To a heated pan add 2 tablespoons of cooking oil, chopped eggplant, 1/2 teaspoon of salt and fry on medium high to high heat until it is nicely browned. We are trying to get rid of the moisture from the eggplant and roasting it at the same time so DO NOT cook on low heat otherwise the eggplant will turn mushy. Once roasted, remove from the pan and set aside.
To the same pan add 1 to 2 tablespoons of oil, onion, red and green bell pepper and fry on medium-high heat until the onion starts to caramelize/softens and the peppers are nicely fried and slightly charred.
Now add the cooked/drained chickpeas, chopped garlic, ground cumin, paprika, cayenne pepper, salt and fry the chickpeas on medium-high heat for another 3 minutes or until the chickpeas are nicely fried.
At any point if you notice the pan is getting over heated reduce the heat.
Add the strained tomatoes, roasted eggplant, fresh chopped tomatoes, water and mix well. Bring it to a boil and cover and cook on medium low heat for about 20 minutes. Once cooked uncover and turn the heat to medium high. Cook for another 2 minutes or until the stew slightly thickens. Turn off the stove and garnish with freshly ground black pepper, parsley and olive oil.
Mix well and serve it with your favourite kind of flatbread and a green side salad.
▶️ IMPORTANT TIPS:
- DO NOT fry the eggplant on low heat otherwise the eggplant will turn mushy
- Make sure to fry the onion, red and green bell pepper in enough oil (I added 2 tablespoons of oil) until it starts to caramelize/softens and the peppers are nicely fried and slightly charred. This process adds a of lot flavour to the dish so take the time and fry it well
- Every stove is different so regulate the heat as required. If at any point you notice the pan is getting over heated reduce the heat
