How To make Drunken Beans
7 ounces bacon
diced
1 large onion :
diced
2 cloves garlic minced
2 cups pinto beans :
soaked and drained
1 quart chicken stock or water
2 cups beer
4 jalapeno chiles (with seeds) thinly sliced
salt :
to taste freshly ground black pepper to taste 2 tablespoons cilantro :
chopped
In a large saucepan, saute the bacon over medium heat until the fat is rendered. Remove the bacon with a slotted spoon and set aside. Pour off all but 1 tablespoon of fat and add the onion and garlic. Cook for 2 to 3 minutes, until the onion is translucent. Add the beans, stock or water, and beer. Bring to a boil, reduce the heat to a simmer, and cook for about 1 hour, checking every 30 minutes or so. Add the jalapenos after the first 30 minutes of cooking, and add more broth or water as needed to keep the beans covered. When the beans are tender, season with salt and pepper. Stir in the cilantro, and serve.
Notes: Chef Stephan Pyles included this recipe in his cookbook __The New Texas Cuisine__, Doubleday, 1993, ($35.). He suggests serving Drunken Beans with Jalapeno-Stuffed Smoked Dove, Three Potato Salad and Rosy Relish, all included in his cookbook.

Instant Pot Borracho Beans ( Drunken Beans) Easiest Recipe by Chef Sapo
These are the best Borracho Beans ( Drunken Beans) you will ever eat. A must Try recipe!!!!
I varied off this recipe. I forgot to show adding a bit of water after the beer. Just about a cup.
This is where I got the recipe:
Ingredients:
• 6 slices bacon cut into 1-inch strips
• 1/2 medium yellow onion finely chopped
• 3 serrano chiles finely chopped
• 2 cloves garlic minced
• 1 lb dried pinto beans
• 6 - 8 sprigs cilantro
• 12 oz Mexican beer 1 bottle
• 1 1/2 - 2 tsp coarse salt
Instructions:
1. Set the Instant Pot to Sauté and adjust to More or High. Fry the bacon in the pot for 4 to 6 minutes, or until cooked through.
2.Stir in the onion, chiles, and garlic. Sauté for an additional 2 to 3 minutes, or until the onion is translucent.
3.Add the beans, cilantro, beer, and enough water to reach the two-thirds-full mark inside the Instant Pot
4.Lock the lid into place and set the steam release valve to sealed. Select 5.Manual and set the timer for 60 minutes on high.
When cooking is complete, allow the pressure to release naturally. Unlock and remove the lid.
6.Season the beans with the coarse salt, ladle into bowls, and serve.

From Canned Beans To Charro Beans | No one Will Know The Difference ❤
CHARRO BEANS is one dish I prepare often, they are very popular here in South Texas, we also love to barbecue and have family gatherings and Charro Beans are a must... Charro Beans from a can started when I was in a rush to come up with a side dish and I didn't have time to cook a fresh pot of beans, so I used canned and now it's the way to go for me especially if I'm in a rush. It takes a few minutes and a few ingredients to prepare these and no one will know the difference.
INGREDIENTS----------------
4 16oz Cans Pinto Beans (I used Bush's)
5 slices thin cut bacon (chopped)
1/3 med onion (chopped)
1 large Roma tomato (diced)
1 finely minced garlic clove
1 jalapeño (diced small) (optional)
Small bunch cilantro (chopped)
1 1/2 Tbsp Chicken bouillon tomato flavored (Knorr)
2 C. water

Servings: 8-10
Cook the beans
1 lb pinto beans
1/2 medium white onion
6 garlic cloves, peeled
12 cups of water
2 tsp of kosher salt
Bean paste
1 cup of the cooked beans
1 cup of the bean broth
1/2 cup water (to get the last of the paste from blender)
Meat prep
6 oz ham (5 slices)
5 bacon strips
4 beef franks
12 oz pork or beef chorizo
Vegetable prep
3 garlic cloves, minced
10 oz roma tomatoes, diced
1/2 medium white onion

Borracho beans, or frijoles borrachos are flavorful, savory, and the perfect Tex Mex side dish! Pinto beans cooked up with bacon, onion and garlic all simmered in a dark beer broth for even more flavor.

Ingredients:
1 lb pinto beans , notes below on using canned beans
8 cups water
2 bayleaves
5 slices bacon, uncooked
1 jalapeno, seeds & membranes removed, diced
½ cup onion , diced
4 cloves garlic , minced
12 ounces beer, Shiner Bock or Negra Modelo
1 tsp salt
1 tsp ground cumin
1 tsp chili powder
1 tsp dried oregano
1 (14 ounce can) diced tomatoes

0:10 Soak Beans
0:23 Cook Beans, set aside, reserve the bean broth
0:37 Cook bacon, remove, reserving grease
0:51 Saute veggies
1:02 Add beans back in with reserved bean broth
1:05 Add remaining ingredients
1:16 Bring to a simmer
1:21 Stir in cooked bacon and cilantro
1:26 Serve
