How To make Easy Sweet and Sour Chicken
1 lb Chicken breast,
-boneless 1 t Ginger, chopped
1 Egg white
1/2 t Salt
2 t Cornstarch
1/2 c Vegetable oil
-(peanut oil is best, -but sunflower is -good, too) 1 Green (bell) pepper
6 Carrots
12 oz Pineapple chunks, canned
-(drained, but reserve -about 1/2 cup of -the juice) SAUCE 2 t Sherry
2 t Light soy sauce
1 T Vinegar
1 t Sugar
1 T Cornstarch
1 t Salt
Cut up the chicken into bite-sized chunks. Combine ginger, egg white, about 1/2 teaspoons each salt and cornstarch, and about 1 teaspoon oil. Add the chicken chunks and stir until the chicken is well-coated. Wash green pepper. Discard seeds and stem. Cut into strips about 1 x 1/4 inches. Peel carrots. If they are thick, cut in half lengthwise. Cut diagonally into pieces about 1 inch long. Cook the carrots in boiling water for 3-5 minutes, depending how crunchy you like your carrots. Drain pineapple chunks, saving about 1/2 cup of the juice. Prepare the sweet and sour sauce by mixing sherry, soy sauce, vinegar, sugar, reserved pineapple juice, about 1 tablespoon cornstarch, and about 1 teaspoon salt. Stir well and set aside. Heat about 3 tablespoon of oil very hot in a wok or deep cast iron pan. Peanut oil is best since it has a high smoking point. Stir-fry the chicken by putting a small batch (e.g., 5 pieces) of the cubed chicken in the wok and stirring continuously until golden brown. Remove to a dish. Repeat until all the chicken has been cooked, adding small amounts of oil as it gets used up. Heat about 1 tablespoon oil in an empty wok. Stir fry the parboiled carrots and the green pepper for 30 seconds. Add the chicken and the pineapple chunks to the vegetables in the wok. Stir 1 minute or until well mixed and reheated. Add sweet and sour sauce to wok. Stir until thickened. Serve with rice. I serve this recipe to company all the time and am amazed at how many people don't realize that you can cook Chinese food at home. It is always a big hit. The recipe works equally well with lean pork, tofu cubes, or soy beans instead of the chicken. Ingredients:
Crispy Fried Chicken:
• 5 tbsp vegetable oil
• 2 eggs lightly beaten
• 3 tbsp cornflour/cornstarch
• 10 tbsp plain/all-purpose flour
• ½ tsp salt
• ½ tsp pepper
• ½ tsp garlic salt
• 2 tsp paprika
• 3 chicken breast fillets chopped into bite-size chunks
Sweet and Sour Sauce:
• 1 tbsp vegetable oil
• 1 large onion peeled and chopped into large chunks
• 1 red pepper chopped into 1 inch pieces
• 1 green pepper chopped into 1 inch pieces

Sweet & Sour Chicken Recipe
Ingredients for chicken marinade
250g or 1/4 kg chicken
1 clove garlic, minced or garlic powder
1 calamansi or a tsp of lemon juice
1/4 tsp salt
1/8 tsp groud black pepper
1/4 tsp seasoning powder
For chicken breading ( batter )
1 Egg ( small )
1/4 cup cornstarch
1 tbsp flour
For sweet and sour sauce:
1/4 cup pineapple juice
1/4 cup tomato ketchup
1/4 cup white or brown sugar
1 tbsp soy sauce
2 tbsp vinegar
1/8 tsp salt
1 tbsp diluted cornstarch ( add later )
Mix all the ingredients in a bowl
Other Ingredients
1/2 - 1 cup green and red bell pepper
1 medium sized onion
1/2 cup pineapple chunks ( canned ) or fresh
Procedure
* Marinate chicken with salt, pepper, seasoning powder, garlic
and calamansi or lemon juice for 30 mins.. put in the fridge
* In a bowl beat egg then add cornstarch and flour, mix well
* Pour mixture into the marinated chicken
* Heat enough oil in a pan for deep frying
* Deep fry chicken pieces in batches until golden brown takes for about 5 mins..
* Continue to cook the remaining chicken pieces
* Once all chicken are deep fried, wait for a few minutes for second frying
oil should be very hot before putting the chicken..
* Fry the chicken twice to make it more crispy for about 2-3 mins..then set aside
* Prepare the sweet and sour sauce, mix all the ingredients in a bowl, mix until sugar completely dissolves
* In the same pan, use only a tbsp of oil...
* Put onion and bell peppers, stir fry for 1 minute on high heat
* Add pineapple chunks stir fry for another 2-3 minutes until crisp and tender, do not overcook✅
* Transfer to a plate, set it aside
* Pour the prepared sweet and sour sauce, wait until it boils
* Once the sauce boil, set the heat to low heat and let it boil for 3-4 mins
* Add a pinch of salt or 1/8 tsp salt
* Add cornstarch slurry to thicken the sauce..stir while adding ( add slowly )
* Sauce consistency should not be too thin or else the chicken will absorbed
the sauce and the chicken lose it’s crispness
* Add the chicken pieces and stir fried vegetables back
* Stir to coat everything with the sauce about a minute..
