How To make Easy Day Vegetable Lasagna
1 tb Soy oil
8 Green onions; chopped
1 c Sliced fresh mushrooms
48 oz Jar low-fat spaghetti sauce
- (any flavor) 10 oz Low-fat firm silken tofu
10 oz Frozen chopped spinach
- defrosted and drained 1 Egg
8 oz Uncooked lasagna noodles
1 ts Salt
1/4 ts Pepper
1/2 ts Garlic powder
1/2 ts Oregano
8 oz Low-fat Mozzarella cheese
-(shredded) Preheat oven to 350 degrees. Spray a 9 x 13-inch baking pan with non-stick vegetable coating. Saute green onions and mushrooms in soy oil. Add spaghetti sauce. Set aside. Combine tofu, spinach, egg, and seasonings and mix well. In baking dish, begin with bottom layer of spaghetti sauce mixture, followed by uncooked noodles, tofu mixture, noodles, and top with remaining sauce. Bake for 45 minutes, covered with aluminum foil. Top with cheese and bake 15 minutes more. Allow to stand 10 minutes before serving. Serves 6-8.
Option: Layer one 16-ounce package of frozen vegetable medley between layers of lasagna noodles or saute 1 l/2 cups fresh vegetable combination. To A Pan Add Oil , Add All The Veggies , The Seasonings , Pureé , Cook For 10 Mins
The White Sauce
To A Pan Add Olive Oil , Butter , 3tbsp Flour , Roast Until Slightly Brown , Add Milk , Cheese Slices , Make The Sauce Thick And Creamy
To A Casserole Add The Red Sauce , Boiled Lasgna Sheets , White Sauce , Repeat All The Layers 3-4 Times...To A Preheated Oven At 250°C Bake It For 10 Mins , Ready To Be Served.

- 1 Pepper
- 1 Aubergine
- 1 Head of broccoli
- 1 Courgette
- Olive oil
- 1 Large onion
- 2 Garlic cloves
- 1 Can plum tomatoes
- 1 tbsp Dried oregano
- 1 tbsp Tomato puree
- Salt and pepper
- 25g Butter
- 25g Plain flour
- 300ml Milk
- 1 tsp Ground nutmeg
- Dried pasta sheets
- 65g Grated cheddar cheese

You can prepare them the day before or freeze them in small portions. This is a very family friendly recipe or a great idea for a potluck party.
INGREDIENTS for the LASAGNA:
4 zucchini
4 carrots
1.5 litres bechamel sauce (see below)
1 leek
1 box lasagna pasta
1/2 cup breadcrumbs
1 cup grated parmesan cheese
10/12 slices provolone cheese
olive oil
sea salt
INGREDIENTS for the BECHAMEL SAUCE:
1 litre milk
100gr butter
100gr flour
1/2 tsp sea salt
1/2 tsp nutmeg
BAKE in a preheated oven to 400F for 50/60 min.
