NO BAKE CHOCOLATE CHEESECAKE RECIPE
Ingredients
25 Oreo Cookies
½ Stick | ¼ Cup | 55g Butter
9oz | 250g Dark Chocolate
1⅔ Cup | 400ml Heavy Cream
9oz | 250g Cream Cheese
½ Cup Powdered Sugar | Icing Sugar
1 Cup | 250ml Cream
9oz | 250g Dark Chocolate
Instructions
Place the Oreo cookies into a food processor and run the machine until there is only crumbs.
Melt the butter in the microwave for about 30 seconds or in a saucepan.
Pour the cookie crumbs and melted butter into a medium sized mixing bowl and mix together with a wooden spoon until well combined.
Pour the mixture into an 8inch or 20cm lined cake tin and press down with the back of a spoon until firmly packed and even.
Place the cheesecake base into the fridge to set.
Cut the chocolate into small pieces with a serrated knife and place into a heat proof bowl.
Melt the chocolate over a saucepan of simmering water, stirring occasionally until completely smooth and leave to cool.
Pour the heavy cream into a medium sized mixing bowl and beat with a whisk until softly whipped, set to the side.
In a large mixing bowl combine the cream cheese and sugar and beat with a whisk until well combined.
Pour the softly whipped cream and cooled melted chocolate into the bowl with the cream cheese and sugar.
Mix the ingredients together with a whisk for a few minutes until well incorporated.
Pour the cheesecake filling into the cake tin and use an offset spatula to smooth out the top.
Bang the cake tin on the counter a few times to remove any air bubbles and place into the fridge to firm.
To make the topping for the chocolate cheesecake cut the second lot of chocolate into small pieces and place in a heat proof bowl.
Pour the cream into a small saucepan and heat over medium heat until it just starts to boil.
Remove the cream from the heat and pour over the chocolate and leave to stand for about 5 minutes.
Mix the chocolate and cream together until completely smooth and pour over the cheesecake.
Refrigerate or freeze the cheesecake for at least 4-6 hours or overnight before slicing and serving.

White Chocolate Cheese Cake
Serves 6-7
Recipe in English:
Ingredients:
Prepare Crust:
-Digestive biscuits 220g
-Bareek cheeni (Caster sugar) 2 tbs
-Makhan (Butter) salted & melted 5 tbs
Prepare Cheese cake:
-Candyland White Chocolate 200g
-Cream 200ml (room temperature)
-Cream cheese 700g (room temperature)
-Bareek cheeni (Caster sugar) ½ Cup
-Maida (All-purpose flour) 3 & ½ tbs
-Vanilla essence 2 tsp
-Dahi (Yogurt) whisked ¼ Cup (room temperature)
-Anday (Eggs) 3 (room temperature)
-Anday ki zardi (Egg yolk) 1 (room temperature)
-Water hot as required
Prepare Cream Frosting:
-Cream chilled 200ml
-Vanilla essence ½ tsp
-Icing sugar 100g
-Candyland dark chocolate 125g
Directions:
Prepare Crust:
-In a chopper,add digestive biscuits & chop well.
-Add caster sugar,melted butter & chop until crumbled & set aside.
-Use the flat side of the 10”inch spring form baking pan,grease with butter & lined with butter paper.
-Add crust mixture and press firmly down into the base to create an even layer (thickness should be 1 cm) and chill in the refrigerator for 1 hour to set firmly.
Prepare Cheese cake:
-Coarsely chop white chocolate and add in a bowl.
-Add cream & microwave for 2 minutes then mix until well combined & set aside.
-In a bowl,add cream cheese & beat well (approx. 2-3 minutes).
-Add caster sugar & beat well.
-Now add melted white chocolate & cream mixture & beat well for 1-2 minutes.
-Add all-purpose flour,vanilla essence,yogurt & beat again.
-Add eggs,one by one & beat after each addition.
-Add egg yolk,beat again & set aside (Don’t over beat the mixture after adding eggs).
-For water bath,on large baking tary,place oven proof dish and place baking pan.
-Now pour prepared cheese cake batter in baking pan and filled large baking tray with hot water.
-Bake in preheated oven at 170 C for 55-60 minutes (on lower grill) and check the cake by tapping the pan with wooden spoon,if wobbling continues than bake for few more minutes. Let the baking pan rest in oven for 1 hour.
-Take out from the oven & refrigerate for 8 hours.
Prepare Cream Frosting:
-In a bowl,add cream & beat well.
-Add vanilla essence,gradually add icing sugar & beat until soft peaks form & refrigerate until use.
-Use a knife to loosen the chilled cheese cake from the rim of the spring form pan.
-Add prepared cream frosting on cheesecake & use an offset spatula to smooth down the top then remove the rim.
-Coarsely chop dark chocolate,add in a bowl and microwave for 40-60 seconds (medium powder) and mix well then transfer melted chocolate to piping bag.
-Add melted chocolate in silicon mold and freezer for 5 minutes.
-Decorate cheesecake with melted dark chocolate & chocolate buttons then cut into desired slices & serve!
Tips:
-All ingredients must be at room temperature (except for frosting).
-Don’t over beat the batter after adding eggs.
-Baking should be on lower grill.
-To check cheese cake baking,tab baking pan with wooden spoon,if wobbling continues then bake for few more minutes.
-After baking,one hour resting of cake is must in oven.
-Before decoration,cake should be refrigerated for at least 8 hours.
Philly Double Chocolate Cheesecake
Prep Time: 20 min | Total Time: 5 hr 35 min | Makes: 32 servings
What You Need!
24 OREO Cookies, crushed (about 2 cups)
1/4 cup (1/2 stick) butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
2 Tbsp. flour
1 tsp. vanilla
1 pkg. (8 squares) BAKER'S Semi-Sweet Chocolate, melted, slightly cooled
4 eggs
1/2 cup blueberries
Make It!
HEAT oven to 325ºF.
MIX crumbs and butter; press onto bottom of 13x9-inch foil-lined pan. Bake 10 min.
BEAT cream cheese, sugar, flour and vanilla with mixer until well blended. Add chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
BAKE 45 min. or until center is almost set. Cool completely. Refrigerate 4 hours. Use foil to lift cheesecake from pan. Top with berries.

Ingredients
Crust
1½ cups (210 g) chocolate cookie crumbs
¼ cup (60 g) unsalted butter, melted
Cheesecake
12 oz (360 g) semisweet couverture/baking chocolate, chopped
24 oz (750 g) cream cheese, room temperature
¾ cup (150 g) granulated sugar (divided)
½ cup (100 g) packed light brown sugar
3 Tbsp (22 g) cocoa powder
½ tsp fine salt
¾ cup (175 mL) full-fat sour cream
1 tsp vanilla extract
4 large eggs, room temperature
2 large egg yolks, room temperature
Ganache Topping
¾ cup (175 mL) whipping cream
3 Tbsp (45 g) unsalted butter
6 oz (180 g) semisweet couverture/baking chocolate, chopped
Directions
1. Preheat the oven to 325°F (160°C). Grease the bottom and sides of a 9-inch (23 cm) springform pan and wrap the outside of the pan in foil.
2. For the crust, stir the chocolate cookie crumbs and melted butter together until evenly blended. Press into the bottom of the prepared pan. Bake for 10 minutes to set it (there will be no visible change once baked), then cool while preparing the filling.
3. For the cheesecake, melt the chocolate by placing it in a metal bowl set over a pot filled with 1 inch (2.5 cm) of barely simmering water, stirring gently with a spatula until smooth. Set aside while preparing the cheesecake batter.
4. Using electric beaters or a stand mixer fitted with the paddle attachment, beat the cream cheese at medium-high speed until smooth, scraping down the bowl once or twice. Add half of the granulated sugar, then beat at medium-high and scrape down the bowl again. Add the remaining granulated sugar and the brown sugar and beat again, once again scraping down the bowl. Beat in the cocoa powder and salt at low speed, then beat in the sour cream and vanilla, again scraping the bowl to ensure the batter is smooth (it will be quite fluid now).
5. Add the eggs and egg yolks one at a time, while mixing at medium-low speed, until fully combined. Pour in the melted chocolate (still warm is OK) and beat at medium-low until smooth.
6. Place the springform pan in a large roasting pan and pour the batter into the pan. Fill the roasting pan with boiling water so that the water comes to at least halfway up the sides of the pan (this is easiest done at the oven). Bake the cheesecake for about 65 minutes until it loses its surface shine and jiggles in the centre.
7. Transfer the pan from the water bath to a cooling rack. After letting the cake cool for 10 minutes, run a palette knife around the inside edge of the springform pan (this helps prevent cracks from developing while the cake cools). Let the cheesecake cool completely (cooling can take up to 2 hours) before chilling, uncovered, overnight.
8. Release the sides of the springform pan and transfer the chilled cheesecake to a platter or cake stand.
9. For the ganache, heat the cream and butter in a saucepan over medium-high heat until it just begins to bubble. Pour this mixture over the chopped chocolate, let it sit for a minute and then gently stir with a spatula until the chocolate has melted and the ganache is smooth.
10. Pour the ganache over the centre of the cheesecake. Using an offset spatula, quickly but gently spread the ganache to the edges of the cake, coaxing it just over the top edge to drip down the sides a little (the chilled cheesecake will set the ganache relatively quickly). Chill the cheesecake, uncovered, until ready to serve. Once cut, cover the cut surface directly with parchment or plastic wrap and it will keep in the fridge for up to 4 days.

You know you have a serious chocolate-lover’s dessert when it calls for over a pound of chocolate!
The smooth, satiny ganache top to this cheesecake leaves you open to decorate it as you wish. Write a greeting in melted white chocolate, add a few berries or edible flowers, or even add more chocolate by using a vegetable peeler to grate curls from a block of chocolate.

No Bake Chocolate Cheesecake | 6 ingredients! | The Recipe Rebel

Ingredients
▢½ cup melted butter
▢300 grams Oreo cookies with filling (1 regular pack, 25 cookies)
▢200 grams good quality chocolate (or about 1 ¼ cups chocolate chips)
▢1 ½ cups heavy whipping cream divided, cold
▢750 grams cream cheese (24 oz or 3 packages), room temperature
▢255 grams powdered sugar (2 cups)
Instructions
In a food processor, process the butter and cookies until cookies are fine crumbs and the mixture starts to stick together.
Place a piece of parchment paper in between the bottom and the rim of a 9″ springform pan (optional — just helps to remove the cheesecake later).
Press the crust mixture firmly into the bottom of the pan and about ½ up the sides. Set aside.
In a medium bowl, combine chocolate and ½ cup cream. Microwave in 20-30 second intervals on high, stirring well each time, until melted and smooth. Set aside to cool slightly.
In a large bowl, beat the cream cheese with an electric mixer until smooth. Add the powdered sugar and melted chocolate, and beat on low speed until combined.
In a separate bowl, whip the cream until stiff peaks form. Fold into the cream cheese mixture with a spatula or an electric mixer on low.
Spread into the prepared crust, cover, and refrigerate for at least 6 hours or overnight. Slice and serve with whipped cream or as desired.
