How To make Eggplant, Lamb and Rice Casserole
2 lb Eggplants
1/2 lb Ground Lamb
lean
2 ts Olive Oil
2 ea Onions :
chopped
1 ea Red Bell Pepper seeded
And chopped 2 Cloves Garlic :
minced
14 1/2 oz Tomatoes, Canned
Undrained 2 ts Dried Oregano
1/2 ts Dried Thyme
1/2 ts Ground Cinnamon
1/4 ts Ground Cloves
1 c White Rice
14 1/2 oz Beef Broth :
defatted
2 oz Feta Cheese crumbled
Salt And Pepper :
to taste
Preheat oven to 450 degrees. Cut eggplants in half lengthwise. Place eggplant halves, cut-side down, in a roasting pan. Add water to a depth of 1/2 inch. Bake until tender, 20to 25 minutes; set aside. Reduce oven temperature to 400 degrees. While the eggplant is roasting, heat a large nonstick skillet over medium-high heat. Add ground lamb and saute, breaking up the meat with a wooden spoon, until browned, 3-5 minutes. Transfer to a colander and drain off fat. Set aside. In a Dutch ove, heat oil over medium heat. Add onions and cook until golden, about 5 minutes. Add red peppers and garlic and cook for 2 minutes longer. Stir in tomatoes and their juice, oregano, thyme, cinnamon and cloves. Simmer, breaking up the tom atoes with a wooden spoon, until the mixture has thickened slightly, 3-5 minutes. Scoop out eggplant flesh and chop coarsely. Stir rice, beef broth, chopped eggplant and the reserved lamb into the tomato mixture; bring to a simmer. Cover the pan and place it in the oven. Bake for 30 to 35 minutes, or until the rice is tender and th e liquid has been absorbed. Season with salt and pepper. Dot with feta and serve. Recipe By : The Denver Post Magazine/January 2, 1994

The best stew you will ever taste. This slow braising method fuses the ingredients together leaving you with an incredible tender, moist and rich flavoured meat.
Lamb is becoming a more fashionable red meat as it’s a healthier meat as it contains many vitamins, minerals and B12. Try and buy grass fed and it will also have the heart healthy omega 3 fatty acids.
But enough about health, this recipe is about taste. If you like those rich casserole stews, then look further, this is a complete meal cooked in one pot. The slow cooking process tenderises the meat and develops the flavour.
A complete meal because it has carrots, peas, potatoes all built in. The best part is that it will taste even better the next day, so make a big pot. It’s also easy to freeze for ready made meals when you’re short on time. I usually place them in glass storage containers and then microwave them or add a splash of water in a saucepan and reheat on very low heat.
For the wine, make sure you buy a full bodied wine, like a shiraz or cabernet sauvignon. Do not go crazy on the price but don’t skimp either, the quality of the wine will affect the sauce. It is a red wine sauce after all.
As an option, I like to serve it with a crusty toasted bread, rubbed with a clove of garlic for that extra flavour. This is of course optional. Sprinkle some freshy chopped parsley or you can even use the celery leaves to add colour and freshness before serving.

Onion 1 big finely chopped
Tomato 1 big pureed
Garlic 6-8 cloves chopped
Red chilli powder 1 1/2 tsp
Coriander powder 1 1/2 tsp
All spice powder 1 tsp
Turmeric powder 1/4 tsp
Cumin powder 1/2 tsp
Black pepper powder 1/2 tsp
Green coriander and chilli chopped
Salt as per taste
Oil 2 tbsp
Mint leaves 3-4
Ingredients for Patties
Meat Minced 250g
Red chilli powder 1/2 tsp
Cumin powder 1/2 tsp
All Spice Powder 1/2 tsp
Onion Chopped 1/4
Green Chilli and Coriander Chopped
Black pepper Powder 1/2 tsp
Ginger and garlic paste 1 tbsp
Salt as per taste
Assembling Ingredients
Eggplant 1 big Sliced
Potato 1 Sliced
Salt to taste
Oil 1 tbsp
Rice Ingredients
Onion Chopped 1 medium sized
Whole spices
Ginger and garlic paste 1 tbsp
Turmeric powder 1/2 tsp
All spice powder 1 tsp
Cumin powder 1/2 tsp
Lemon slice 1
Oil 3 tbsp
Rice 1 1/2 Cup Presoaked for 1 hour
Chicken Stock 650 ml
Water 350 ml

This recipe is called bademjan poloبادمجان پلو. This beautiful and aromatic meal is popular in Qazvinقزوین, one of Iranian cities. It is a combination of rice with minced meat, fried eggplants onions, garlic and loads of aromatic spices. It is rich, colourful, flavourful, tender and tasty dish.
Ingredients:
300 g Basmati rice
200 g ground meat (beef or lamb)
2 large eggplants, peeled, cut into small pieces
1 large onion, chopped into small pieces
2 cloves of garlic, peeled, thinly sliced
4 medium tomatoes, chopped into cubes
3 tbsp tomato paste
1 tsp ground cinnamon
1 tsp dried rose petal
1 tsp ground turmeric
1 tsp ground cumin
½ tsp ground nutmeg
½ tsp ground ginger
½ tsp ground cardamom
⅓ tsp ground clove
Salt- pepper to taste
