How To make Duchess Potato Puff
2 1/4 c Water
3 tb Margarine or Butter
1/2 ts Salt
1/2 c Milk
2 1/2 c Mashed Potatoe Flakes
Egg 1/2 c Dairy Sour Cream
2 oz Shredded Cheddar Cheese*
*INGREDIENT LIST SHOULD READ: 2 oz. (1/2 cup) shredded cheddar cheese. Heat oven to 350 degrees F. Lightly butter 1 1/2-quart casserole. In medium saucepan, heat water, margarine and salt to rolling boil. Remove from heat. Stir in milk and potato flakes. Blend in egg, sour cream and cheese, mixing thoroughly. Scoop or spoon into prepared casserole. Bake at 350 degrees F. for 20-30 minutes, until lightly golden brown and puffed. Refrigerate leftovers. I have not tried this recipe yet. It comes from my "PIllsbury Festive Holiday Recipes" cookbook, Classic No. 13.

Potato fondant or also known in French as Pommes De Terre Fondantes is a technique used by cutting potatoes into cylinder sahpes and browning the ends while slowly braising and roasting in stock and butter. There's probably not a better potato as they become creamy inside and buttery roasted on the top. Great served with meats or most dishes as a side potato dish.

2904 Duchess Style Potatoes
Serves 4
3 medium all-purpose potatoes, cooked and mashed
¼ cup grated Parmesan cheese
1 egg yolk
2 tablespoons butter
Salt and pepper to taste
Extra virgin olive oil
In a bowl, mix the mashed potatoes with the egg yolk, parmesan cheese, butter, salt and pepper. Using a piping bag with a large star point, pipe the potatoes onto a parchment paper lined bake sheet.
Cook in a preheated 400F oven for 20 minutes.

▢2 ½ pounds (1133.98g) potatoes , Yukon or Russet
▢4 tablespoons (56g) unsalted butter , divided
▢⅓ cup (80g) heavy cream

Silky Potato Swirls a.k.a. Duchess Potatoes | Eggless recipe
A fun way to serve boring mashed potatoes. Is funky to look at, eat, and prepare – a 3-way win! Check out the recipe below.
-TIME REQUIREMENT –
30-40 minutes
-INGREDIENTS-
4-5 large potatoes, Yukon gold or yellow
50 g butter
¼ cup of heavy cream
1-2 tbsp. salt
green onions, chopped, and
feta cheese, finely grated for garnish
-HOWTOs -
1. Boil water in the kettle and preheat the oven to 425° F / 220 C°.
2. Peel potatoes, rinse and roughly chop.
3. Put them into a pot and add boiling water. Add salt and cook on medium heat about 10 min or until tender.
4. Drain immediately once cooked and room temp butter and heavy cream. Mash and mix using a potato masher.
5. Push the mash through a sieve to get rid of even from the smallest clumps so that the texture gets super silky and easily goes through the piping bag with a frosting tip.
6. Scoop the mash into a piping bag and squeeze into swirls onto a baking tray lined with parchment paper. Start with a circle as a base and slowly move up in a spiral motion creating a tip at the top.
7. Turn your oven off and turn on the broil setting. Put the swirls into the oven for 4 minutes.
8. Take them out and let them cool. Carefully transfer on the platter using a flipper. Garnish with grated feta cheese and chopped green onions, and enjoy!
