2 Eggs
1 c Pumpkin,canned
3/4 c Brown sugar
1 ts Cinnamon,ground
1/2 ts Salt
1/4 ts Cloves,ground
1/4 ts Ginger,ground
1/4 ts Nutmeg,ground
1 13 oz. evaporated milk,skim
1 Brown sugar whipped cream
Prepare Nut Cookie Crust. Heat oven to 425. Beat eggs lsightly in large bowl; stir in pumpkin, brown sugar, cinnamon, salt, cloves, ginger and nutmeg until smooth; gradually stir in evaporated milk. Pour into crust. Cover edge with 3 inch strips of aluminum foil to prevent excessive browning. Bake 15 minutes. Reduce oven temperature to 350. Bake until knife inserted near center comes out clean, 45 to 55 minutes longer ; cool pie completely. Prepare Brown Sugar Whipped Cream. Serve pie with Brown Sugar Whipped Cream. Cover and refrigerate any remaining pie. -----

5 tablespoons unsalted butter (2.5 oz / 71g)
1/3 cup honey (4 oz/ 113g)

1/4 cup packed dark brown sugar (1.8 oz /50g)
1 (15oz/ 425g) can unsweetened pumpkin puree (not pumpkin pie filling), preferably Libby's
2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1 teaspoon vanilla extract
1 teaspoon Diamond Crystal kosher salt (0.11 oz /3g)
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg (preferably freshly grated), plus more for serving
1/4 teaspoon ground cloves
Softly whipped cream, for serving

Baking a Perfect Pumpkin Pie
Account for carry over baking by taking the pie out of the oven when the center wobbles just slightly. Once the pie completely cools, the filling will be silky smooth and perfectly set.
