How To make Egg Shortbread
3/4 c Butter
6 tb White or light brown sugar
1 Egg
2 c Flour
1/8 ts Salt
Beat the butter well with the sugar, add the egg, and incorporate well. Fold the flour and salt through by hand. Pat out evenly on the cookie sheet, cover with foil, and distribute dried beans or rice over the surface. Bake in an oven preheated to 400 for about 10 minutes, reduce heat to 350, cooking for 10 more minutes. Remove the foil and beans, reduce heat to 325, and bake about 10 more minutes, until well done but not particularly brown. Let cool slightly and cut into 40 thin rectangles. SHORTBREAD COOKIES WITH JAM | Egg white Cookies | Easy Butter Cookies | Piped Cookies
Today I’m going to show you how to make Easy Shortbread Cookies with Jam. If you have leftover egg whites then this is a great way to use them.
Crunchy and buttery cookies filled with fruit jam make yummy snacks at any time of the day or a great gift for any holiday.

SHORTBREAD COOKIES WITH JAM Printable Recipe –
INGREDIENTS:
200g softened butter
100g powdered sugar
60g egg whites
280-300g flour
½ tsp baking powder
1 tsp vanilla extract
⅛ tsp salt
100-150g jam
NOTES:
* Preheat the oven to 350°F (180°C) before starting to make the cookie dough.
* Make sure that the butter is at room temperature. It has to be spreadable but still holds its shape.
* The egg whites also have to be at room temperature.
* Use a kitchen scale to follow the recipe.
* To pipe the cookies use any large piping tip. It can be an open or closed star piping tip, or even a plane round piping tip.
* Use any jam you have on hand, preferably seedless and not thick. You can also make a variety of fruit flavors.
* Baking time will change depending on your oven and the level of cookie color you prefer.
* Store the cookies in an airtight container or resealable bag at room temperature for up to 3 days. You can also freeze them for up to 3 months.

3 Ingredient Melt In Your Mouth Shortbread Cookies | Recipe
Ingredients
8 TBSP unsalted Butter
1 cap full Pure Vanilla Extract
1/4 - 1/2 Tsp salt (depends on your taste, I prefer 1/4 Tsp)
1/4 c granulated sugar
1 C. Flour
Bake on 325f until the bottoms are lightly brown
*Tip* Allow melted butter to cool for 5 minutes before adding the rest of the ingredients for better cookie texture
